¾ cup white sugar
⅓ cup all-purpose flour
¼ teaspoon salt
2 cups milk
3 egg yolks, beaten
2 tablespoons butter
1 ¼ teaspoons vanilla extract
1 (9 inch) baked pastry shell, cooled
4 bananas, sliced

Steps:

  • In a saucepan, combine the sugar, flour, and salt. Add milk in gradually while stirring gently. Cook over medium heat, stirring constantly, until the mixture is bubbly. Keep stirring and cook for about 2 more minutes, and then remove from the burner.
  • Stir a small quantity of the hot mixture into the beaten egg yolks, and immediately add egg yolk mixture to the rest of the hot mixture. Cook for 2 more minutes; remember to keep stirring. Remove the mixture from the stove, and add butter and vanilla. Stir until the whole thing has a smooth consistency.
  • Slice bananas into the cooled baked pastry shell. Top with pudding mixture.
  • Bake at 350 degrees F (175 degrees C) for 12 to 15 minutes. Chill for an hour.

1 package (3.4 ounces) instant vanilla pudding mix

Steps:

  • In a small bowl, combine the flour, pecans and butter. Press onto the bottom and up the sides of a greased 9-in. pie plate. Bake at 350° for 25 minutes. Cool completely on a wire rack. , In a small bowl, beat cream cheese and sugar. Fold in 1 cup of whipped topping. Spread over the crust. Arrange bananas on top. 2 cups graham cracker crumbs (10 to 12 crackers)
1/4 cup sugar
6 tablespoons (3/4 stick) unsalted butter, melted
3/4 cup sugar
5 extra-large egg yolks
1/3 cup cornstarch
1 teaspoon kosher salt
4 cups whole milk, scalded
7 ounces bittersweet chocolate, chopped
2 tablespoons unsalted butter, diced
1 tablespoon coffee liqueur
1 teaspoon instant coffee powder
2 large bananas, sliced
1 cup cold heavy cream
1 tablespoon sugar
1 teaspoon pure vanilla extract
Milk chocolate, for garnish

Steps:

  • Preheat the oven to 350 degrees.
  • For the crust, combine the graham cracker crumbs, sugar and butter in a bowl. Press the mixture into an 11-inch false-bottom tart pan, making sure the sides and the bottom of the crust are an even thickness. Bake for 10 minutes and set aside to cool completely.
  • In the bowl of an electric mixer fitted with the paddle attachment, combine the sugar, egg yolks, cornstarch and salt. With the mixer on low, slowly add the scalded milk until the mixture is combined.
  • Pour the mixture into a large saucepan and cook over medium-low heat for about 5 minutes, stirring constantly with a wooden spoon, until the mixture is very thick. Off the heat, add the chocolate, butter, coffee liqueur and coffee powder and stir until the chocolate is melted. Pour the filling into the cooled tart pan and smooth the top. Place plastic wrap directly on top of the chocolate filling and chill for 6 hours.
  • When ready to serve, remove the plastic wrap from the chocolate and arrange the banana slices in concentric circles on top of the filling.
  • Place the heavy cream, sugar and vanilla in the bowl of an electric mixer fitted with the whisk attachment and beat until the cream forms firm peaks. Spoon the whipped cream on top of the bananas and gently spread the cream with a spatula to cover the pie, leaving a border of bananas visible at the outside edge. For a garnish, shave curls of milk chocolate on top of the whipped cream. Remove the pie from the pan, place it on a cake plate and serve.

