Oatmeal Breakfast Bars image

Healthy soft-baked oatmeal breakfast bars with peanut butter, banana, and honey are an easy, on-the-go snack made with wholesome ingredients.

2 cups old fashioned oats
1 cup whole wheat flour
2 teaspoons cinnamon
1 teaspoon baking powder
1/4 teaspoon kosher salt
1 1/2 cups milk (I used unsweetened vanilla almond, but any kind will do nicely)
3 tablespoons honey ((or more if a sweeter bar is preferred))
2 tablespoons peanut butter (creamy or crunchy-I used natural creamy)
1/2 cup unsweetened applesauce
1 large egg
1 teaspoon pure vanilla extract
1 medium banana (quartered and diced)

Steps:

  • Place rack in the center preheat oven to 375 degrees F. Lightly coat an 8x8 inch square pan with cooking spray.
  • In a medium bowl, stir together the oats, whole wheat flour, cinnamon, baking powder, and salt.
  • In a separate large bowl, combine the milk, applesauce, egg, honey, peanut butter, and vanilla.
  • Pour the dry ingredients into the wet mixture and stir to combine. The batter will be very wet.
  • Fold in the diced banana, then pour into the prepared baking pan.
  • Bake for 35 minutes or until thickened and golden and a toothpick inserted in the center comes out clean. Cool, cut into bars, and serve.

1 ⅓ cups quick cooking oats
½ cup white sugar
2 teaspoons baking powder
1 teaspoon ground cinnamon
½ teaspoon baking soda
½ cup raisins
1 cup mashed bananas
¼ cup skim milk
2 egg whites
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix together dry ingredients. In a separate bowl mix together bananas, egg whites, milk and vanilla. Beat all together.
  • Bake in a 9 x 13 inch pan which has been sprayed with non-stick spray for about 35 minutes. Cool and cut into bars. You may sprinkle with cinnamon and sugar, if desired.

I was searching for a recipe to use up the bananas that are overripe in my kitchen. Most recipes had up to 2 cups of sugar plus butter. I'm trying to watch my weight and still eat some sweets. Hope you enjoy!

5 medium bananas
1/3 cup sugar
6 teaspoons Xylitol sweetener
1/4 cup flax seed meal
2 cups flour
1 teaspoon baking soda
3 eggs

Steps:

  • Preheat oven to 350.
  • In a stand mixer using the paddle attachment, blend bananas, sugar, Xylitol, and flax. When well blended, banana chunks are OK, add eggs one at a time until well blended. Add baking soda and flour.
  • Scrape the inside of bowl to ensure that all ingredients are well mixed. Pour into baking pan (I used a 9x11 ceramic pan).
  • Bake for 25 minutes.
  • Frost with your favorite frosting (Mine is peanut butter!).

½ cup butter, softened
1 ½ cups white sugar
2 eggs
1 cup sour cream
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
¼ teaspoon salt
1 cup mashed ripe bananas
1 (16 ounce) container cream cheese frosting

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 10x15 inch jellyroll pan.
  • In a large bowl, cream together the butter and sugar until smooth. Beat in the eggs, one at a time, then stir in the sour cream and vanilla. Combine the flour, baking soda and salt; stir into the batter. Finally, mix in the mashed banana. Spread evenly into the prepared pan.
  • Bake for 20 to 25 minutes in the preheated oven, until a toothpick inserted into the center comes out clean. Allow bars to cool completely before frosting with the cream cheese frosting.
