GINA'S BANANA CUPCAKES

- Preheat the oven to 350 F. Line a (12-cup standard) muffin tin with paper cupcake liners.
- In a medium bowl, combine the flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, add the butter and granulated sugar. Beat with a hand-held mixer until combined. Add the sour cream and vanilla. Slowly beat in the eggs, one at a time. Incorporate the dry mixture and wet mixture together until thoroughly combined. Add the bananas and 1/2 cup walnuts, being careful not to over mix.
- Using an ice cream scoop, fill each cupcake liner three-quarters of the way full. Bake in the oven until the tops turn golden-brown and a toothpick, inserted in the middle of the cupcake, comes out clean, 18 to 20 minutes. Remove the cupcakes from the oven to a wire rack and let cool before frosting.
- In a large bowl, add the cream cheese and butter. Beat together until incorporated. Add the molasses and mix well. Stir in the confectioner's sugar, milk and vanilla.
- Heavily frost the cupcakes and garnish with the remaining 1/4 cup walnuts.

- Cream brown sugar and 1 cup butter, add eggs 1 at a time; beat well. Add mashed bananas and flour and salt, baking soda along with 1 cup sour cream . Add vanilla and nuts last.
- Pour batter into 3 - 9 inch pans or a 13 x 9 inch pan. Bake in a preheated 350 degrees F (175 degrees C) oven until cake tests done with a tooth pick, about 30 to 40 minutes for the 9 inch round cakes or about 40 to 50 minutes for the 13 x 9 inch cake..
- To make Frosting: Mix 1/2 cup of butter or margarine, 4 cups of confectioners' sugar and 1/4 cup sour cream (more if needed). Add 1 teaspoon vanilla and beat until fluffy.

- Preheat oven to 350*F.
- Lightly coat a 9 by 13inch pan with nonstick cooking spray.
- Cream the sugar, butter and shortening with a mixer until light and fluffy.
- Beat in the eggs and vanilla.
- Mix together dry ingredients and gradually add the dry ingredients to the wet ingredients, mixing until well blended.
- Stir in the sour cream and then the banana. Fold in the blueberries.
- Spoon into the prepared pan.
- Combine all the ingredients for the topping in a small bowl, mixing until crumbly.
- Sprinkle evenly over batter.
- Bake for 50 to 60 minutes.
- Let cool completely on wire rack before unmolding and cutting to serve.
TENDER SOUR CREAM BANANA CAKE
This cake has been in my family for as long as I can remember! Very moist and fluffy cake. Great as a snack for the family or for a small gathering. I have received so many compliments on this cake! Use your imagination. It doesn't need to be topped with any icing, or can handle it if you do.

- Combine milk, banana pudding mix, and vanilla extract in a bowl and mix until smooth. Refrigerate banana filling at least 30 minutes before using.
- Combine milk, vanilla pudding mix, and vanilla extract in a bowl. Whisk in confectioners' sugar. Fold in whipped topping until no streaks remain. Refrigerate frosting for at least 30 minutes before using.
- Preheat the oven to 375 degrees F (190 degrees C).
- While filling and frosting are chilling, prepare the cupcake batter. Whisk flour, baking soda, cinnamon, and salt together in a bowl and set aside.
- Cream white sugar, brown sugar, and butter together in the bowl of a stand mixer until light and creamy. Add eggs, 1 at a time, beating well after each addition. Add vanilla extract. - In a saute pan over medium heat, combine the butter, brown sugar, and cinnamon.
- Cook until butter melts and sugar is dissolved (4 to 5 minutes).
- Add the banana slices and cook until tender, turning once for 1 to 2 minutes per side.
- Stir together rum and vanilla.
- Turn off the burner and add the rum mixture to the pan.
- Using a long match, light the alcohol by placing the flame just in the outer edge of the pan.
