Oatmeal is a favorite breakfast food, quick, easy and filling. I came up with this version by using some of the same ingredients from my favorite breakfast smoothie. - In a small saucepan, bring milk to a boil; stir in oats. Cook over medium heat for 1-2 minutes or until thickened, stirring occasionally., Stir in the banana, brown sugar, honey and cinnamon. Serve with additional milk and cinnamon if desired.

BAKED BANANA OATMEAL
I love baked oatmeal and make many different versions, but this is one of my kids favorites. It is really easy to throw together and smells so good. We like to eat it topped with vanilla yogurt.

- Preheat oven to 375.
- Spray an 8 inch square pan with cooking spray.
- Stir together oats, baking powder, salt and cinnamon.
- Add sugar, an egg, 1 mashed banana, milk and vanilla. Stir just until combined.
- Pour into prepared pan and top with a layer of sliced bananas.
- Bake for 25 minutes.
- Top with brown sugar and broil until golden. About 3-4 minutes, but watch it carefully!

- Peel and slice 1 banana; reserve for serving. Using a fork, mash the remaining 3 bananas in a large saucepan. Add milk and bring the mixture to a simmer over medium-high heat, scraping the bottom of the pan often with a wooden spoon. Stir in oats, maple syrup, vanilla, cinnamon, ginger and salt. Reduce heat to medium-low. Cook, scraping the bottom of the pan often with the spoon, until the mixture is thick and creamy, about 5 minutes. Divide the oatmeal evenly among 4 bowls; top evenly with the reserved banana slices. Sprinkle with cinnamon, if desired, and serve immediately.

BANANA OATMEAL
One of my favorite breakfasts. I invented this version, but my Mom deserves some credit for it too. It can be mixed the night before, and refrigerated in a covered bowl/microwave safe container. In the morning all you have to do is microwave it and mix in the peanut butter.

Steps:
- Break banana into chunks and put into a small blender jar.
- Add the skim milk.
- Liquify in blender.
- Put the dry oatmeal in a microwave safe bowl. (If you want to mix it ahead of time, use a small microwave safe dish which has a lid).
- Pour the banana mixture on top of the oatmeal.
- Stir well, to incorporate all the oatmeal.
- Microwave (uncovered) on high setting for 90 seconds.
- Stir.
- Microwave again for about 90 seconds.
- If it starts to rise over the top of the bowl, stop the cooking, because it is most likely already done!
- Stir in peanut butter.

- Combine dry ingredients; set aside.
- Blend mashed banana, melted margarine, and soy milk until fairly smooth. Add in dry ingredients and optional item and mix just until moistened. Pour out onto floured board. Incorporate more flour if dough is too sticky. Cut dough in half and roll or pat each half into a circle, about 7-8 inches around. Cut into 8 wedges. Place on silpat or oiled baking sheet.
- Bake 425 for about 10 minutes, until light golden brown.

This is my guilt-free not-to-sweet treat; It is quick and easy in the microwave. I came up with this after falling in love with those new Quaker Oatmeal Breakfast Cookies in apple cinnamon flavor and after eating entirely too many I decided to come up with my own apple induced oatmeal. This makes for a thick oatmeal. Use more soymilk for a thinner oatmeal.

- Mix cubed apple with lemon juice and 1/4 tsp cinnamon, making sure apple is covered evenly.
- Cover, and microwave on high for 3 minutes.
- Remove from microwave and add sliced banana.
- Put aside.
- In separate bowl combine oatmeal, soymilk, and the other 1/4 tsp cinnamon.
- Mix well and microwave on high for 3 minutes.
- Combine apple, banana mixture with oatmeal. Add chopped walnuts.
- Enjoy.
