1 medium banana

2 eggs
1 3/4 cups all-purpose flour
1 tablespoon baking powder

Steps:

  • Preheat your waffle iron according to manufacturer's instructions.
  • In a medium mixing bowl, add the banana and use a fork to mash very well.
  • Add the oil and eggs, and beat to combine well.
  • Add the flour, baking powder, salt, sugar, and cinnamon to the bowl, and stir until just combined.
  • Add the milk and stir until just combined.
  • Make the waffles according to the directions that came with your waffle iron.
  • When one waffle is done, let it rest on a wire wrack, taking care not to stack the waffles (the steam they produce makes them soggy if you stack them on a plate).

Steps:

  • Stir together the flour, salt, baking powder, baking soda, cornstarch, cinnamon, nutmeg, and brown sugar in a large bowl. Create a "hole" in the center.
  • Add the eggs, oil, milk, vanilla, and bananas to the center of the dry ingredients. Mix just until combined.
  • Let the batter rest for 10 minutes while the waffle iron preheats.

2 cups all-purpose flour
3 tablespoons granulated sugar
2 teaspoons baking powder
¼ teaspoon fine salt
2 large eggs
1¾ cups buttermilk, at room temperature
1 very ripe banana, mashed, plus 1 banana, for serving (optional)
4 tablespoons unsalted butter, melted and cooled, plus more for the waffle iron
1 teaspoon pure vanilla extract
½ cup heavy cream, very cold
2 tablespoons confectioners' sugar
½ cup toasted walnuts, broken into small pieces
Maple syrup, for serving

Steps:

  • Whisk the flour, granulated sugar, baking powder and salt in a large bowl. Whisk the eggs in a medium bowl until frothy; add the buttermilk, mashed banana, 4 tablespoons of the butter and vanilla and stir to combine. Stir the wet mixture into the dry until just combined, taking care not to over mix. Cover with plastic wrap and let the mixture rest for 10 minutes.
  • Preheat a waffle iron to medium-high. Preheat the oven to 200°F. Brush the inside of the iron evenly with some of the remaining butter. Pour in enough batter to lightly cover the surface of the iron, about 1/3 to 3/4 cup, depending on the size of the iron. (Take into consideration that the batter will spread once the lid is closed.) Cook until the waffles are crisp and golden, 5 to 7 minutes. Repeat with the remaining butter and batter, keeping the cooked waffles warm in the oven until ready to serve.
  • Whisk the cream and confectioner's sugar in a medium bowl until soft peaks form. Slice the remaining banana if using. Serve the waffles topped with the whipped cream, banana slices and walnuts and drizzled with maple syrup.

Steps:

  • Peel 3 ripe bananas and place them in a bowl. Mash with a fork until they reach a smooth consistency.
  • Combine 1 stick melted butter with 1/2 cup white sugar in a bowl. Blend using a whisk or electric hand mixer until creamy and smooth.
  • Thoroughly beat 2 eggs in a small bowl, then add them to the bowl with the butter mixture.

1 tablespoon baking powder
1 teaspoon ground cinnamon
1/4 teaspoon nutmeg

2 egg yolks

2/3 cup banana, ripened and mashed
1/2 cup cooking oil
2 egg whites

Steps:

  • In a large mixing bowl combine flour,baking powder, cinnamon, nutmeg, and salt. In a separate bowl beat together egg yolks, milk, banana, and oil. Gradually stir in the yolk mixture with the flour mixture until combined but slightly lumpy.
  • In a medium bowl whisk the egg whites until stiff peaks form. Gently fold the egg whites into the rest of the batter, leaving a few white fluffs of egg white. * Don't over mix.
  • Pour 1 to 1 1/4 cup batter into grids of a preheated, lightly greased waffle iron. Close lid quickly and do not open during baking. Bake according to manufacturer's directions.

  • Preheat a Belgium waffle iron. Whisk together the flour, baking soda, baking powder, white sugar, and salt in a bowl; set aside.
  • Whisk together the eggs, 1 1/2 teaspoons vanilla extract, and milk in a bowl. Stir in the melted butter and flour mixture until a slightly lumpy batter forms. Cook the waffles in the preheated iron until steam stops coming out of the seam, about 2 minutes.

1 cup (250ml) Milk
¼ cup (25g) Rolled Oats
½ cup (70g) All-Purpose / Plain Flour
½ cup (70g) Wholemeal Plain Flour
1 tsp Baking Powder
1 tsp Ground Cardamon
½ Cup (80g) Blueberries

Steps:

  • Mix the flours, oats, cardamom and baking powder together.
  • Mash the bananas in a large mixing bowl. Add the egg and stir until combined. Add the oil and whisk again. Add the milk and vanilla and stir until mixed well.
  • Add the dry ingredients to the wet ingredients and gently stir until just combined. The batter should be cake-like in texture. It will be thick, not runny, but pourable.
  • Add the blueberries and stir once more.
  • Preheat waffle iron. Once iron is ready, spray with cooking spray (not all waffle machines require this)
  • Add approx 1 cup of batter to the waffle iron (adjust based on size of waffle iron) and cook according to manufacturer instructions. (Mine took 4-5 mins)
  • Remove and place on a cooling rack. Repeat until batter has finished.

2 cups well-shaken buttermilk
3/4 stick (6 tablespoons) unsalted butter, melted and cooled to room temperature
2 large eggs
Vegetable oil for waffle iron
For topping
2 tablespoons unsalted butter
2 firm-ripe large bananas, cut diagonally into 1/3-inch-thick slices
1 1/4 cups pure maple syrup
Accompaniment: sour cream or whipped cream

Steps:

  • Make waffles:
  • Put oven rack in middle position and put a large metal cooling rack directly on it. Preheat oven to 250°F and preheat waffle iron.
  • Whisk together flour, sugar, baking powder, baking soda, and salt in a large bowl.
  • Whisk together buttermilk, melted butter, and eggs in another bowl, then whisk into flour mixture until just combined.
  • Brush hot waffle iron lightly with vegetable oil and pour a slightly rounded 1/2 cup of batter into each waffle mold (see cooks' note, below). Cook waffles according to manufacturer's instructions until golden and cooked through, about 3 minutes. Transfer as cooked to rack in oven to keep warm, keeping waffles in 1 layer to stay crisp. Make more waffles in same manner.
  • Make topping:
  • While last batch is cooking, heat butter in a 12-inch heavy skillet over moderately high heat until foam subsides, then add banana slices in 1 layer and cook until golden, about 1 minute per side. Remove from heat and add syrup to skillet.
  • Spoon bananas over waffles, then drizzle with warm syrup before serving.
