OAT MILK PUMPKIN PIE WITH OATMEAL COOKIE CRUST
Oatmeal cookie lovers will warm up to this custardy pumpkin pie made with a sweet cookie shell and mini cookies on top for the crust. Oat milk and vegan butter keep it dairy free.

- For the crust: Preheat the oven to 350 degrees F. Grease a 9-inch deep dish pie pan with nonstick baking spray. Line a baking sheet with parchment paper.
- Whisk together the flour, baking soda, allspice, cinnamon, salt and nutmeg in a small bowl.
- Combine the vegan butter, brown sugar and granulated sugar in the bowl of a stand mixer fitted with the paddle attachment. Mix on medium-high speed until light and fluffy, about 4 minutes. Scrape down the sides of the bowl with a rubber spatula. Add the egg and vanilla extract. Mix on medium speed until combined.
- With the mixer running on low, add the dry ingredients until combined; do not overmix. Fold in the oats, pecans and raisins with a rubber spatula. Chill the dough in the fridge for at least 1 hour.
- Scoop twelve 1 tablespoon-size balls onto the baking sheet. Press the remaining dough into the bottom of the prepared pie pan.
- Bake the cookies until golden brown, 10 to 12 minutes. Bake the pie crust until golden brown and the center is cooked through, 18 to 20 minutes. Remove from the oven and cool completely.
- For the filling: Reduce the oven temperature to 325 degrees F. Combine the eggs, pumpkin puree, oat milk, brown sugar, ginger, salt and vanilla extract in a medium bowl. Place the cooled pie crust on a rimmed baking sheet and pour in the pumpkin filling. Bake until the filling is set, about 1 hour 20 minutes. Transfer to a cooling rack.
- Dollop the vegan whipped cream around the edges of the pie and arrange the cookies in ring around the outer perimeter. Serve immediately.
PUMPKIN PIE WITH SPICED CRUST

- Make the crust: Pulse the flour, granulated sugar, salt, cinnamon, ginger, cardamom, nutmeg and allspice in a food processor to combine. Add the butter; pulse several times until it looks like coarse meal. Add the vinegar and 1/4 cup ice water; pulse a few more times until the dough comes together and forms a ball. Turn the dough out onto a piece of plastic wrap; press into a disk and wrap. Refrigerate until firm, at least 1 hour or overnight.
- Roll out the dough into a 12-inch round on a lightly floured surface. Ease into a 9-inch pie plate, pressing the dough into the bottom and up the side. Fold the overhanging dough under itself and crimp with your fingers or a fork. Freeze until firm, about 1 hour.
- Put a baking sheet on the middle oven rack and preheat to 375 degrees F. Line the crust with foil, then fill with pie weights or dried beans. Transfer to the hot baking sheet and bake until lightly golden around the edge, about 20 minutes. Remove the foil and weights and continue baking until the crust is golden all over, about 10 more minutes. Transfer to a rack and let cool completely; leave the baking sheet in the oven.
- Meanwhile, make the filling: Whisk the pumpkin puree, eggs, heavy cream, granulated sugar, vanilla, cinnamon, ginger, cardamom, nutmeg, allspice and salt in a medium bowl until well combined. Pour into the cooled crust and return to the hot baking sheet in the oven. Bake until set around the edge but the center still jiggles slightly, 50 minutes to 1 hour. Transfer to the rack and let cool completely.
- Make the whipped cream: Beat the heavy cream, brown sugar, vanilla and cinnamon in a large bowl with a mixer on medium-high speed until soft peaks form, 2 to 3 minutes. Serve the pie with the whipped cream.
PUMPKIN PIE WITH SPICED OAT CRUST RECIPE
Steps:
- Lightly grease a 9-inch pie plate or spray with nonstick baking spray. Heat oven to 425 F.
- In a mixing bowl blend oats with flour, brown sugar, pecans, and cinnamon. Combine the oil and water, then work into the crust until well blended. Pat into the prepared pie plate. Bake for 8 to 10 minutes, or until browned around the edges. Remove from the oven.
- Whisk together the 1/3 cup brown sugar and granulated sugar, eggs, vanilla, salt, and spices. Blend in half-and-half until smooth, then blend in the pumpkin.
- Pour the filling mixture into the prepared crust and bake for 10 minutes at 425 F. Reduce oven temperature to 350 F and bake for 30 to 40 minutes longer, or until the filling set. A knife inserted into the center of the pie will come out clean.

OVERNIGHT PUMPKIN PIE STEEL CUT OATS
Who doesn't love pumpkin pie for breakfast? I love steel cut oats, but as a teacher and trainer, I don't have time to cook them in the morning. I did a lot of experimenting and came up with the following recipe for overnight oats in the fridge. Before I leave for work, I grab my jar of oats, put it in my bag, and head for the gym. I heat it up as soon as I hit work and I've got pumpkin pie for breakfast.

- I make up five of these on the weekend by putting oats, flax seeds, and spice into pint canning jars and putting the lids on them. They sit in the cupboard.
- Every night I heat up (or use a hot water dispenser) half cup water until about tea water temperature. Doesn't have to be boiling. Alternatively, you can just add water, pumpkin, and maple syrup and put into microwave for 2 minutes.
- Put lids on jar and put into fridge.
- In the morning, add about 1 tbs half and half or a little milk or almond milk and head for 90 seconds. Stir, eat. One of the benefits of the soaking is that the flax actually puffs up and becomes digestible so you don't need to grind it.
- Other add ins or options: coconut, raisins or other dried fruit, nuts, hemp hearts, chia seeds, (I actually always do hemp hearts or chia but neither were in the database), peanut butter and cocoa, fresh berries, pears or apples with apple pie spice, etc.

- CRUST: In a mixing bowl, cream together shortening, water, cinnamon, nutmeg and brown sugar, Slowly add flour, oats and walnuts. Press mixture into the bottom and 1-inch up the sides of a greased 9-inch springform pan,. Bake in a preheated 325F oven for 10 minutes. Cool on a wire rack. Increase oven temperature to 450°F.
- FILLING: In a large mixing bowl, beat together cream cheese and sugar until fully combined. Add flour, nutmeg and cinnamon and combined. Add eggs one at a time, mixing just to incorporated each egg. Do not overmix.
- Fold in pumpkin. Pour mixture into prepared crust. Bake 10 minutes. Lower heat to 225F and bake for 1 hour and 40 minutes.
- Turn oven off, slightly opening door to allow for cheesecake to cool to room temperature. Refrigerate overnight or at least 4 hours. (Cheesecake may crack).
