Provided by Food Network Kitchen

Categories     dessert

Time 3h40m

Yield 8 to 10 slices

Number Of Ingredients 15

2 cups (8 ounces) sweetened, shredded coconut
1 large egg white
2 tablespoons granulated sugar
1/4 teaspoon pure vanilla extract
Pinch kosher salt
Nonstick cooking spray
2 firm, ripe bananas
1/2 cup granulated sugar
3 tablespoons cornstarch
Pinch kosher salt
4 large egg yolks
2 cups whole milk
1 teaspoon pure vanilla extract
1/2 cup heavy cream
2 tablespoons confectioners' sugar

Steps:

  • For the crust: Adjust an oven rack to the middle position and preheat the oven to 325 degrees F. Spread the coconut flakes on a baking sheet and bake until it begins to turn golden, about 10 minutes. Toss and continue to bake, tossing very frequently, until all of the coconut is evenly golden brown, 6 to 8 minutes more. Set aside to cool for 15 minutes. Leave the oven on.
  • Whisk the egg white, sugar, vanilla and salt in a large bowl until combined. Fold in the coconut. Coat a 9-inch pie plate with cooking spray and press in the mixture, forming a 1/4-inch crust around the bottom and sides. Bake until toasted and brown, 20 to 25 minutes. Set aside on a wire rack to cool for about 15 minutes.
  • For the filling: Peel the bananas and slice crosswise into thin rounds. Set aside while you make the custard.
  • Whisk the sugar, cornstarch and salt together in a medium saucepan. Vigorously whisk in the yolks, milk and vanilla until smooth. Cook over medium heat, stirring constantly, until the mixture starts to thicken and simmer, about 4 minutes. Once the mixture is simmering, continue to cook 1 minute longer, stirring constantly. Remove from the heat and pour a third of the custard over the coconut crust. Arrange the banana slices over the custard in an even layer and top with the remaining custard. Chill for 2 hours or up to overnight.
  • For the topping: Beat the heavy cream with an electric mixer until it just starts to thicken. Beat in the confectioners' sugar and continue beating until stiff peaks form, then spoon onto the pie to cover the custard. Serve immediately or chill for up to 2 hours.

BANANA CREAM PIE

Banana Cream Pie image

Yield Makes one 9-inch pie

Number Of Ingredients 10

All-purpose flour, for dusting
1/2 recipe Pate Brisee for Woven Dried-Fruit Tart
1 large whole egg, lightly beaten, plus 4 large egg yolks
6 to 8 medium-ripe bananas
3 cups whole milk
2/3 cup granulated sugar
5 tablespoons cornstarch
1/4 teaspoon salt
1 cup heavy cream
2 tablespoons confectioners' sugar

Steps:

  • Preheat oven to 375 degrees. On a lightly floured work surface, roll out dough to a 12-inch round, a bit less than 1/4 inch thick. Fit dough into a 9-inch pie plate. Using kitchen shears or a sharp knife, trim crust so there's a 1/2-inch overhang all around. Fold under overhang so it extends slightly beyond edge of pie plate. Crimp edge as desired. Prick dough all over with a fork. Brush rim of dough with beaten egg. Chill pie shell until firm, about 30 minutes.
  • Line chilled pie shell with a round of parchment paper, leaving a 1-inch overhang. Fill with pie weights or dried beans. Bake until edges of crust just turn golden, 25 to 30 minutes. Remove pie weights and parchment. Return crust to oven, and continue baking until golden all over, 20 to 25 minutes more. Place pie shell on a wire rack to cool completely.
  • Prepare an ice bath; set aside. In a bowl, lightly whisk egg yolks; set aside. In a saucepan, whisk together milk, granulated sugar, cornstarch, and salt. Bring to a simmer (do not boil), and cook, whisking constantly, 3 to 4 minutes.
  • Whisk a quarter of hot-milk mixture into egg yolks; whisk in remaining milk mixture. Strain into a clean saucepan, and cook over medium-high heat, whisking constantly, until custard is thick and bubbles appear in center, 2 to 3 minutes. Transfer to a medium bowl, and cover with plastic wrap, pressing it directly onto surface to prevent a skin from forming. Set in ice bath until completely chilled, 30 to 35 minutes. (Filling can be kept in refrigerator, covered with plastic wrap, up to 1 day.)
  • Cut 3 or 4 bananas into 1/4-inch slices, slightly on the bias. Beginning at the edge of the piecrust, arrange the slices in slightly overlapping rows. Cover with custard, using an offset spatula to smooth it into an even layer. In the bowl of an electric mixer fitted with the whisk attachment, combine cream and confectioners' sugar; beat until soft peaks form. Using a small offset spatula, spread the whipped cream on top of the custard. Refrigerate pie, loosely covered with plastic wrap, for at least 1 hour or up to 2 days.
  • Just before serving, cut 3 or 4 bananas into 1/4-inch slices, slightly on the bias. Beginning at the edge of the piecrust, arrange the slices in slightly overlapping rows on top of the whipped cream.

