CHOCOLATE BANANA CREAM PIE
My husband loves banana cream pie, and I like chocolate, so I combined the two. It's our favorite dessert, which means I get a lot of practice making it!

- In a saucepan, combine the sugar, cornstarch and salt. Gradually add milk and cream until smooth. Cook and stir over medium-high heat until thickened and bubbly, about 2 minutes. Add a small amount to egg yolks; mix well. Return all to the pan. Bring to a gentle boil; cook for 2 minutes, stirring constantly. Remove from the heat; stir in butter and vanilla. , Pour half into the pastry shell; cover and refrigerate. Add chocolate to remaining custard; mix well. Cover and refrigerate for 1 hour. Do not stir. , Arrange bananas over filling. Carefully spoon chocolate custard over all. Refrigerate for at least 2 hours. Garnish with whipped cream and chocolate shavings if desired.

- Pour remainder of filling on the sliced bananas.

Steps:
- Combine flour, butter and pecans. Press into the bottom and up the sides of a greased 9 inch pie plate.
- Bake at 350 degrees Fahrenheit for 25 minutes. Cool.
- Beat cream cheese and sugar together. Fold in 1 cup Cool Whip. Spread over crust.
- Slice bananas and arrange on top of cream cheese.
- Whisk pudding mix and milk.
- Mix in remaining Cool Whip.
- Spread on top of bananas.

- In a large skillet, saute coconut in butter until golden. Reserve 2 tablespoons for garnish. Press remaining toasted coconut onto the bottom and up the sides of a greased 9-in. pie plate. - Line the baked and cooled pie shell with a layer of chocolate pudding, half of the prepared amount. Add a layer of bananas. CHOCOLATE PEANUT BUTTER BANANA CREAM PIE

- Preheat the oven to 350 degrees F. Butter a deep 9 by 2-inch pie plate.
- Drizzle the crushed vanilla wafers with the melted butter and stir until blended. Press on the bottom and up the sides of the pie plate. Pop in the oven and bake until lightly browned, 20 to 25 minutes. Cool on a wire rack for about 30 minutes.
- Toss the banana slices with the orange juice, making sure all the slices get coated. (This helps keep the bananas from browning.) Place the slices on a paper towel-lined plate and pat any excess juices dry.
- Arrange half the banana slices in a single layer over the cooled crust. Cover completely with the Chocolate Pudding, spreading it with an offset spatula or butter knife. Top with the rest of the bananas. Sprinkle the peanut brittle crumbs over the bananas. Place dollops of the Peanut Butter Cream on top, spreading it out evenly. Chill the pie in the refrigerator for at least 3 hours.
- Whip the cream until stiff peaks are just about to form. Whip in the almond extract and sugar until stiff peaks form.
- Take the pie out of the refrigerator. Place dollops of the whipped cream on top and spread it out evenly. Scatter pieces of peanut brittle on top and serve.
- Whisk the sugar, cocoa powder and flour in a bowl until there are no lumps. Crack the eggs into the bowl, add the yolks and whisk into a paste. Slowly whisk in 1 cup milk until it is fully incorporated, and then whisk in the remaining 1 cup milk. Put the milk mixture into a saucepan and put over medium heat. Cook, whisking constantly, until it starts to look like pudding, 10 to 15 minutes. It will begin to bubble and it will hold soft peaks when you lift the whisk out. Take off the heat and cool to room temperature.
- Beat the cream cheese and confectioners'sugar with an electric mixer until completely smooth. Add the vanilla and peanut butter, beating until fully incorporated. In a separate bowl, beat the heavy cream until stiff peaks form. Working in batches, taking care not to deflate the whipped cream, fold a large spoonful of whipped cream into the peanut butter mixture. Fold in the remaining cream in 2 additions.

- For the crust: Adjust an oven rack to the middle position and preheat the oven to 325 degrees F. Spread the coconut flakes on a baking sheet and bake until it begins to turn golden, about 10 minutes. Remove from the heat and pour a third of the custard over the coconut crust. Arrange the banana slices over the custard in an even layer and top with the remaining custard. Chill for 2 hours or up to overnight.
- For the topping: Beat the heavy cream with an electric mixer until it just starts to thicken. Beat in the confectioners' sugar and continue beating until stiff peaks form, then spoon onto the pie to cover the custard. Serve immediately or chill for up to 2 hours.

- Combine chocolate, 1 tablespoon milk, and butter or margarine in a medium, microwave safe bowl. Microwave on high for 1 to 1 1/2 minutes, stirring every 30 seconds. Stir until chocolate is completely melted. Spread evenly in pie crust.

