Bacon Meatloaf is a delicious twist on a classic American comfort food. It's packed with smoky bacon, tangy barbecue sauce, and pockets of gooey, melted cheddar cheese.

1 pound ground beef
5 slices bacon
4 ounces baby bella mushrooms
1/2 cup finely chopped onion
1 clove garlic, minced
1/2 cup bbq sauce, divided in half (plus additional for brushing
2 eggs
2 tablespoons Worcestershire sauce
1 teaspoon mustard powder
1 teaspoon Himalayan pink salt
1 teaspoon black pepper
1/2 cup rolled oats
4 ounces Cabot Sharp Cheddar Cheese, cubed

Steps:

  • Begin by cooking the bacon. I like to roast mine on a sheet pan prepped with parchment paper for ease of clean up. It only takes about 10-15 minutes at 350ºF, depending on the thickness of your bacon. You want the bacon cooked, but not overly crispy. You want some of that fat to cook out into the meatloaf to keep it moist. When the bacon is finished cooking, place the slices on a paper towel lined plate, and set aside to cool.
  • While the bacon is cooking, prep the veggies. Finely dice 1/2 cup of red onion, and cut the mushrooms in half. You can chop the mushrooms by hand, but I like to pulse them in the food processor a few times to get a super fine dice since I want them to disappear into the meatloaf.
  • Add the onion to a small skillet heated over medium heat with a drizzle of cooking fat. Cook for about 3-4 minutes, then add the minced garlic and mushrooms. Cook another 4-5 minutes, and remove from the heat to cool.
  • Next, dice the Cabot Sharp Cheddar Cheese into approximately quarter-inch chunks. You want some pockets of cheesy deliciousness in the meatloaf.
  • Finally, chop the bacon into about quarter-inch pieces.
  • Add all the ingredients (half the barbecue sauce), except the cheddar cheese, to a large bowl, and mix well to combine. The easiest way to ensure all the ingredients are fully incorporated is to just get in there with your hands. Once everything is combined, gently fold in the cheese.
  • I like to create one giant meatball, then place it in a parchment lined 9 x 9 baking dish. Press down to create a circular meatloaf, pressing in on the edges with one hand while you flatten with the other to keep the loaf constrained. You should end up with about a two-inch loaf in the center of your baking dish. Top the meatloaf with the remaining 1/4 cup of barbecue sauce.
  • Place the meatloaf in a preheated 350ºF oven, and bake for 45 minutes. Check the internal temperature of the meatloaf with a meat thermometer. When it reaches 150ºF, remove it from the oven, and brush with the additional barbecue sauce. Return to the oven and bake an additional 10 minutes.
  • Let the meatloaf rest for 7-10 minutes before serving. Do make sure your meatloaf reaches an internal temperature of 160ºF.

This delicious bacon-wrapped meatloaf is glazed with prepared barbecue sauce. The brown sugar bacon topping adds flavor to the easy protein.

4 strips lean bacon
2 tablespoons brown sugar (optional)
1 pound lean ground beef
1/2 pound ground pork
1 medium onion (finely chopped)
1 red bell pepper (or orange, finely chopped)
2/3 cup fine dry breadcrumbs
1/3 cup Parmesan cheese (freshly grated)
1/3 cup evaporated milk (or whole milk)
1 large egg (slightly beaten)
1 teaspoon Cajun seasonings
1 teaspoon Worcestershire sauce
1/2 teaspoon kosher salt (1 teaspoon if the Cajun seasoning is salt-free)
1/4 teaspoon black pepper (freshly ground)
1/2 cup barbecue sauce

Steps:

  • Gather the ingredients. Preheat the oven to 350 F.
  • Line a rimmed baking pan with foil; lightly oil the foil or spray with nonstick cooking spray.
  • Cut the bacon strips in half crosswise and coat them with the 2 tablespoons of brown sugar, if using. Arrange the bacon on a foil-lined rimmed baking sheet and bake for 15 to 20 minutes, or until almost crisp. Remove the bacon from the oven and let it cool.
  • In a large bowl, combine the ground beef, pork, onion, bell pepper, breadcrumbs , cheese, milk, egg, Cajun seasonings, Worcestershire sauce, salt, and pepper.
  • Put the ground meat mixture on the prepared foil-lined baking pan and shape into a loaf.
  • Spread barbecue sauce over the loaf and arrange the bacon strips over the top.
  • Bake the meatloaf until the bacon is crispy and loaf is firm, about 1 hour to 1 hour and 10 minutes. If unsure, check the loaf with an instant-read food thermometer inserted into the center of the loaf. The minimum safe temperature for ground meat is 160 F/71 C.
  • Let stand for 10 minutes before slicing or moving to a serving platter.