1½ cups whole vanilla wafers
4 tablespoons (½ stick) unsalted butter, melted
2 tablespoons sugar
Filling:
3 large eggs, separated
3 tablespoons cornstarch
1 cup whole milk
½ cup heavy cream
1 cup plus 3 tablespoons sugar
1 teaspoon unsalted butter, melted
1½ teaspoons pure vanilla extract
⅛ teaspoon salt
½ teaspoon cream of tartar
3 bananas, cut into ¼-inch-thick slices
1 cup whole vanilla wafers

Steps:

  • For the crust:
  • Preheat the oven to 325°F.
  • Place the vanilla wafers in a food processor and pulse until the crumbs resemble coarse meal. Add the melted butter and sugar and pulse until the cookie crumbs are evenly moistened. Press the mixture into the bottom and sides of a 9-inch pie tin.
  • Bake the crust until set and golden brown, about 10 minutes. Let cool completely.
  • For the filling:
  • Cover and chill the egg whites. In a medium saucepan, combine the cornstarch, milk, cream, egg yolks, and 1 cup of the sugar. Cook over medium heat, whisking continuously, until thickened, 10 to 15 minutes. Do not leave the custard unattended while whisking because the egg yolks will cook and make the mixture grainy.   • In the bowl of a stand mixer fitted with the whisk attachment, combine the egg whites and the cream of tartar. With the mixer on high speed, gradually add the remaining 3 tablespoons sugar and whisk until stiff peaks form.
  • Arrange the banana slices in a single layer over the custard. Top the banana slices with the vanilla wafers. Spread the meringue over the wafers, covering the entire pie.
  • Bake until the meringue is light brown all over, about 10 minutes. Let cool to room temperature, then chill for at least 20 minutes before serving.
  • Chef's Tip: The secret to making custard pies is controlling the heat of the stove: it should be intense enough to advance the cooking process but not so hot that it scorches the custard.

With generous layers of dulce de leche, bananas and whipped cream, this dazzling pie is not for the faint of heart. The banoffee or banoffi pie, a mash-up of banana and toffee, was created in 1971 by the chef Ian Dowding and Nigel MacKenzie, the owner of the Hungry Monk, a now-closed restaurant in Sussex, England. The original recipe called for a traditional pie crust, homemade dulce de leche and coffee-flavored whipped cream, but we've simplified it for the home cook by using a graham cracker crust, store-bought dulce de leche and plain whipped cream. If you like, you could add a teaspoon of instant coffee granules to the whipped cream.

1 1/4 cups/155 grams graham cracker crumbs (about 10 whole graham crackers)
5 tablespoons/70 grams unsalted butter, melted
1/3 cup/65 grams granulated sugar

2 1/2 cups/600 milliliters store-bought dulce de leche (about 20 ounces)
3 large bananas, peeled and sliced about 1/4-inch thick
1 1/2 cups/360 milliliters cold heavy cream
2 tablespoons granulated sugar
1 teaspoon vanilla extract
1 teaspoon instant coffee granules (optional)
Chocolate shavings or fresh coffee grounds, for garnish (optional)

Steps:

  • Heat the oven to 350 degrees. Make the crust: In a medium bowl, combine graham cracker crumbs, melted butter, sugar and salt. Stir until fully incorporated and sandy. (When you pinch a bit of it between your fingers, it should hold together.) Transfer to a 9-inch pie plate. Using your fingers or a flat-bottomed cup, press the mixture into the pie plate and up the sides. Make sure it is well packed. Bake until set, 12 to 15 minutes. Let cool at room temperature for 30 minutes, or cover with plastic wrap and refrigerate up to 2 days.
  • Spoon the dulce de leche into the pie crust and spread into an even layer. Pile in banana slices into a relatively even layer (they should overlap). Transfer the pie to the refrigerator while you make the whipped cream.
  • Make the whipped cream: Using a handheld mixer or stand mixer fitted with a whisk attachment, whip the heavy cream, sugar, vanilla extract and instant coffee, if using, on medium-high speed until firm peaks form, 1 to 2 minutes. Spread the whipped cream on top of the bananas, making sure to spread the whipped cream to the edge, totally covering the bananas (this will help prevent them from browning). Chill the pie, uncovered, for 2 hours and up to overnight.
  • To serve, sprinkle the pie with chocolate shavings or fresh coffee grounds, if desired. Store leftover pie in the refrigerator, covered, for up to 5 days. The whipped cream may lose some height, but the pie will be no less delicious.

