BALSAMIC GRILLED ZUCCHINI
Grilled zucchini is so tasty when you use fresh, firm, in-season zucchinis! The olive oil-balsamic marinade is superb.

Steps:
- Preheat grill, or a grill pan, over medium-high heat. I like to use my George Foreman Grill.
- Trim the zucchini edges and slice it crosswise into ½-inch-thick rounds.
- In a small bowl, whisk together the olive oil, balsamic vinegar, kosher salt, black pepper and garlic powder.
- Brush the zucchini rounds with the mixture, on both sides. Set aside any remaining marinade.
- Grill the zucchini slices until just tender, 3-4 minutes on each side. In my dual contact George Foreman grill, I grill 3 minutes on the first side, then 2 more minutes on the second side.
- Brush the grilled zucchini slices with the remaining marinade and serve.

- Preheat grill for medium-low heat and lightly oil the grate.
- Brush zucchini with olive oil. Sprinkle garlic powder, Italian seasoning, and salt over zucchini.
- Cook on preheated grill until beginning to brown, 3-4 minutes per side. Brush balsamic vinegar over the zucchini and continue cooking 1 minute more. Serve immediately.

- Heat olive oil and butter in a 12-inch non-stick skillet over medium-high heat. Add in zucchini and squash and saute 2 minutes.
- Add in tomatoes then evenly sprinkle in Italian seasoning, garlic powder, and season with salt and pepper to taste (about 3/4 tsp salt and 1/4 tsp pepper).
- Continue to saute, tossing occasionally, until squash is tender and tomatoes are beginning to burst, about 3 - 5 minutes longer.
- Sprinkle in half the parmesan and toss then sprinkle remaining parmesan over top. Serve warm.

- Halve zucchini crosswise; slice lengthwise into 1/4" pieces.
- Arrange zucchini and peppers on a 15 X 10 X 1 inch baking pan that has been lined with foil.
- Combine 1 tablespoons olive oil and 1/4 teaspoons salt.
- Brush onto vegetables.
- Bake, uncovered, at 325 degrees for 15 to 20 minutes until just tender.
- While vegetables are baking, combine 1/3 cup oil, vinegar and garlic in a blender until smooth.

- Make the balsamic glaze or reduction. In a saucepan, heat the balsamic vinegar and brown sugar. Bring to a boil over medium-high heat, then reduce heat to medium-low and let simmer for 20 minutes or so. Remove from heat and let cool for 10 minutes; the balsamic glaze will continue to thicken as it cools (see shortcut option in notes)
- Meanwhile, in a large pan or skillet, heat 2 tbsp extra virgin olive oil until shimmering but not smoking. Add zucchini rounds and season with salt, pepper and paprika. Saute over medium-high heat, tossing occasionally until zucchini rounds soften and gain some color on both sides (about 7 to 10 minutes)
- Using a slotted spoon, transfer sauteed zucchini to a serving platter. Drizzle with the prepared balsamic glaze. Sprinkle sesame seeds and dried mint flakes on top. Enjoy warm or at room temperature.