FANTASTIC BANANA CREAM PIE WITH BANANA GRAHAM CRUST

Fantastic Banana Cream Pie With Banana Graham Crust image

To save some time the crust may be prepared and baked 24 hours in advance. It is important to leave the finished pie chill for a minimum of 8 hours or overnight, if you make the mistake of cutting into it any earlier the custard mixture might fall apart --- this pie is delicious!

DULCE DE LECHE BANANA CREAM PIE

Dulce de Leche Banana Cream Pie image

I created this decadent but not-too-sweet banana cream pie for a holiday family potluck. It has a delicious almond flour crust that lends a wonderful nutty taste without the stress of baking a traditional pie crust. It got rave reviews from some of the best cooks I know! Serve with coffee or black tea.

Time 6h25m

Yield 12

Number Of Ingredients 19

1 (14 ounce) can sweetened condensed milk
1 ½ cups blanched almond flour
¼ teaspoon sea salt
¼ teaspoon baking soda
¼ cup melted butter
1 tablespoon agave nectar
1 teaspoon vanilla extract
3 cups whole milk
4 egg yolks
⅔ cup white sugar
¼ cup cornstarch
½ teaspoon sea salt
1 vanilla bean, halved lengthwise
2 ripe bananas, or more to taste, sliced
1 teaspoon unflavored gelatin
¼ cup cold water
1 cup heavy cream
1 tablespoon superfine sugar
½ teaspoon vanilla extract

Steps:

  • Place the unopened can of sweetened condensed milk in a large pan. Cover with water. Simmer over medium-high heat for 3 hours, adding more water as needed to keep the can covered at all times. Remove can from the hot water using tongs and let cool completely.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine almond flour, salt, and baking soda in a large bowl. Whisk melted butter, agave nectar, and vanilla extract together in a small bowl. Stir into the almond flour mixture until thoroughly combined. Press into a deep-dish pie pan.
  • Bake in the preheated oven until golden brown, 12 to 15 minutes. Let cool completely.
  • Meanwhile, whisk milk and egg yolks together in a bowl. Combine sugar, cornstarch, and salt in a large saucepan. Pour in milk mixture and stir until thoroughly combined. Add vanilla bean halves to the pan. Cook over medium heat, stirring constantly, until custard is thick and glossy, about 10 minutes. Remove from heat. Discard vanilla bean. Cool the custard for 30 minutes.
  • Open the can of cooked sweetened condensed milk and pour 1/2 over the pie crust. Spread evenly. Cover evenly with sliced bananas. Pour cooled custard over the bananas. Refrigerate pie for 2 hours. Place a bowl and beaters in the refrigerator for the icing.
  • Make icing before serving the pie. Sprinkle gelatin over cold water in a microwave-safe bowl; let soften for 5 minutes. Dissolve gelatin in the microwave for 3 minutes, stirring after every minute. Let cool until still liquid but no longer warm, about 10 minutes.
  • Pour heavy cream into the chilled bowl. Beat at high speed until beaters leave clear trails. Slowly add sugar and vanilla extract. Continue beating, pouring in gelatin in a steady stream, until stiff peaks form. Spoon over the pie. Serve immediately or refrigerate.