DULCE DE LECHE BANANA CREAM PIE

1 (5-ounce) package Maria crackers (about 41 crackers), or graham crackers
1/2 cup roasted, unsalted peanuts, plus 1/2 cup chopped, for garnish
1/8 teaspoon salt
8 tablespoons (1 stick) unsalted butter, melted
4 ounces cream cheese, at room temperature
4 tablespoons (1/2 stick) unsalted butter, at room temperature
2 tablespoons powdered sugar
2 teaspoons ground cinnamon
1 cup heavy whipping cream
1 cup store-bought dulce de leche (recommended: Nestle La Lechera Dulce de Leche), plus extra for decorating
3 medium bananas, sliced

Steps:

  • For the crust: Place the Maria crackers in the bowl of a food processor and process until coarsely ground. Add the peanuts and salt to the crumb mixture and process until finely ground. Add the melted butter and pulse until combined. Transfer the crust mixture into a 9 1/2-inch diameter glass pie dish, pressing and forming the crust evenly across the bottom and up the sides. Refrigerate for 10 to 20 minutes to solidify the butter.
  • For the cream filling: Using a hand-held mixer, whip the cream cheese and butter at medium speed until fluffy with minimal lumps. Add the powdered sugar and cinnamon, whipping at low speed until just combined and being careful not to curdle the butter. Add the cream and whip to soft peaks.
  • To assemble the pie: Spread the dulce de leche on top of the chilled crust. Top with the sliced bananas, forming 2 layers if necessary. Pour the whipped cream on top and spread evenly to completely cover the banana layer. Refrigerate and chill until set, about 2 hours.
  • To serve, top the pie with a 1-inch border of the remaining chopped peanuts. Warm the remaining dulce de leche in the microwave or on the stovetop until melted. Drizzle the dulce de leche on top of the pie and serve.

This pie is delicous! I have even made it with out the bananas and nuts. Make sure when you are boiling the can of sweetend condensed milk keep it covered in water. Make sure you boil the milk for 3 hours any less and the milk won't carmel.

Chocolate lovers unite! This is one especially for you! It tastes like an elegant Mousse pie although technically it isn't. This pie uses no pudding mixes so is really a good example of 'getting back to basics'. I dreamed about this pie...and couldn't believe how good it turned out...the very first time! You can of course substitute pecans for the walnuts if you wish but I used walnuts because it was required for the RSC contest. This pie makes a gorgeous presentation and is worth the little extra work to make. Although your family will adore it...it would be wonderful for guests. They will know that this was a real homemade pie! Prep time does not include the two chill times. The cooking time includes the baking of the crust and the cooking of the chocolate mix.

1/2 cup graham cracker crumbs
2 cups ground walnuts
2 tablespoons butter, melted
2 tablespoons brown sugar, packed

1/2 cup brown sugar
2 tablespoons water
1 tablespoon butter
1 1/2 cups whipping cream
1 (1 ounce) package unflavored gelatin, softened in 3 Tablespoons water
2 bananas (firm ripe peeled cut into small cube-like chunks)
1/2 cup walnut pieces, broken
1 cup whipping cream, whipped with 2 tablespoons powdered sugar
2 tablespoons walnuts, broken into small pieces

Steps:

  • Mix the 2 cups of ground nuts, ½ cup of ground graham cracker crumbs, 2 T. melted butter and 2 Tablespoons brown sugar well.
  • Using a 9 ½ to 10 inch pie pan, press mixture evenly on the bottom and sides.
  • Bake at 350°F for 10 minutes.
  • Cool and set aside.
  • Blend 2 cups powdered sugar, the cream cheese and vanilla with electric mixer until smooth.
  • Add unflavored gelatin/water mixture and set aside.
  • Put the ½ cup brown sugar into a pan with the 2 Tablespoons of water and 1 Tablespoon of butter. Heat on low heat until sugar is melted.
  • Add the gelatin water mix to the brown sugar and stir.
  • Add the chocolate chips to the brown sugar and gelatin mix, and continue stirring until well blended and chocolate is glossy. (Mixture will be thick.).
  • Slowly mix the hot mixture, a little at a time, into the cream cheese and mix well.
  • Slowly add the 1 ½ cups of whipping cream to the mixer and after blending well mix at high speed for about 2 minutes.
  • Cover and chill in a very cold place for at least 30 minutes. (I actually put mine outside in the below freezing temps to chill).
  • Bring out the chilled mixture and beat at high speed until soft peaks form.
  • Gently fold in the ½ cup of broken walnut pieces and chunks of bananas.
  • Pour into the cooled pie crust, mounding on top since this makes a deep pie.
  • Chill well.
  • Top with the Whipped Cream from the topping ingredients...and garnish with the 2 Tablespoons of broken walnuts sprinkled on the top and serve.

The combination of banana and toasted nut flavors is a treat to the tastebuds. Marg @Cayman Designs' Recipe #134190 is a good graham cracker crust recipe (don't use the optional cinnamon for this pie); you can also use a commercially available crust. Use ripe bananas but NOT bananas that are over-ripe and turning mushy. If you like, use dollops of Reddi-Whip on top of pie (optional); the program won't let me add this optional ingredient to the ingredients list.

1 1/2 cups pecan halves, toasted
2 tablespoons butter, melted
2 tablespoons light brown sugar
1/4 teaspoon vanilla extract
1 (9 inch) graham cracker crust
1 large firm banana, sliced very thin
1 (3 1/2 ounce) package instant butterscotch pudding mix
1 3/4 cups half-and-half
1 teaspoon vanilla extract

Steps:

  • Reserving 1/2 cup of pecan halves, finely chop the remaining nuts and mix with butter, brown sugar and 1/4 tsp vanilla.
  • Pat nut mixture evenly over the bottom of the piecrust.
  • Layer the banana slices over the nut mixture.
  • With a whisk or electric mixer, combine the pudding mix powder, half and half and 1 tsp vanilla until smooth and creamy; pour over banana layer in pie.
  • Chill at least 1 hour.
  • Before serving, decorate the top of the pie with the reserved pecan halves--make a pretty pattern or just place in a circle around the edge.
  • If desired, top with pie with one or more dollops of Reddi-Whip.

1 cup sugar free cookie crumbs
1/4 cup finely chopped pecans
2 tablespoons margarine
2 medium bananas (reserved)
1 3/4 cups skim milk
1/4 cup unsweetened apple juice concentrate
1/4 cup cornstarch
2 tablespoons margarine
4 teaspoons sugar substitute
1 teaspoon vanilla extract
1 pinch salt
1/4 cup sugar free cookie crumbs
1/4 cup chopped pecans

Steps:

  • To make Crust:.
  • Soften the margarine.
  • Blend cookie crumbs, pecans, and margarine in a bowl to make the crust.
  • Press the pie crust into a 9 inch pie plate.
  • Chill for 30 minutes.
  • To make Filling:.
  • In a saucepan, heat all filling ingredients, except margarine, to a boil over medium heat, whisking until smooth (about 10 minutes). Reduce heat and simmer for 1 minute. Scrape into a bowl.
  • Whisk in remaining 2 tablespoons of margarine until smooth. Cover with plastic wrap and cool to room temperature. Slice the bananas.
  • In prepared pie plate, arrange sliced bananas in 1 layer. Whisk cooled filling and pour evenly over bananas.
  • To Make Topping:.
  • Mix remaining cookie crumbs and pecans together and sprinkle over the filling. Chill the Banana Pecan Cream Pie for 1 hour before serving.
