Italian Balsamic Tomatoes image

Classic Italian balsamic tomatoes made with the last of summer's heirlooms and red onions glazed with an aged balsamic reduction and a touch of fragrant basil.

4 medium size heirloom tomatoes
1/4 red onion or 1 shallot thinly sliced
1/4 cup aged balsamic vinegar
1-2 tbsp extra virgin olive oil
1 tbsp brown sugar
10 basil leaves
sea salt & black pepper to taste

Steps:

  • Preheat a skillet over medium flame. Add a splash of water (or a light drizzle of olive oil and sautee the onion with the brown sugar and a pinch of sea salt until the onions start to soften. A couple of minutes should be enough. Add the balsamic vinegar and simmer until reduced by half.
  • Slice the tomatoes into bite size wedges and place them on a serving platter. Pour the onion balsamic vinegar reduction over the top. Drizzle with the olive oil and give it a gentle toss to coat. Adjust seasonings to taste with sea salt and black pepper, i used some coarse volcanic black salt but any sea salt will do.
  • Sprinkle with the fresh basil leaves and serve.

4 ounces sun-dried tomatoes
2 tablespoons chopped fresh basil
2 tablespoons chopped fresh parsley
1 tablespoon chopped garlic
¼ cup chopped pine nuts
3 tablespoons chopped onion
¼ cup balsamic vinegar
1 tablespoon tomato paste
⅓ cup crushed tomatoes
¼ cup red wine
½ cup olive oil
½ cup grated Parmesan cheese
salt to taste

Steps:

  • Place sun-dried tomatoes in a bowl and cover with warm water for 5 minutes, or until tender.
  • In a food processor or blender combine sun-dried tomatoes, basil, parsley, garlic, pine nuts and onion; process until well blended. Add vinegar, tomato paste, crushed tomatoes and red wine, and process. Stir in olive oil and Parmesan cheese. Season with salt to taste.

This super tasty recipe came from a co-worker who's wealthy family always made sure to serve this at their fancy summer parties. It is a snap to put together, making it perfect for families who want a meal in a hurry, or the host of party who wants something spectacular that won't keep them in the kitchen instead of with their guests. Either way, you will get the same rave reviews that I have over the years.

1 lb any type pasta, your preference
1 bunch fresh basil
4 -6 garden fresh tomatoes, diced
1 tablespoon extra virgin olive oil
3 cloves garlic, chopped
1/4 cup good balsamic vinegar
1/4 cup grated parmesan cheese
1 teaspoon sea salt
1/2 teaspoon fresh ground pepper
1 teaspoon oregano

Steps:

  • Prep the tomatoes, garlic, etc-- before boiling the pasta.
  • Boil pasta while making the rest of the dish.
  • Saute garlic in olive oil.
  • Add tomatoes and cover, simmering for 7-10 minutes with the balsamic vinegar and seasonings until tomatoes fall apart.
  • Cut basil leaves and toss all ingredients together, including Parmesan cheese.
  • Serve additional Parmesan on the side, if desired.

I adopted this recipe and have not yet tried it. I also have a fear of yeast, but believe that Mean Chef's original pizza dough would work well for this recipe (recipe #62554). The original chef recommended another crust that was supposed to be so good your head would spin, but I trust Mean Chef's recipe. Original intro comments are: "This is a great combination. Try it! The tomato mixture is enough for two 12 inch pizzas. Adjust accordingly depending on how many pizzas you are interested in making."

1 pizza dough (I recommend Mean Chef's original Pizza Dough...but you may have to double this for 2 pizzas)
2 cups tomatoes, chopped fresh
1 tablespoon balsamic vinegar
1 teaspoon kosher salt
3 fresh garlic cloves, coarsely chopped
1/4 cup walnuts, coarsely chopped
2 cups mozzarella cheese, shredded
1/2 cup feta cheese
3 tablespoons olive oil

Steps:

  • Preheat your oven to 450 degrees.
  • Combine the tomato, balsamic vinegar, salt, garlic and walnuts and let them sit for about 20 to 30 minutes so the flavors can combine.
  • Press dough into a heavy well oiled 12 inch pan - I use a cast iron skillet
  • Sprinkle 1 cup of the mozzarella cheese on the dough, follow with half of the tomato mixture and 1/4 cup of the feta cheese.
  • Bake in very hot 450 oven until it is nicely browned.

24 ounces cherry, plum, or hot house tomatoes (or other variety of ripe tomato)
3 tablespoons extra-virgin olive oil
2 tablespoons balsamic vinegar
2 garlic cloves (minced)
1 teaspoon fresh oregano (or 1/2 teaspoon dried oregano , optional)
1 teaspoon fresh basil (chopped, or 1/2 teaspoon dried basil, optional)
Salt (to taste)
Black pepper (freshly ground, to taste)

Steps:

  • Gather the ingredients.
  • Slice the tomatoes in half and, if using plum or larger tomatoes, core them to remove the seeds . Chop the tomatoes into chunks (whatever size you desire). If using grape, cherry, or another small tomato, cut in half so they will absorb the flavors of the dressing. There's no need to seed them.
  • Place the chopped tomatoes in a large bowl. Add the olive oil, balsamic vinegar, garlic, and herbs (if using). Toss well.
  • Transfer to a serving dish and season with salt and pepper to taste. Or plate the salad individually for your guests and garnish with a sprig of fresh oregano or basil.
