And you control what goes into your cake! When you try this cake recipe.. be ready for your taste buds to explode! It is so good. I played...

1-1/2 c sugar
1-1/2 c vefetable oil
4 large eggs
2-1/2 c flour
1 tsp salt
2 tsp baking soda
2 tsp cinnamon
1/2 c chopped nuts optional
1-1/2 c chopped or mashed cooked carrots. ... i used my home canned carrots.
1 c mashed ripe banana..... i used my frozen bananas i stored in the freez.er

Steps:

  • 1. Grease & flour a 13x9 inch baking pan. Pre-heat the oven to 350 F. Assemble all your ingredients.
  • 2. Mash your cooked carrots. Try not to use store bought carrots in a can. Frozen carrots are O.K. But cooked. You can even use baby food carrots... in a pinch. Add to bowl.
  • 3. Mash 2 ripe or frozen bananas... if you have them... The taste is the same. Add to bowl.
  • 4. Chop your nuts ... if you use them. I use walnuts. Add to bowl.
  • 5. Now the easy part! A one bowl wonder!.. Put all! that's every ingredient together into a large bowl and mix well. Put in oven. Bake for 30-35 minutes. Check center of cake, to be sure it is done. Did you know you can use a stick of spaghetti for a tester?? Cake is done when nothing sticks to the spaghetti! Thank my Grandma Walker, for this trick. You can even use a wooden chop stick.
  • 6. I like to use powdered sugar, sprinkled on top of cake. And a scoop of vanilla ice cream... goes good with this cake. YUM! *****Or a cream cheese frosting will do. This is your choice. From my mother-in-law. This carrot cake does not have a cream cheese frosting. I have not had this yet, but my hubby says it's wonderful. He says that he can't taste the bananas in the cake, but it's been years since he's had it, so that might be wrong. He says it's really good though.

1 cup sugar
1 cup mashed banana
2/3 cup canola oil
2 eggs
1 1/2 cups flour
1 teaspoon salt
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon clove
1 cup quick-cooking oats (uncooked)
1 cup carrot, shredded
1/3 cup chopped nuts

Steps:

  • Preheat oven to 350°F.
  • Combine sugar, banana, and oil.
  • Add eggs, one at a time, beating well after each addition.
  • In a separate bowl, combine flour, salt, baking soda, baking powder, and spices.
  • Add to banana mixture and mix well.
  • Stir in carrots and oats; mix well.
  • Spread in greased 9x9 inch baking pan. Sprinkle with nuts.
  • Bake at 350F for 40 minutes or until toothpick inserted in center comes out clean.

1 cup(s) carrots, grated
1/2 cup(s) pineapple juice
3/4 cup(s) vegetable oil
1/2 cup(s) honey
1/2 cup(s) brown sugar
3 large eggs
3 teaspoon(s) baking powder
1 tablespoon(s) cloves, ground
1 tablespoon(s) cinnamon, ground
1 teaspoon(s) salt
1 cup(s) walnuts, chopped

Steps:

  • Preheat the oven to 350; grease a 9\"x12\" baking pan.
  • In a large bowl sift together the flour, cinnamon, cloves and baking powder.
  • In a smaller bowl beat together the eggs; add sugar and honey; whisk in the oil and juice.
  • Mix into the dry ingredients.
  • Stir in the carrots, bananas and walnuts.
  • Pour mixture into the baking dish; bake 40 to 45 minutes or until a toothpick inserted into the center comes out clean.
  • Cool 50 to 60 minutes; serve with vanilla ice cream or yogurt.
  • NOTE: May use apple or orange juice in place of pineapple juice.

