BANANA TRAYBAKE WITH CREAM CHEESE FROSTING

Number Of Ingredients 13

200g golden caster sugar
300g ripe bananas (2 medium), peeled
125ml flavourless oil like sunflower or grapeseed
4 eggs
125g wholemeal or rye flour
100g plain flour
1 tsp cinnamon
3 tsp baking powder
100g white chocolate chips or chopped walnuts (optional)
100g unsalted butter, softened
100g icing sugar, sieved
200g full-fat cream cheese
large pinch cinnamon

Steps:

  • Line a 25 x 20cm traybake tin with baking parchment and heat the oven to 190C/170C fan/gas 5. Tip the sugar, bananas, oil and eggs into a large bowl and whisk them together. If your bananas are very ripe then you can use a balloon whisk for this, or use a fork to mash. Add the flours, cinnamon and baking powder and whisk the mixture until everything is just combined - don't take too long over this bit as the baking powder will have started to activate. Stir in the chocolate chips, if using, and scoop the mixture into your tin. Bake for 30-40 mins or until the sponge is firm and springy to the touch and lightly browned on top. Cool in the tin.
  • To make the frosting, beat the butter until it is really soft then beat in the icing sugar. Use a spatula to fold in the soft cheese, making sure it is all thoroughly mixed in. Don't be tempted to beat the mixture, this will make it runnier.
  • Lift the cake carefully out of the tin, peel off the paper and transfer it to a plate or board. Spread over the frosting, making it as neat or messy as you like. Lightly dust the top with cinnamon - use a tea strainer to help with this if you have one. Cut into pieces to serve. Will keep for up to 3 days in an airtight container.

Steps:

  • You will need a 900g (2lb) loaf tin, 17 x 9 x 9cm (6½ x 3½ x 3½in) base measurement. Lightly grease the loaf tin and line it with non-stick baking parchment. Pre-heat the oven to 180°C/350°F/Gas Mark 4. Measure all the ingredients into a mixing bowl and beat for about two minutes, until well blended; an electric mixer is best for this but of course you can also beat by hand with a wooden spoon. Spoon the mixture into the prepared tin and level the surface. Bake for about one hour, until well risen and golden brown. A fine skewer inserted in the centre of the cake should come out clean. Leave the cake to cool in the tin for a few minutes, then loosen with a small palette knife and turn the cake out. Remove the lining paper and leave on a wire rack to cool completely. Mary Berry's banana bread recipe is small, but perfectly formed and loaded with chocolate chips. You can double this classic loaf cake recipe if you have lots of bananas to use up.

1 ripe banana (peeled weight 100g/4oz)
1 tbsp milk
50g/2oz soft butter or baking spread
75g/3oz plain flour
75g/3oz caster sugar
½ tsp bicarbonate of soda
½ tsp baking powder
1 free-range egg
50g/2oz dark chocolate chips
50g/2oz dark chocolate

Steps:

  • Preheat the oven 160C/140C Fan/Gas 3. Grease and line a 450g/1lb loaf tin with non-stick baking parchment.
  • Use a fork to mash the peeled banana in a mixing bowl. Add the remaining cake ingredients (except the chocolate chips) and beat with an electric hand whisk until combined and smooth.
  • Stir in the chocolate chips and spoon the mixture into the prepared loaf tin. Level the top.
  • Bake for 40-45 minutes or until well risen, shrinking away from the sides of the tin and golden-brown.
  • Set aside to cool for 10 minutes, then remove from the tin and leave to cool on a wire rack.
  • For the decoration, break the chocolate into small pieces and add to a heatproof bowl.
  • Melt the chocolate in the bowl over a pan of simmering water (ensuring that the bowl does not touch the water). Stir regularly, until almost completely melted, then remove from the heat. The heat of the bowl will melt any remaining lumps.
  • Spoon the melted chocolate into a piping bag and pipe zig-zags across the top of the loaf. Set aside for the chocolate to set. Slice and serve.

FRUITY TRAYBAKE

175ml vegetable oil , plus extra for greasing
175g dark muscovado sugar
3 large eggs
1 small ripe banana , mashed
140g grated eating apple
100g grated carrot
1 small mango , peeled and cut into small dice
zest 1 lemon
250g self-raising flour
1 tsp bicarbonate of soda
1 tsp mixed spice
225g icing sugar , sieved
75g passion fruit or lemon curd
75g cream cheese

Steps:

  • Heat oven to 180C/160C fan/gas 4. Grease and line a 22cm square tin with baking parchment. Whisk the oil and sugar in a large mixing bowl until light and fluffy. Beat in the eggs, one at a time, followed by the banana. Stir through the apples, carrots, mango and lemon zest. Combine the flour, bicarb and mixed spice in another bowl, then fold into the fruit mixture.
  • Pour the mixture into the tin and bake for 40 mins, until a skewer inserted comes out clean. Cool for 10 mins before turning out onto a wire rack.
  • To make the icing, beat together the icing sugar, passion fruit or lemon curd and the cream cheese. Spread over the top of the cake and cut into square pieces to serve.

200g butter , softened, plus extra for the tin
2 large ripe bananas (250g peeled weight)
250g light brown soft sugar
4 large eggs
1½ tsp vanilla extract
250g self-raising flour
100g natural yogurt
100g dark chocolate , chopped into chunks
100g thick caramel or dulce de leche (we used a can of Carnation caramel)
12 dried banana chips , to serve (optional)

Steps:

  • Heat oven to 180C/160C fan/gas 4. Butter and line a 20 x 30cm baking tin with two strips of criss-crossed baking parchment. In a jug, mash the bananas with a fork, then add the butter and sugar and mix with an electric whisk until smooth and creamy.
  • Add the eggs one at a time, beating well after each addition, then add the vanilla and a pinch of salt. Use a spatula to fold through the flour, yogurt and chocolate chunks. Scrape the mixture into the tin and smooth over the surface. Bake for 30 mins until risen and golden and a skewer inserted into the centre of the cake comes out clean. Cool for 10 mins in the tin, then transfer to a wire rack.
  • Cut the traybake into 12 squares, then top each one with a spoonful of caramel and a banana chip, if you like. Will keep in a tin for up to five days, or in the freezer - without the toppings - for up to a month.
