APPLE-ROASTED PORK WITH CHERRY BALSAMIC GLAZE

Apple-Roasted Pork with Cherry Balsamic Glaze image

I added roasted apples, cherries and onions to turn ordinary pork into an impressive dish. There is a short time span between caramelized onions and burned ones, so pay close attention once they start cooking. -Josh Downey, McHenry, Illinois

Categories     Dinner

Time 1h20m

Yield 8 servings.

Number Of Ingredients 10

1 boneless pork loin roast (3 pounds)
1-1/2 teaspoons salt, divided
3/4 teaspoon pepper, divided
1/4 cup olive oil, divided
3 medium apples, sliced
1-1/2 cups unsweetened apple juice
6 medium onions, sliced (about 5 cups)
3 tablespoons balsamic vinegar
1-1/2 cups frozen pitted dark sweet cherries
1/2 cup cherry juice

Steps:

  • Preheat oven to 350°. Sprinkle roast with 1 teaspoon salt and 1/2 teaspoon pepper. In an ovenproof Dutch oven, heat 2 tablespoons oil over medium-high heat; brown roast on all sides. Add apples and apple juice to pan. Bake, uncovered, 50-60 minutes or until a thermometer inserted in pork reads 145°, basting occasionally with pan juices., Meanwhile, in a large skillet, heat remaining oil over medium heat. Add onions and the remaining salt and pepper; cook and stir 8-10 minutes or until softened. Reduce heat to medium-low. Cook 35-40 minutes or until deep golden brown, stirring occasionally. Keep warm., Remove roast and apples to a serving plate; tent with foil. Let roast stand 10 minutes before slicing., Skim fat from pork pan juices. Place over medium-high heat; add vinegar and cook 1 minute, stirring to loosen browned bits from pan. Stir in cherries and cherry juice. Bring to a boil; cook 10-15 minutes or until mixture is reduced to about 1 cup. Serve pork, apples and onions with cherry glaze.

PORK WITH BALSAMIC VINEGAR, CRUNCHY APPLES, AND APPLE PUREE

Pork with Balsamic Vinegar, Crunchy Apples, and Apple Puree image

Provided by Food Network

Categories     main-dish

Time 1h30m

Yield 6 servings

Number Of Ingredients 10

2 pounds Jonagold apples
6 ounces water
1 tablespoon sugar
1 teaspoon cinnamon
2 pounds pork loin, cut into 12 medallions
4 ounces flour
4 ounces oil
1 cup white wine
3 ounces balsamic vinegar
Salt and pepper

Steps:

  • Preheat oven to 200 degrees F.
  • To prepare the crunchy apple, wash and peel 1/2 of the apples, and cut them into slices. Place them on a baking sheet, and bake them for 4 hours so they dry out very slowly.
  • Peel the other 1/2 of the apples, and place them in a saucepot with the water. Add the sugar and cinnamon, and cook them slowly on low heat until they are soft, approximately 20 minutes. Once apples are cooked, place them in a blender, and blend until you have a puree. Set aside and keep warm.
  • To prepare the pork medallions, dredge each piece lightly in the flour. Heat a shallow pan with the oil, and sear each medallion for 2 to 3 minutes on each side. Once seared on both sides, add the white wine, and cook for 2 minutes to evaporate the alcohol. Add the vinegar to create a sauce.
  • To serve, plate two medallions per person on each plate. Add the apple puree, and fan out the crunchy apple chips. This dish may also be accompanied with Sauteed vegetables.

APPLE GLAZED PORK TENDERLOIN

Apple Glazed Pork Tenderloin image

Sweet, savory and easy.

Categories     Meat and Poultry Recipes     Pork     Pork Tenderloin Recipes

Time 55m

Yield 4

Number Of Ingredients 9

1 tablespoon olive oil
1 (1 1/4 pound) pork tenderloin
kosher salt and ground black pepper to taste
2 teaspoons chopped fresh parsley
½ sweet onion, diced
1 Gala apple, cut into chunks
½ cup Riesling wine
1 cup apple jelly
2 tablespoons balsamic vinegar

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a baking dish large enough to hold the tenderloin without folding it.
  • Heat the olive oil in a large skillet over medium-high heat, and brown the pork tenderloin on all sides. Remove the browned tenderloin to the prepared baking dish. Sprinkle all sides of the meat with salt, pepper, and parsley.
  • Cook and stir the onion and apple in the same skillet over medium heat until the onion becomes soft, about 5 minutes, and pour in the Riesling wine. Scrape all the browned flavor bits off the bottom of the skillet and stir to help dissolve them into the wine. Bring to a boil, and pour the onion, apple, and wine mixture over the tenderloin.
  • Mix together the apple jelly and balsamic vinegar in a bowl until the mixture is smooth and without lumps. Spread the jelly mixture all over the pork.
  • Bake loin in the preheated oven until an instant-read thermometer inserted into the center reads 145 degrees F (63 degrees C), 30 to 45 minutes. Allow the tenderloin to rest for 10 minutes before slicing, and serve each slice with a spoonful of the apple-onion mixture.

Yield Makes 4 to 6 servings

Number Of Ingredients 11

1 tablespoon minced garlic
1 tablespoon minced shallot
3 tablespoons olive oil
1/2 cup dry red wine
1/2 cup apple balsamic vinegar *, or 5 tablespoons cider vinegar mixed with 3 tablespoons balsamic vinegar
1 1/2 cups chicken stock, homemade or store-bought**, but not canned broth
1 cup veal stock, homemade or store-bought**
6 (1-inch-thick) rib pork chops (each about 1/2 pound)
1/2 Granny Smith apple
1/2 cup golden raisins
Accompaniment: blue cheese potato gratin

Steps:

  • Cook garlic and shallot in 1 tablespoon oil in a 3-quart heavy saucepan over low heat, stirring occasionally, until softened, 3 to 5 minutes. Add wine and vinegar and boil until reduced to about 1/2 cup, 8 to 10 minutes. Add chicken and veal stocks and boil until reduced to about 1 1/3 cups, 15 to 20 minutes.
  • Preheat oven to 400°F.
  • Heat remaining 2 tablespoons oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking. While oil is heating, pat pork chops dry and season with salt and pepper. Roast in middle of oven until an instant-read thermometer inserted horizontally into center of chops (do not touch bone) registers 155°F, 8 to 12 minutes.
  • While pork is roasting, peel apple and cut into 1/3-inch dice. Pour off all but 1 tablespoon fat from skillet, then cook apple and raisins over moderate heat, stirring occasionally, until apple is golden brown and caramelized but not falling apart, 2 to 3 minutes. Add sauce and simmer, stirring, 1 minute. Season with salt and pepper.
  • Spoon sauce over pork chops.