- For the crust: Chop pecans very fine,preferably in a food processor fitted with a metal blade.
- Place in bowl with other crust ingredients and mix until well blended.
- Divide in half and press into the bottom of 2 pie pans.
- Chill 30 minutes.
- Bake the pie crusts for 25 minutes at 350 degrees.
- Cool completely.
- For chocolate layer: Melt chocolate with butter and corn syrup in the top of a double boiler set over hot,not boiling water.
- Stir frequently.
- Remove from heat and cool,then stir in vanilla.
- Divide between cooked pie crusts and spread evenly.
- For Filling: Heat milk in a medium size saucepan over medium heat to scald.
- Beat the egg yolks and gradually add sugar.
- Then beat in flour.
- Gradually stir in hot milk.
- Transfer to medium saucepan and cook,stirring constantly over medium high heat (use a whisk). The mixture will lump as it begins to thicken.
- Bring the mixture to a boil and boil 1 minute, stirring constantly.
- Remove from the pan from heat and continue to stir until the mixture is smooth.
- Then, beat in butter and optional rum.
- Cool to room temperature.
- Peel the bananas, slice very thin and toss with lemon juice.
- Whip 1 cup of the cream until it is firm but not stiff.
- Mix about 1/4 of the cream into the cooled egg mixture to lighten it, then fold the remaining cream and bananas into egg mixture.
- Fill the pastry shells with banana cream and smooth to even.
- Beat remaining cream until stiff.
- Spoon around edge of the pies and sprinkle with chopped pecans, if desired.

WHITE CHOCOLATE BANANA CREAM PIE

- To make the sugar dough: Combine the butter and sugar in a food processor until just blended (or cut the ingredients together with a pastry blender).
- Add the egg pulsing or tossing to combine.
- Add the flour and mix until it is just incorporated, no longer.
- Gather the dough into a ball, flatten it into a disk, and wrap in plastic wrap or wax paper and chill for at least 30 minutes.
- Preheat the oven to 350°F, place the oven rack in the lower third of the oven.
- Roll out the dough on a floured surface until it is about 1/8 inch thick.
- Gently fit it, without stretching, into a buttered 10-inch Tart pan (preferably with a removable bottom and fluted sides).
- If you do not have a tart pan, you can use 10 inch or deep 9 1/2 inch pie pan.
- Trim off the excess dough, leaving a 3/4 inch overhang.
- Tuck in the overhanging dough, pressing the edges of the crust against the sides of the pan and forming a high, fluted border.
- Line the dough with a sheet of buttered foil (buttered side down) and weigh down with weights or beans.
- Bake the shell until the sides are set, about 12 minutes.
- Carefully remove the weights and foil and gently prick dough all over with a fork.
- Continue to bake until pale gold and baked through, about 5 minutes.
- Cool the pie shell completely on a wire rack.
- Making the White Pastry Cream: Bring the milk and vanilla bean to a boil.
- Meanwhile, whisk the egg yolks and sugar in a bowl until pale and light, about 1 1/2 minutes.
- Whisk in the cornstarch until smooth.
- Remove the saucepan from the heat, and whisk 1/4 cup of the hot milk into the egg yolk mixture.
- Repeat once or twice.
- Scrape the warmed egg yolk mixture into the saucepan with the remaining milk and return to a boil, whisking the entire time, boil for one minute.
- Remove the pastry cream from the heat, and whisk in the butter and white chocolate until smooth.
- Strain the custard into a clean bowl.
- Place a sheet of wax paper or plastic wrap directly on the surface of the cream and refrigerate until cooled.
- Shortly before serving time, whip the cream until nearly stiff.
- Thinly slice the bananas and toss with the lemon juice.
- Fold the bananas and the liquers into the chilled pastry cream and gently fold in the whipped cream until blended.
- Fill the cooled pie shell with the filling.
- Gently scatter the chocolate curls over the filling, covering the tart completely.
- Very lightly dust the chocolate curls with cocoa powder and serve.
- To make the chocolate curls: Melt the white chocolate in a double broiler until smooth.
- Pour the chocolate onto a marble slab or the back of a smooth baking sheet.
- With a spatula, spread out the chocolate into an even 1/8 thick layer.
- Set aside to cool to room temperature.
- Push a chef's knife blade away from you through a 4 inch width of chocolate, forming a loose curl.
- Continue to form chocolate curls with the remaining chocolate.
- With a large spatula, very gently transfer the curls to a baking sheet and refrigerate until needed.
BANANA COCOA CREAM PIE
This pie is a perfect blending of fresh bananas and rich chocolate. It's so easy to prepare and you'll enjoy serving it again and again.

- Prepare and bake piecrust according to directions on package and set aside to cool.
- Mix sugar, cornstarch, cocoa and salt in 2 quarts saucepan.
- Stir in water and cook stirring constantly over medium heat until bubbly.

- Spoon a little from the mixture into beaten egg yolks and return to into saucepan.
