WILD RICE SALAD
Steps:
- Place the wild rice in a medium pot with 4 cups of water and 2 teaspoons of salt and bring to a boil. Simmer uncovered for 50 to 60 minutes, until the rice is very tender. Drain well and place the rice back in the pot. Cover and allow to steam for 10 minutes.
- While the rice is still warm, place it in a mixing bowl. Peel the oranges with a sharp knife, removing all the white pith. Cut between the membranes and add the orange sections to the bowl with the rice. Add the olive oil, orange juice, raspberry vinegar, grapes, pecans, cranberries, scallions, 1/2 teaspoon of salt, and the pepper. Allow to sit for 30 minutes for the flavors to blend. Taste for seasonings and serve at room temperature.
WARM WILD RICE SALAD

- Bring 3 1/2 cups of water to a boil in large saucepan. Add rice and reduce heat to medium. Cook until just tender about 35 to 40 minutes. Fluff with a fork when ready.
- In a large skillet over medium heat, melt butter. Add onions, celery, carrots, peppers, salt and pepper. Saute until softened, about 5 minutes.
- In a separate pan over medium-low heat, toast almonds. Stir occasionally until browned.
- Add peas and red pepper flakes to the vegetables. Add rice to skillet. Mix together and allow to cook for a few minutes. Remove from pan. Add almonds and top with parsley.

- Preheat the oven to gas 6, 200C, fan 180°C Put the salmon on a large piece of foil, drizzle with 1tbsp of oil, a squeeze of lemon and season. Fold up the sides of the foil to make a sealed parcel. Put on a baking sheet and roast in the oven for 20 minutes, until the fish is cooked through.
- Meanwhile, cook the rice following the pack instructions. Drain and leave to cool. Bring a pan of water to the boil, add the beans, and blanch for 3 minutes, then drain and refresh in cold water.
- Make a dressing by mixing together the remaining oil, lemon juice, mustard, and most of the dill, in a jug. Put the rice, beans, and cucumber in a bowl and pour over the dressing. Flake the salmon and toss through the rice, reserving a little extra to serve. Serve topped with the remaining salmon and dill.

WILD RICE SALAD

- Peel and trim the asparagus stalks. Cut about an inch of the tips from the spears and then thinly slice the remaining stalk. Bring a small pot of salted water to a boil. Drop the asparagus into the water and cook until just crisp-tender, about 1 minute. Drain and refresh under cold running water. Set aside.
- In a medium bowl, whisk together the garlic, shallot, mustard, lemon zest and juice, salt and pepper to taste. Gradually whisk in the oil to make a creamy dressing.
- In a large bowl, combine the rice, nuts, carrots, celery, asparagus, dill, and mint. Toss with about 1/3 cup dressing. Serve as is or toss the lettuce with some of the dressing. To serve place the lettuce on a serving platter or individual plates and spoon the salad into the center of the leaves. Pass any remaining dressing at the table.

- Cook the rice following pack instructions and 3 mins before it's done, add the soya beans. Drain and cool under cold running water.
- Meanwhile, put the salmon on a plate, then microwave on High for 3 mins or until cooked through. Allow to cool slightly, remove the skin with a fork, then flake.
- Gently fold the cucumber, spring onions, coriander and salmon into the rice and beans. In a separate bowl, mix the lime zest and juice, chilli and soy, then pour over the rice before serving.

SALMON WITH WILD RICE

Steps:
- Prepare the rice. Rinse the rice in a strainer under cold water. In a sauce pan, combine the rice, broth, zest, juice, salt, and butter. Cover and cook on high 30 to 45 minutes, or until tender. Stir in rest of ingredients and set aside.
- Prepare the salmon. Place orange juice and anise into a sauce pan. Heat to boiling and continue to cook until reduced to 1-1/2 cups. Let cool to room temperature and remove anise.
- In a blender add the cooked orange juice, salt, oil, garlic, and cumin. Blend for 30 seconds.
- Pour half the mixture into a plastic bag and add the salmon. Squeeze out the air as you seal the bag. Marinate the salmon in refrigerator about 30 minutes to 1 hour.
- Preheat a non-stick frying pan on high and cook the salmon for 3 minutes. Turn the fillets over carefully and reduce the heat to medium and cook for another 3 to 4 minutes.
- Serve with the rice and pour remaining half of orange juice mixture over the salmon.

DATE-NIGHT SALMON SALAD
My affection for tequila-lime salmon began with a version I ate while sitting on a pleather couch. The couch belonged to Jason, a police officer I'd met two weeks before at the Stonewall Inn, and the salmon he cooked that night has since become the most memorable meal of my life. You see, Jason-now my husband of more than ten years-isn't the "cook" in our family, but he stole my heart with a piece of roasted salmon thoughtfully placed on a pile of rice pilaf. Even more thoughtful was the accompanying salad, which he meticulously arranged in a ring around the rim of the plate, surrounding the fish and pilaf like a halo. The memory of it makes me both laugh and cry. That meal filled me with inner peace and a sense of love that I don't think I'd felt until that moment. It offered a taste of what some might call a "normal" life-a life in which you care for someone so much that you put heartfelt effort into plating a salmon fillet. As a gay man, it was hard to visualize what my future would be, knowing I might never be able to marry. Thankfully that has since changed, but this meal reminds me it wasn't that long ago that I didn't have that right-and I don't ever want to take it for granted. - Heat the olive oil in a large skillet over medium heat. When the oil is shimmering, add the chopped onion and the garlic and cook, stirring occasionally, until softened, about 5 minutes. Add the rice and orzo and cook, stirring, until the rice is translucent on the edges, about 3 minutes. Add the chicken stock, turmeric, and a generous pinch of salt. Increase the heat to high and bring to a boil. Stir once, then cover, reduce the heat to low, and simmer until the liquid is absorbed, about 20 minutes. Remove from the heat and let steam, covered, for 15 minutes. Fluff the rice with a fork, then spread on a baking sheet to cool completely.
- Meanwhile, preheat the oven to 375 degrees F. Line a baking sheet with foil.
- Place the salmon skin side down on the prepared baking sheet. Brush with the tequila and sprinkle with the lime zest, then season generously with salt and pepper. Bake the salmon for about 20 minutes, until just cooked through. Let cool completely, then remove the skin and flake the salmon into 2-inch pieces; discard the skin.
- In a large bowl, toss the cooled rice pilaf with the arugula, cilantro, lime juice, and sliced onion. Season the salad with salt and pepper. Gently fold in the salmon, then serve immediately.
