100g butter, softened, plus extra for greasing
2 ripe bananas
100g light muscovado sugar
100g self-raising flour
2 tsp ground cinnamon
2 eggs
2 tbsp milk
icing sugar, toffee sauce and ice cream, to serve, if you like

Steps:

  • Put the butter in a 1-litre baking dish and microwave on High for 30 secs-1 min until melted. Add 1½ bananas, mash into the melted butter, then add the sugar, flour, cinnamon, eggs and milk. Mix together well.
  • Slice the remaining banana over the top, then return to the microwave and cook on High for 8 mins until cooked through and risen. Serve warm, dusted with icing sugar, if you like, with a drizzle of toffee sauce and a scoop of ice cream.

1 loaf day-old French bread, cubed,with crust on
1 quart milk (whole or 2%)
3 eggs
1 cup sugar
2 tablespoons vanilla extract
4 ripe bananas, mashed
1 cup raisins
1 teaspoon nutmeg, freshly grated,if possible
1 teaspoon cinnamon
1 dash of myer rum (optional)
whipped cream

Steps:

  • Put cubed bread in a large bowl with milk, let stand for 1 hour.
  • Pre-heat oven to 325ºF.
  • Spray 9" X 13" baking dish.
  • In another bowl, beat together eggs, sugar and vanilla.
  • Stir this mixture into the bread mixture.
  • Fold in the mashed bananas, spices and raisins.
  • Pour evenly into baking dish.
  • Place uncovered in center of oven and bake 1 hour and 10 minutes.
  • Remove from oven and cool to room temperature.
  • Serve with a splash of rum and whipped cream, if desired.

1/4 cup all-purpose flour
1/4 teaspoon salt
3 cups 2% milk

  • In a large saucepan, mix sugar, flour and salt. Whisk in milk. Cook and stir over medium heat until thickened and bubbly. Reduce heat to low; cook and stir 2 minutes longer. 2 boxes of vanilla wafers (2 )
2 boxes of vaniila instant pudding
1 container of cool whip
4 cups of milk
3-4 ripe bananas

Steps:

  • First, I combine my 2 boxes of instant vanilla pudding and 4 cups of milk in a large bowl. Which means you will use 2 cups of milk per box of pudding
  • You can use a whisk or a hand mixer, whichever you prefer they're both fairly easy. You will want to whisk/mix until all the lumps are gone.
  • Next, you add in 1 cup of whipped cream into your pudding mixture.
  • You fold in the whipped cream, do not whip or stir because you want to keep your pudding light, fluffy, and airy.
  • Now, you're going to set your pudding aside. I use my trifle bowl, which is typically used for layered desserts.
  • I start to layer my vanilla wafers at the bottom of the bowl as well as around.
  • Then, I begin to peel and slice my bananas, laying them on top of the wafers.
  • After layering in the wafers and bananas, add a generous amount of pudding. You will continue this process of layering until you reach the top of the trifle bowl.
  • Now that you've completed your banana pudding, you will need to refrigerate until chilled.

SOUTHERN-STYLE BAKED BANANA PUDDING

¼ teaspoon salt

  • Separate eggs, placing the whites in the bowl of a stand mixer and the yolks into a saucepan.
  • Add sugar, salt, and 1/3 cup plus 1 tablespoon flour to the yolks. Splash in about 1/4 of the milk and start blending mixture with a whisk. Pour in remaining milk and whisk until smooth.
  • Cook and stir mixture over medium heat until hot to the touch, occasionally dipping your finger in to test. Whisk constantly until custard is thick enough to form ribbons.
  • Remove custard from heat and add vanilla extract, banana liqueur, and cold butter. Whisk until butter dissolves. Set custard aside.
  • Preheat the oven to 400 degrees F (200 degrees C).
  • Toss banana slices with lemon juice.
  • Spread a quarter of the custard over the bottom of a baking dish. Add a single layer of vanilla wafers. Cover with 1/2 of the bananas and spread 1/2 of the remaining custard on top. Add another layer of vanilla wafers, using slightly fewer this time. Top with the remaining bananas and custard. Smooth the top and tap dish against the counter to settle the pudding.
  • Add cream of tartar to the egg whites. Beat using the whisk attachment until foamy. Gradually add sugar and beat until stiff, but not dry, peaks form. Spread meringue over the pudding using a soft spatula, creating ridges for contrast.
  • Bake in the preheated oven until meringue is nicely browned, 7 to 10 minutes. Serve warm or chilled.