BANANA CREAM PIE IN ALMOND CRUST

Banana Cream Pie in Almond Crust image

This is my adaptation of a recipe from Sarabeth Levine, of Sarabeth's. If you've never made a 'from-scratch' cream pie, it's not difficult at all, and so worth it for great flavour. Make sure you make the almond crust - like a yummy cookie!

Provided by evelynathens

Categories     Pie

Time 1h25m

Yield 8 serving(s)

Number Of Ingredients 18

6 tablespoons butter, room temperature
1/4 cup sugar
1 small egg, beaten to blend
1 cup flour
1 cup finely chopped toasted almond
1/8 teaspoon baking powder
1/8 teaspoon salt
2 tablespoons water
1 1/2 teaspoons unflavored gelatin
1 1/4 cups milk (do NOT use low-fat)
1 vanilla beans, split lengthwise or 2 teaspoons vanilla extract
3 large egg yolks
1/3 cup sugar
1 1/2 tablespoons cornstarch
1 3/4 cups chilled whipping cream
1/4 cup confectioners' sugar
1/2 teaspoon vanilla extract
4 ripe bananas, peeled, thinly sliced

Steps:

  • For crust: Cream butter and sugar in processor until smooth and fluffy; add egg and blend until smooth; add flour, 2/3s cup of almonds (retaining 1/3 cup for topping), baking powder and salt and process just until combined; gather dough into ball; flatten into disk.
  • Wrap in plastic and refrigerate 1 hour.
  • Press dough into 9-inch diameter glass pie dish, trimming excess even with edge of dish; crimp edge decoratively; refrigerate 1 hour.
  • Preheat oven to 350°F; line crust with foil; fill with dried beans or pie weights; bake 12 minutes; remove beans and foil and bake until crust is set and edges are golden-brown, about 20 minutes; transfer to rack and cool.
  • For filling: Pour 2 tbs water into small bowl; sprinkle gelatin over; let stand 10 minutes to soften; pour milk into medium saucepan; scrape seeds from vanilla bean into milk; add bean; bring to simmer; whisk yolks, 1/3 cup sugar and cornstarch in medium bowl until thick; gradually whisk in hot milk; return mixture to same saucepan and cook over medium heat until mixture just begins to boil and thicken, whisking constantly, about 3 minutes; add softened gelatin and stir to dissolve; press plastic wrap directly onto surface of pastry cream and chill until cool, about 30 minutes.
  • Beat cream, confectioners' sugar and 1/2 tsp vanilla extract in large bowl to stiff peaks; carefully fold 1 ½ cups whipped cream into pastry cream; fold in bananas; spoon mixture into pie crust; spoon remaining whipped cream into pastry bag fitted with medium star tip; pipe whipped cream over filling, covering completely; chill until set, at least 3 hours and up to 6 hours; just before serving, sprinkle with remaining 1/3 cup of toasted almonds.
  • Note: Because of the bananas, this pie is best eaten the day of making as they do turn brown as time passes - the flavour's still great, though.

Time 1h35m

Yield 6 serving(s)

Number Of Ingredients 14

2 1/4 cups flour, sifted
1/2 teaspoon salt
1/3 cup very cold butter, in pieces
1 cup ground almonds
1/3 cup sugar
1/3 cup cold water
1/3 cup flour
1/2 teaspoon salt
1/3 cup softened butter
1/3 cup sugar
1/2 cup ground almonds
1 1/2 cups milk
2 egg yolks
1/2 cup sliced almonds

Steps:

  • Prepare the Crust:.

  • Butter a 20.5 cm (8 in.) tart pan with a removable bottom.
