SOPAPILLA CHEESECAKE RECIPE
Combine your two very favorite desserts to please the crowd-this sopapilla cheesecake made with puff pastry is a winner. Ole!

Steps:
- Preheat oven to 400 degrees then coat a 9" x 13" pan or 1/2 sheet pan with cooking spray. Lightly flour work surface and roll 1 sheet of puff pastry to fit the pan. Line the bottom of the pan with pastry and use a fork to poke holes in the pastry several times. This will allow steam to escape.
- Bake 15 minutes until light golden brown. While the pastry crust is baking, place cream cheese, sugar and vanilla in a large bowl or the bowl of a stand mixer fitted with paddle attachment. Beat until smooth and completely combined, scraping down sides of bowl as necessary.
- Remove pastry crust from oven then spread cream cheese mixture evenly over the top. After rolling the second sheet of dough to fit the pan, lay the sheet of puff pastry over cream cheese mixture, tucking top around the filling and under the bottom crust.
- Brush melted butter over top sheet of puff pastry. In a small bowl, mix ⅓ cup granulated sugar with cinnamon then sprinkle over top. Bake for 25-27 minutes until pastry is puffed up and the top is crispy. Allow bars to cool completely, then refrigerate or cut into squares, drizzle with honey then dig in!

UPSIDE-DOWN BANANA TART RECIPE BY TASTY

- Preheat the oven to 375˚F (190˚C).
- Using an 8-inch (20-cm) round cake pan, cut a circle out from the puff pastry. Using a fork, poke holes all over the pastry to provide ventilation. Set aside.
- Cut the tops and bottoms off of the bananas, then halve 2 of the bananas crosswise and set aside.
- In a large saucepan over medium heat, melt the butter, then add the brown sugar and cook until fully incorporated and the sauce appears amber in color, about 5 minutes.
- Add the vanilla and cinnamon. Stir until combined.
- Add the bananas to the pan and cook until softened, about 2 minutes.
- Turn the bananas to fully coat them with the caramel, then remove from the pan. Reserve the caramel.
- Grease the cake pan. Arrange the bananas on the bottom of the pan. Pour over the caramel sauce.
- Cover the bananas with the circle of puff pastry and ensure the edges are tucked into the pan.
- Bake for 30 minutes, or until the pastry is puffed and golden.
- Let cool at room temperature for at least 30 minutes before inverting onto a serving plate.
- Slice and serve with vanilla ice cream.

BANANA CHEESECAKE
Steps:
- Gather the ingredients. Preheat the oven to 350 F.
- In a large bowl, combine the crushed graham crackers, melted butter , and granulated sugar.
- Pat the crust mixture into the bottom and halfway up the sides of a 10-inch springform pan . To prevent leaks, line the outside of the pan with aluminum foil or place the springform pan on a rimmed baking sheet.
- Make the filling. In a large bowl, beat the cream cheese, sugar, sour cream, eggs, mashed bananas, and lemon juice until smooth.
- Pour the mixture into the prepared pan and bake for 1 hour, or until the cheesecake is light brown on top.
- Cool completely at room temperature. Wrap in plastic wrap and chill for at least 12 hours before serving.
- Garnish individual servings with whipped cream , fresh banana slices, and a dusting of ground cinnamon. Serve and enjoy.

CHEESECAKE FACTORY® BANANA CHEESECAKE WITH HOMEMADE WHIPPED CREAM
My family and I went to the Cheesecake Factory® in Nashville and we got the best cheesecake I had ever had. I came home and was determined to figure the recipe out. I tried it out one weekend and it tasted almost identical of the original. Garnish with more fresh banana slices.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Place cookies in a food processor; pulse until finely crushed. Add margarine; pulse until well blended. Press the crumb mixture into the bottom of a 10-inch springform pan. Refrigerate crust until ready to use.
- Beat cream cheese in a large bowl with electric mixer at medium speed until creamy. Add 2/3 cup sugar and cornstarch; beat until blended. Add eggs, 1 at a time, beating well after each addition. Beat in bananas, 1/2 cup cream, and 1 tablespoon vanilla extract until well combined. Pour cream cheese mixture into the crust. Lay the pan on a baking sheet.
- Bake in the preheated oven for 15 minutes. Reduce oven temperature to 200 degrees F (95 degrees C); continue baking until center is almost set, about 1 hour 15 minutes.
- Loosen edges of cheesecake from the pan. Refrigerate, uncovered, until completely chilled, 6 hours to overnight.
- Beat 2 cups cream in a chilled glass or metal bowl with an electric mixer until frothy. Add 1/4 cup sugar and 1 tablespoon vanilla extract gradually, continuing to beat until soft peaks form. Top cheesecake with whipped cream.

- In a small bowl, combine cracker crumbs and sugar; stir in butter. Set aside 1/2 cup for topping. - Combine the first five ingredients; stir in butter. Press onto the bottom of a greased 9-in. springform pan; place on a baking sheet. Bake at 350° for 10 minutes or until lightly browned. BANANA PURSE IN PUFF PASTRY
This is a great, fast, easy and kid-friendly dessert or snack. DS just loved this and couldn't get enough. I originally saw this on FoodTV on the Semi-Homemade Cooking show. I've also made these with the puff pastry shells and it works just fine.

Steps:
- Preheat oven to 400°F with oven rack in center position.
- Combine bananas with syrup, mashing the bananas slightly.
- Lay flat 1 sheet of puff pastry and cut in 1/2 lengthwise.
- With rolling pin, roll out each 1/2 sheet into 15x5-inch rectangle.
- Cut each rectangle crosswise into thirds, forming 6 squares total.
- Distribute banana mixture onto center of each square, topping with banana slices, as desired.
- Fold corners of pastry into the center and pinch ends together, twisting to seal.
- Repeat with remaining sheet of puff pastry and remaining banana mixture.
- Arrange pastries on cookie sheet.
- Brush pastries with milk and sprinkle with sugar and cinnamon.
- Bake for 15 minutes or until golden.
- Serve warm.
BAKED BANANA CHEESECAKE

- Heat oven to 180C/160C fan/gas 4 and lightly oil a non-stick loose-based 22cm cake tin. Melt the butter in a pan and stir in the oatcakes, crackers, cocoa and the chopped peanuts until well coated. Press into the base of the tin to make a firm layer, then bake for 10 mins. Remove from the oven and turn up the heat to 240C/220C fan/gas 9.
- To make the topping, mash the bananas with the lemon juice in a large bowl, then beat in the ricotta, yogurt, eggs, vanilla and cornflour until everything is very well mixed. Pour onto the biscuit base and bake for 10 mins, then turn the oven right down to 110C/90C fan/gas 1/4 and cook for 25 mins more. Turn off the oven and leave the cheesecake inside to cool. When cold, chill for 3-4 hrs. (Cooling the cheesecake this way should prevent it from cracking.)
- To serve, remove the cheesecake from the tin and slide onto a plate. Whip the cream until it just holds its shape, then smooth over the top of the cheesecake, lightly dust with cocoa and scatter over the peanuts.