2 eggs
1 teaspoon baking soda
4 tablespoons buttermilk
½ cup butter
1 ½ cups white sugar
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
3 ripe bananas, mashed
1 cup chopped pecans
3 tablespoons butter, softened
2 cups confectioners' sugar
3 tablespoons heavy whipping cream
¼ cup pecan halves, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9 inch round cake pans.
  • Separate the eggs and set aside.
  • Stir the baking soda into the buttermilk. Cream 1/2 cup of the butter or margarine with the white sugar. Add the egg yolks, and vanilla, beating well. Add flour alternately with the mashed bananas. Stir in the buttermilk mixture.
  • Beat the egg whites until stiff. Stir the pecans into the cake batter then fold in the egg whites. Pour batter into prepared pans.
  • Bake at 350 degrees F (175 degrees C) for 25 minutes or until cakes test done. Let cakes cool in pans.
  • To Make Icing: Cream 3 tablespoons butter or margarine with the confectioners' sugar. Stir in the heavy cream until well blended. Spread icing on to cooled cake layers. Top with pecan halves if desired.

2 cups sugar
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda

2 cups mashed ripe bananas (3 to 4 medium)
1-1/3 cups canola oil
1 can (8 ounces) crushed pineapple, undrained
1-1/2 teaspoons vanilla extract
1-1/2 cups chopped walnuts
Optional toppings: Confectioners' sugar and whipped cream

Steps:

  • Preheat oven to 350°. Grease and flour a 10-in. tube pan. In a large bowl, whisk flour, sugar, salt, baking powder, baking soda, cinnamon and nutmeg. In another bowl, combine eggs, bananas, oil, pineapple and vanilla. Add to flour mixture; stir just until moistened. Fold in nuts. , Pour into prepared pan. Bake until a toothpick inserted in center comes out clean, 60-65 minutes. Cool in pan 15 minutes before removing to a wire rack to cool completely. If desired, dust with confectioners' sugar and serve with whipped cream and additional bananas.Freeze option: Securely wrap cooled cake in foil, then freeze. To use, thaw at room temperature.

2 cups all purpose flour
1 tablespoon ground cinnamon
2 teaspoons baking soda
1/4 teaspoon salt
1 cup vegetable oil
1 cup sugar
1 cup firmly packed golden brown sugar
4 large eggs
1 1/2 cups finely grated carrots (about 1 1/2 large)
1 cup drained canned crushed pineapple in juice
1/2 cup mashed ripe banana
3/4 cup chopped pecans
Frosting
1 8-ounce package cream cheese, room temperature
1 cup powdered sugar
3 tablespoons unsalted butter, room temperature
1/4 teaspoon ground cinnamon
Additional ground cinnamon

Steps:

  • For cake:
  • Preheat oven to 350°F. Grease and flour 12-cup Bundt pan. Sift first 4 ingredients into medium bowl. Whisk oil, 1 cup sugar, brown sugar and eggs in large bowl until well blended. Mix in dry ingredients. Add carrots, pineapple, banana and pecans and blend well. Transfer batter to prepared pan. Bake until tester inserted near center of cake comes out clean, about 1 hour. Let cake stand in pan 10 minutes. Turn out cake onto rack and cool.
  • For frosting:
  • Beat cream cheese, powdered sugar, butter and 1/4 teaspoon cinnamon in medium bowl until smooth. Spread frosting over cake. Sprinkle with additional cinnamon. (Can be prepared 1 day ahead. Cover with cake dome and refrigerate.)

2 large eggs, separated
2/3 cup shortening
1-1/2 cups sugar
1 cup mashed ripe bananas (2 to 3 medium)
1-1/2 cups all-purpose flour
1 teaspoon baking soda
1/4 cup buttermilk
1/2 teaspoon vanilla extract
1/2 cup chopped walnuts, optional
Whipped cream and sliced bananas, optional

Steps:

  • In a small bowl, beat egg whites until soft peaks form; set aside. In a large bowl, cream shortening and sugar. Beat in egg yolks; mix well. Add bananas. Combine flour and baking soda; add to creamed mixture alternately with buttermilk, beating well after each addition. Add vanilla. Fold in egg whites. Fold in nuts if desired., Pour into a greased 13-in. x 9-in. baking dish. Bake at 350° for 45-50 minutes. Cool on a wire rack. , If desired, garnish with whipped cream and a few banana slices.