  • Combine 3/4 cup of the sugar, the cornstarch and salt in a 3-quart saucier. Add the eggs and egg yolk and whisk to combine. Add the milk and whisk until well combined, about 30 seconds. Cook over medium-low heat, stirring constantly until the mixture reaches 172 to 180 degrees F, approximately 5 to 10 minutes. The mixture will begin to

  • Lay the vanilla wafers on a half sheet pan. Slowly and evenly pour the banana liqueur over the cookies. Set aside for 10 minutes.
  • Toss the banana slices with the lemon juice in a small bowl and set aside.

1 1/4 cups sugar
1/4 cup cornstarch
Kosher salt
4 large eggs, separated, yolks lightly beaten
2 tablespoons unsalted butter
1 1/2 teaspoons pure vanilla extract
3 ripe medium bananas (about 1 pound), thinly sliced crosswise (about 2 1/2 cups)
50 vanilla wafers, such as Nilla Wafers (about half a box)
1/4 teaspoon cream of tartar

Steps:

  • Heat 2 1/2 cups of the milk in a large saucepan over medium heat until steaming.
  • Whisk 3/4 cup of the sugar, the cornstarch and 1/2 teaspoon salt in a large bowl. Whisk in the egg yolks and the remaining 1/2 cup milk.
  • Whisk half of the hot milk into the egg mixture until smooth, and then gradually whisk the egg-milk mixture into the milk in the saucepan. Cook over medium heat, whisking constantly, until the mixture boils. Reduce the heat to medium-low, and let the mixture come to a simmer. Continue to cook, whisking constantly, until it has thickened to a puddinglike consistency, 3 to 4 minutes. Remove from the heat and whisk in the butter and vanilla.
  • Layer a third of the pudding, half the banana slices and half the vanilla wafers in a 9-inch square baking dish. Layer with half the remaining pudding, all the remaining banana slices and all the remaining wafers. Top with the last of the pudding. Cover with plastic wrap pressed directly on the pudding surface, and refrigerate overnight to soften the cookies.
  • Position a rack in the upper third of the oven, and preheat to 350 degrees F. Bring the egg whites to room temperature. Beat the egg whites and cream of tartar in the bowl of a stand mixer fitted with a whisk attachment on medium speed until frothy. Increase the speed to medium-high, and slowly sprinkle in the remaining 1/2 cup sugar a tablespoon at a time, whipping for 15 seconds after each addition, until glossy firm peaks form. Spread the meringue on top of the pudding with an offset spatula so it reaches the edges of the pan. Bake until golden brown, 12 to 15 minutes. Serve warm or chilled.

5 large egg yolks

1/4 cup cornstarch

2 cups whole milk

2 ripe bananas
For the crumble:
1 cup vanilla wafers (about 15 cookies)
2 teaspoons sugar
1/4 teaspoon ground cinnamon
Pinch salt
1 tablespoon unsalted butter, melted

Steps:

  • To make the pudding:
  • Whisk the egg yolks, sugar, cornstarch, and salt together in a medium bowl and set aside. Bring the milk to a boil in a medium saucepan. Remove from the heat and whisk a little at a time into the egg mixture. Once the bottom of the bowl is warm, slowly whisk in the remaining hot milk. Pour the mixture back into a clean medium saucepan (cleaning the saucepan prevents the pudding from scorching), add the banana liqueur, and whisk over medium-low heat until it thickens, about 2 minutes. Cook while constantly whisking until the pudding is glossy and quite thick, 1 1/2 to 2 minutes longer. Transfer the pudding to a clean bowl.
  • Add the vanilla and butter and gently whisk until the butter is completely melted and incorporated. Press a piece of plastic wrap onto the surface of the pudding to prevent a skin from forming. Refrigerate for 4 hours.
  • To make the crumble:
  • While the pudding sets, heat the oven to 325°F. Line a rimmed baking sheet with parchment paper and set aside. Place the wafers in a resealable plastic bag and seal (make sure there is no air in the bag prior to sealing). Using a rolling pin or a flat-bottomed saucepan or pot, crush the vanilla wafers until they're coarsely ground. Transfer them to a small bowl and stir in the sugar, cinnamon, and salt. Use a spoon to evenly stir in the melted butter, transfer to the prepared baking sheet, and toast in the oven until brown and fragrant, 12 to 15 minutes. Remove from the oven and set aside to cool. (The crumbs can be stored in an airtight container for up to 5 days at room temperature or frozen for up to 2 months; re-crisp in a 325°F oven for 6 to 7 minutes if necessary.)
  • To serve:
  • Slice the bananas in half crosswise and then slice in half lengthwise so you have 4 quarters. Slice the banana quarters crosswise into 1/2-inch pieces and divide between 6 custard cups or martini glasses (sprinkle with a squeeze of lemon juice if you like-this helps prevent browning). Whisk the pudding until it is soft and smooth, about 30 seconds, and then divide it between the custard cups. Top with the vanilla wafer mixture and serve. (If not served immediately, the pudding will keep in the refrigerator for up to 3 days, with plastic wrap intact. Sprinkle the crumbs on just before serving.)

  • Place roughly on the pudding and return to the oven for a few minutes until the froth is light brown.
  • Serve it swimming in cream.

This from scratch banana pudding recipe is from a cookbook called Dining with Pioneers. This book has been well used in my house, so much so that most of the recipes I have transfered to recipe cards because the pages and book itself have become tattered with use.

3/4 cup sugar
2 tablespoons flour
1/4 teaspoon salt
2 cups milk
3 egg yolks
1 teaspoon vanilla
12 ounces vanilla wafers
6 bananas

Steps:

  • Combine sugar, flour and salt in saucepan; Stir in milk and cook over medium heat until thick. (Be careful not to scortch pan).
  • Beat egg yolks, temper egg yolks by adding two tbsp of hot mixture to yolks then yolks to hot mixture.
  • Cook for 5 minutes; remove from heat, stir in vanilla.
  • In a 9x13 pan place a single layer of vanilla wafers on the bottom of the dish and up the sides.
  • Place banana slices over cookies, top with pudding and chill in refrigerator.
  • Before serving top with real whip cream. (Some people prefer meringue or cool whip which is fine but I think a 1/2 pt of heavy whip cream beat with 2 tbsp of sugar is the icing on the pudding).

Combine 3/4 cup granulated sugar, 2 tablespoons water, and corn syrup in a medium saucepan. Cook over medium-high, without stirring, until a deep-amber caramel forms, 5 to 6 minutes. Remove from heat and gradually whisk in warm cream mixture (mixture will bubble up). Let cool 10 minutes. Pour through a fine wire-mesh strainer into a heatproof container; discard solids.
  • Whisk together 1/2 cup milk, 1/2 cup granulated sugar, cornstarch, and egg yolks in a medium bowl. Combine remaining 3 cups milk and remaining 1/2 cup granulated sugar in a medium saucepan. Bring to a simmer over medium. Remove from heat and very gradually whisk hot milk mixture into egg mixture to temper it. Return mixture to saucepan, and bring to a boil over medium-high. Cook, whisking constantly, until thickened, 1 to 2 minutes. Remove from heat, and whisk in 6 tablespoons butter, 1 tablespoon at a time, until incorporated. Whisk in vanilla and 1 teaspoon salt. Transfer pudding to a medium bowl and press a piece of plastic wrap directly on surface. Let cool completely, and refrigerate until well chilled, about 4 hours. Fold in bananas and refrigerate 30 minutes.
  • Preheat oven to 325°F and line a large rimmed baking sheet with parchment paper. Melt 1/4 cup butter and kokuto in a small saucepan over medium, stirring, until sugar is dissolved, about 2 minutes. Whisk together graham cracker crumbs, flour, light brown sugar, and 1/2 teaspoon salt in a medium bowl. Stir in butter mixture until crumbs are evenly moistened. Spread mixture in a 1/4-inch-thick layer on prepared baking sheet. Bake in preheated oven until dry and crisp, about 16 minutes, breaking up and stirring crumbs halfway through baking. Let cool completely. Crush into fine crumbs.
