This is a favorite side dish to roasted turkey breast at our house. I hope that you enjoy them as well!

1 (16 ounce) bag frozen pearl onions, thawed
3 lbs green beans, fresh, cleaned and trimmed
2 tablespoons butter
1 tablespoon balsamic vinegar
1/4 teaspoon salt
1/8 teaspoon pepper
1/4 teaspoon thyme
salt and pepper, to taste
1/2 tablespoon balsamic vinegar
1 tablespoon extra virgin olive oil

Steps:

  • Melt butter in a large skillet.
  • Add thawed pearl onions and cook, stirring, until they brown.
  • Add balsamic vinegar, thyme, salt and black pepper. Cook, stirring until the onions are glazed.
  • Blanch the trimmed green beans in a large saucepan of boiling water until tender.
  • Drain and add to the skillet with the onions and toss to coat.
  • Add another splash of balsamic and season with salt and pepper.
  • Turn off the heat, finish the green beans and onions with a splash of Extra Virgin Olive Oil.

This makes a VERY fancy looking side dish in less than 20 minutes! I prefer to use the fresh veggies in the steam-able bags you can find in the produce section, cuts down on the cooking time. I originally found this recipe in Cooking Light. However, I have added butter, garlic, more balsamic vinegar and carrots, so I am not sure if it is extremely "light" anymore, but it sure is good.

1 (8 ounce) package baby carrots or 1 (8 ounce) package three medium carrots, peeled and sliced
2 (10 ounce) packages , fresh not frozen, steam-able green beans, ready to eat or 1 1/4 lbs fresh green beans, trimmed
1 1/2 tablespoons butter
6 ounces white onions or 6 ounces red pearl onions, halved lengthwise and peeled
1/4 cup chicken broth
4 tablespoons balsamic vinegar
1 teaspoon minced garlic
1 tablespoon sugar
salt & pepper

Steps:

  • Steam green beans in microwave according to directions (about 4 minutes) or if fresh, place beans into a large pot of boiling water; cook 3 minutes. Drain and rinse with cold water; set aside.
  • Steam carrots according to package directions, or if fresh, slice, boil and drain (same as above).
  • Heat 1 tablespoon butter in a large nonstick skillet over medium-high heat. Add onions and garlic; sauté 3 minutes or until lightly browned, stirring frequently.
  • Add broth, vinegar, and sugar; bring to a boil.
  • Simmer 3 minutes or until syrupy.
  • Add beans and carrots, remaining 1/2 tablespoon of butter, salt, and pepper; toss to coat.
  • Cook for 2 minutes or until thoroughly heated.

This makes a fantastic side dish to a prime-rib beef roast or a pork roast dinner, or to any beef or pork dish! This will serve about 6 people but can easily be doubled. Use a large package of frozen pearl onions for this recipe, and also fresh pearl onions can be used, just blanch in boiling water, cool then peel.

9 cups frozen pearl onions
2 tablespoons olive oil
1 cup balsamic vinegar
1/2 cup water
1 teaspoon sugar (optional or to taste)
salt and pepper
1 -2 tablespoon butter

Steps:

  • In a large skillet heat oil over medium-high heat, then saute the onions until lightly browned (about 5-6 minutes).
  • Add in balsamic vinegar and water; simmer stirring occasionally until the onions are tender (about 12-15 minutes).
  • Transfer the onions to a bowl using a slotted spoon (reserve the liquid).
  • Simmer the reserved liquid until thick and syrupy and reduced to about 1/2 cup.
  • Season the liquid with salt and pepper and a little sugar if desired.
  • Transfer the onions back to the skillet and coat with the liquid.
  • Add in the butter, stirring and heat slightly until the butter has melted.
  • Transfer to a bowl.
  • Delicious.

¼ cup extra-virgin olive oil
2 teaspoons sugar
Salt and freshly ground black pepper to taste
1 cup balsamic vinegar
2 garlic cloves, minced
2 tablespoons chopped fresh parsley

Steps:

  • Adjust oven rack to low position and heat oven to 425 degrees.
  • Toss onions with oil, sugar, salt and pepper in medium bowl. Transfer to a cookie sheet with rim in a single layer. Roast onions until golden brown, about 30 minutes, stirring at 20 minutes and again at 25 minutes, adding garlic at this point.
  • Meanwhile, bring vinegar to boil; simmer over medium-high heat, about 10 minutes, until reduced to 1/3 cup - it should be a thin syrup. Put onions into a bowl, add reduced vinegar and parsley; toss to coat. Serve hot, warm or at room temperature.

1 1/2 lbs white pearl onions, about 4 cups
1 tablespoon olive oil
1/2 cup balsamic vinegar
1/4 cup water
sugar
1 pinch salt

Steps:

  • In a saucepan of boiling water blanch onions for 3 minutes and drain.
  • Cool onions and peel.
  • In a heavy skillet, over medium high heat,saute onions in olive oil until lightly browned, about 5 minutes.
  • Add remaining ingredients and simmer, stirring occasionally until onions are tender, about 15 minutes.
  • Remove onions with slotted spoon, and keep warm.
  • Boil remaining liquid until reduced to a thick glaze, about 5 minutes.

1 pound fresh pearl onions
1 tablespoon olive oil
1 tablespoon butter, melted
1/4 cup balsamic vinegar

Steps:

  • In a Dutch oven, bring 6 cups water to a boil. Remove papery outer skin from garlic; separate into cloves. Boil garlic and onions for 3 minutes; drain and rinse in cold water. Cool. Peel garlic and onions; place in a 1-1/2-qt. baking dish coated with cooking spray. Add oil and butter and toss to coat., Combine the vinegar, honey, salt and pepper. Pour over onion mixture and stir to coat., Cover and bake at 350° for 30 minutes. Uncover and stir. Bake, uncovered, 25-30 minutes longer or until garlic and onions are tender and sauce is slightly thickened, stirring every 10 minutes.