1/4 cup ketchup or chili sauce
2 tablespoons light or dark brown sugar
2 teaspoons cider or white vinegar
2 teaspoons vegetable oil
1 medium onion, chopped
2 garlic cloves, minced
2 large eggs
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon ground black paper
2 teaspoons Dijon mustard
2 teaspoons Worchestershire sauce
1/4 teaspoon hot red pepper sauce
1/2 up milk, buttermilk or low-fat plain yogurt
2 pounds meat-loaf mix (2 parts ground chuck, 1 part ground veal, 1 part ground pork)
2/3 cups crushed saltine crackers (about 16) or quick oatmeal or 1 1/3 cups fresh bread crumbs
1/3 cup minced parsley
6 ounces thin-sliced bacon

Steps:

  • For the glaze: Mix all ingredients in a small bowl; set aside.
  • For the meatloaf: Preheat oven to 350 degrees. Heat oil in a medium skillet. Add onion and garlic, saute until softened, about 5 minutes; set aside to cool.
  • Mix eggs with thyme, salt, pepper, mustard, Worchestershire, pepper sauce, and milk or yogurt. Add egg mixture to meat in a large bowl, along with crackers, oatmeal or bread crumbs, parsley and cook onions and garlic; mix with a fork until evenly blended and meat mixture does not stick to bowl. (If mixture does stick, add additional milk, a couple tablespoons at a time, and continue stirring until mixture stops sticking.)
  • Turn meat mixture onto a work surface. With wet hands, pat mixture into a loaf approximately 9 by 5 inches.
  • Cover a wire rack with foil; prick foil in several places with a fork. Place a rack on a shallow roasting pan lined with foil for easy cleanup.
  • Set formed loaf on rack. Brush loaf with all of glaze, then arrange bacon slices, crosswise, over loaf, overlapping them slightly and tucking them under to prevent curling.
  • Bake loaf until bacon is crisp and loaf registers 160 degrees, about 1 hour. Cool for at least 20 minutes. Slice and serve

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x11-inch baking dish.
  • Place bacon in a large skillet and cook over medium-high heat until edges just start to curl, 1 to 2 minutes per side. Drain the bacon slices on paper towels. Reserve about 1 tablespoon bacon drippings in the skillet.
  • Cook and stir onion and garlic in the bacon drippings until onion is softened, 6 to 7 minutes. Remove from heat and cool.
  • Mix cooled onion and garlic, ground beef, 1/2 cup barbeque sauce, bread crumbs, eggs, Worcestershire sauce, Dijon mustard, oregano, and chili powder together with your hands in a large bowl. Form beef mixture into a log-shaped meatloaf; place in the prepared baking dish.
  • Wrap partially-cooked bacon slices around the meatloaf, tucking the ends of bacon underneath the loaf.
  • Bake in the preheated oven for 35 minutes. Brush bacon-wrapped meatloaf with 3 tablespoons barbeque sauce. Continue baking until no longer pink in the center, about 10 more minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Let stand for 10 minutes before serving.

4 ounces thick-cut bacon (about 3 slices), cut into 1/2-inch-thick pieces
1 medium yellow onion, finely chopped (about 1 1/2 cups)
3 cloves garlic, minced
1 pound prepared BBQ ribs, bones removed, meat finely chopped (about 2 cups)
1 cup prepared pulled pork in BBQ sauce
1 pound 80/20 ground beef
2 large eggs
1/2 cup plain breadcrumbs
2 teaspoons mustard powder
1 1/2 teaspoons smoked paprika
1 teaspoon dried basil
1 teaspoon dried thyme
Kosher salt and freshly ground black pepper
1/2 cup prepared BBQ sauce, plus more for serving

Steps:

  • Position a rack in the center of the oven and preheat to 325 degrees F. Line a large baking sheet with parchment paper.
  • Put the bacon in a large saute pan and cook over medium heat until most of the fat has rendered and the bacon is crispy, about 10 minutes, stirring occasionally. Use a slotted spoon to remove the bacon to a large bowl. Increase the heat slightly (between medium and medium-high) and add the onions to the bacon fat in the pan and cook until tender, about 5 minutes, stirring occasionally. Add the garlic and cook until tender, about 1 minute, stirring constantly. Transfer to the bowl with the bacon. Stir in the chopped ribs and pulled pork. Cool completely.
  • Add the beef, eggs, breadcrumbs, mustard powder, smoked paprika, basil, thyme, 1 to 1 1/2 teaspoons salt (depending on how salty the ribs and pulled pork are) and several heavy grinds of pepper. Use your hands to mix until well combined. Form into a 9-by-3 1/2-inch loaf that is about 2 inches tall on the prepared baking sheet. Spread 1/4 cup of the BBQ sauce evenly over the top of the meatloaf.
  • Bake for 30 minutes, and then spread the remaining 1/4 cup BBQ sauce on top of the partially cooked meatloaf. Continue to bake until a thermometer inserted into the center of the meatloaf registers 160 degrees F, about 45 more minutes.
  • Serve with additional warm BBQ sauce alongside.

sunflower oil , for greasing
85g pack sage & onion stuffing mix
1 beef stock cube
8 rashers smoked streaky bacon
500g pack beef mince (avoid very cheap packs; use one with less than 20% fat)

Steps:

  • Heat oven to 180C/160C fan/gas 4 and oil the inside of a 900g loaf tin. Tip the stuffing mix into a bowl, crumble in the stock cube and pour over 300ml boiling water. Give it a good stir, then set aside.
  • Stretch the bacon rashers a little by running the back of a spoon along their length, then use 6-7 to line the base and longest sides of the tin. Chop the rest.
  • Mix the chopped bacon and mince into the stuffing with some black pepper, then press into the bacon-lined tin and bake for 40 mins until firm. Turn out and serve sliced.
