BALSAMIC GLAZED TUNA STEAKS

Balsamic Glazed Tuna Steaks image

My brother is a deep-sea fisherman, whenever he gets the chance and brings home hundreds of pounds of Tuna! This is our absolute favorite way to fix this delicacy! I make the sauce way ahead of fishing season and store in the freezer. Even the kids give it two thumbs up! A fancy way to entertain guests and make it seem like you slaved all day. Give thanks to Beulah's in Port Aransas, Texas for this winner!

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Seafood Recipes

Number Of Ingredients 11

6 tablespoons white wine
1 cup plus 2 tablespoons balsamic vinegar
2 tablespoons sugar
1 teaspoon freshly ground black pepper
1 1/2 pounds ripe fresh tomatoes, cut into 1/2-inch dice
2 teaspoons olive oil
2 teaspoons salt
3/4 pound haricots verts or green beans, stem ends trimmed
1 teaspoon fresh lemon juice
6 6-ounce, 1-inch-thick, fresh tuna steaks
1/4 cup loosely packed basil leaves, very thinly sliced

Steps:

  • Combine wine, vinegar, sugar, and 1/4 teaspoon pepper in a small saucepan over medium-high heat. Simmer until slightly thickened and syrupy, 25 to 30 minutes. Remove from heat, and set aside.
  • Combine tomatoes, 1 teaspoon olive oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper in a medium bowl. Toss, and set aside
  • Heat grill to medium hot. Combine haricots verts, lemon juice, remaining teaspoon olive oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper in a bowl; toss well. Arrange beans on the grill and cook, turning, until just limp and lightly charred, 2 to 4 minutes. Transfer to a serving platter.
  • Sprinkle remaining teaspoon salt and 1/4 teaspoon pepper on all sides of tuna steaks. Brush wine-and-vinegar mixture on tops and sides of steaks and place, glazed side down, on grill. Grill, brushing with more glaze, until lightly charred, about 3 minutes per side for rare, 6 to 7 for well done. Transfer to serving platter with beans. SPICE-RUBBED SEARED TUNA STEAKS WITH BALSAMIC REDUCTION

Spice-Rubbed Seared Tuna Steaks With Balsamic Reduction image

These spice-rubbed seared ahi tuna steaks are easy to make and take a few minutes to cook. Add the balsamic reduction sauce, and you're good to go.

Provided by John Mitzewich

Categories     Entree     Dinner

Time 20m

Yield 4

Number Of Ingredients 13

Balsamic Reduction:
6 tablespoons/90 milliliters aged balsamic vinegar
1 medium lemon (juiced)
1 garlic clove (peeled and halved)
For the Tuna:
1 (1 1/2 pounds) center-cut ahi tuna fillet
1 1/2 teaspoons/7.5 milliliters kosher salt
1 teaspoon/5 milliliters coriander (ground)
1 teaspoon/5 milliliters paprika
1/4 teaspoon/1.25 milliliters cayenne pepper
1 1/2 teaspoons/7.5 milliliters black pepper (coarsely ground)
2 tablespoons/30 milliliters vegetable oil (for cooking)
Garnish: 4 lemon wedges

Steps:

  • Gather the ingredients.
  • Make the balsamic reduction : Place the balsamic vinegar, lemon juice, and garlic in a small saucepan over medium-low heat.
  • Simmer until the mixture reduces by half. Turn off the heat and reserve until needed. This sauce does not have to be hot for serving. The reduction will thicken slightly as it cools.
  • If your tuna fillet is not already sliced into servings, slice into 4 rectangular steaks of equal size. In a small bowl, combine the salt, coriander, paprika, and cayenne pepper. Lay the tuna steaks out on a plate and sprinkle the spice mixture evenly on all sides.
  • Evenly coat the tuna steaks with the freshly ground black pepper and gently press it in so that it adheres to the surface, being careful not to smash the flesh.
  • Place a thick-bottomed frying pan or cast-iron skillet over medium-high heat. Add the oil and swirl to coat the pan. When you see small wisps of smoke, add the tuna to the pan and sear the steaks for about 1 minute per side or until the desired doneness is reached.
  • Remove the tuna steaks and place them on a cutting board. For presentation, cut each steak diagonally into 4 to 5 slices and fan on a plate. Serve with a small amount of sauce drizzled alongside. Garnish with a lemon wedge and enjoy.

  • Prepare the potatoes and peppers and place in a large roasting tin or oven dish. They should be in 1 layer or they will steam, not roast. Drizzle with olive oil and twist over some salt and pepper. Toss the veg in the oil and then arrange in 1 layer. If necessary use 2 roasting tins/oven dishes rather than crowding 1 tin.
  • After 20 minutes remove the tray from the oven, and stir the potatoes and peppers, spread out again and put back in the oven to roast for a further 20 minutes (this ensures everything cooks evenly and nothing sticks).
