BUTTERSCOTCH BANANA CAKE
This banana cake has sweet butterscotch inside and out. What can be so bad about bananas and butterscotch? Try it you might like it! I found this on verybastbaking.com & tweaked it a bit; I didn't allow for cooling time of 20 minutes.

Steps:
- Preheat oven to 375°F.
- Grease 10-cup Bundt pan or round tube pan.
- Microwave 1-1/3 cups butterscotch morsels in medium, uncovered, microwave-safe bowl on medium-high(70%) power for 1 minute.
- STIR.
- The morsels may retain some of their original shape.
- If necessary, microwave an additional 10 to 15 second intervals, stirring just until morsels are melted.
- Combine cake mix, eggs, bananas, vegetable oil, water and granulated sugar in large mixer bowl.
- Beat on low speed until moistened.
- Beat on high speed for 2 minutes.
- Stir 2 cups batter into melted morsels.
- Stir chocolate chips and chopped nuts into remaining batter.
- Alternately spoon batters into prepared baking pan.
- Bake 35-45 minutes or until wooden pick inserted in cake comes out clean.
- Cool in pan for 20 minutes; invert onto wire rack to cool completely.
- Place remaining morsels in small, heavy-duty plastic bag.
- Microwave on medium-high(70%) power for 30 seconds; knead.
- Microwave an additional 10-15 second intervals, kneading until smooth.
- Cut tiny corner from bag; squeeze to drizzle over cake.

- To begin making Banana Butterscotch Cake Recipe, put your oven on preheat at 180°C and grease your 8" or 9' baking pan. You can also use a parchment paper to line your baking pan.
- Sift together whole wheat flour, baking powder, baking soda, salt, and cinnamon powder. Keep aside.
- Next, in another bowl break in the eggs and add sugar to a bowl. Beat at high speed till mixture becomes pale and fluffy.
- Now, add oil and vanilla essence, and beat till everything is well incorporated.
- Next, add the mashed bananas to the above mixture and mix well.
- Now it's time to combine the wet and dry ingredients - add the sifted flour mixture and milk to the egg mixture and make a smooth batter.
- Coat the butterscotch chips in some flour and then gently fold them into the batter.
- Pour this prepared Banana Butterscotch Cake batter into the baking pan and bake for about 35 minutes at 180°C or until a toothpick inserted comes out clean.

MOLTEN BANANAS FOSTER CAKE

- For the cake: Preheat the oven to 350 degrees F. Spray a 9 1/2-by-3 1/2-inch bundt pan with nonstick cooking spray.
- Prepare the quick bread mix according to the package instructions. Pour the batter into the prepared bundt pan and bake until a toothpick inserted in the cake comes out clean, 50 minutes to 1 hour. Let cool.
- For the filling: Melt the butter in a large skillet over medium heat. Add the brown sugar, maple syrup, vanilla, cinnamon and salt and mix until dissolved into the butter. Remove the skillet from the heat (turn off the heat) and stir in the rum. Return the skillet to medium heat and bring the mixture to a simmer. Add the diced bananas and cook until softened just a little bit but not mushy, 1 to 2 minutes. Let cool until warm.
- For the glaze and garnish: Heat the cream in a medium pot over low heat just to a simmer. Remove from the heat, add the butterscotch chips and let sit until melted, 1 to 2 minutes. Add the butter and mix until well blended. Let cool completely so that it is thick but still pourable.
- Place the cake presentation-side up on a large round platter. Using a spoon, remove some of the cake from the hole in the center to make a slightly larger well. Fill the hole with the banana filling; the filling should come up to about 1/4 inch from the top surface of the cake. You should have some of the filling left over, which can be used to top the individual slices of cake or mixed into a milk shake. Starting in the center, gently pour the glaze over the filling, slowly moving in a concentric circle toward the outer part of the cake and allowing some of the glaze to pour down the sides of the cake. Garnish with the candied walnuts. Serve within 15 minutes of assembly. Slice and let the filling ooze out of the cake.

- Preheat the oven to 350 degrees F. Butter and lightly flour a 2-quart ramekin or souffle dish and tap out the excess flour. Put the ramekin on a baking sheet.
- Combine the flour, baking powder, baking soda, salt, cinnamon, allspice and ginger in a large bowl. Whisk the butter, granulated sugar, brown sugar, banana, sour cream, eggs and vanilla in a separate large bowl until smooth. Whisk the flour mixture into the banana mixture until just combined.

I've had this recipe for years...it's absolutely the best!!! No need for cream cheese or frosting...mmmmmm good! I keep butterscotch chips on hand just for this recipe. My boys love it when we have overripe bananas...they know what's coming!

- Mash the ripe bananas; set aside.
- Sift together the flour, baking powder, baking soda, cinnamon, nutmeg and salt; set aside.
- Combine mashed bananas, sugar, eggs and melted butter. Blend well.
- Alternately blend flour mixture and milk. Stir in nuts (if using) and butterscotch chips, but leaving a little behind to sprinkle on top.
