CHOKECHERRY JELLY

If you wish to make syrup, use twice as much juice to 1 package of pectin. Processing time not included in preparation time.

Number Of Ingredients 4

3 1/2 cups chokecherry juice (How to Make Chokecherry Juice)
1/2 cup fresh lemon juice
1 (1 3/4 ounce) package dry pectin (Ball brand preferred)
6 cups sugar

Steps:

  • Wash fruit and cover with water; simmer 15 minutes.
  • Strain juice.
  • Measure juice into 6- to 8-quart kettle.
  • Add pectin and stir.
  • Bring to boil; add sugar, stir, and bring to a rolling boil.
  • Boil exactly 2 minutes.
  • Skim and pour into jars.
  • Wipe rims and adjust lids.
  • Process in boiling water bath for five minutes; remove to a protected countertop and let cool completely undisturbed.

This recipes is from the Ball Blue Book. The only thing I did differently is to add lemon zest. It's really refreshing, because the lemon zest/juice keeps it from being overly sweet. This is one of my favorite jams that I make each year.

2 quarts strawberries
1 (1 3/4 ounce) package dry pectin
1/4 cup lemon juice
1 lemon, zest of, finely grated
7 cups sugar

Steps:

  • Wash strawberries; drain.
  • Remove Stems.
  • Crush strawberries on layer at a time. (I use a potato masher for this.).
  • Combine strawberries, powdered pectin, lemon juice, and lemon zest in a large saucepot.
  • Bring to a boil, stirring occasionally.
  • Add sugar, stirring until dissolved. Return to a rolling boil.
  • Boil hard 1 minute, stirring constantly.
  • Remove from heat, and skim foam if necessary.
  • Ladle into hot, sterilized jars, leaving 1/4 inch head space.
  • Adjust 2-piece caps. Process 10 minutes in a boiling water canner.

JALAPENO JELLY

From the Ball Blue Book of Preserving. A little different than other recipes as it uses only jalapeno peppers. Be sure to wear disposable or rubber gloves while cutting and seeding jalapenos. I did not add the optional food coloring and got 6 half-pints. Great over cream cheese or for use in recipes. Please be sure you are familiar with hot water bath canning procedures. Just make successive batches in assembly-line fashion; otherwise, they won't set. The amount of vinegar is correct:)

3/4 lb jalapeno pepper
2 cups cider vinegar, divided
6 cups sugar
2 (3 ounce) envelopes liquid pectin
green food coloring (optional)

Steps:

  • After removing stems and seeds from jalapenos, puree in food processor with 1 cup cider vinegar.
  • Combine puree, additional 1 cup cider vinegar, and sugar in large saucepot. Bring to a boil; boil 10 minutes, stirring constantly.
  • Stir in liquid pectin. Return to a rolling boil and boil hard 1 minute, stirring constantly. Remove from heat.
  • Skim foam, if necessary, and stir in a few drops of food coloring, if desired.
  • Ladle hot jelly into hot jars, leaving 1/4 inch headspace. Adjust 2 piece caps. Process 10 minutes in a boiling water canner.

BALL BLUE BOOK PLUM JAM

6 cups plums, pitted and chopped
3/4 cup water
7 cups sugar
1 tablespoon lemon juice
1 (1 3/4 ounce) package dry pectin

Steps:

  • Never double canning recipe!
  • Combine plums, water, lemon juice, and pectin in a large sauce pot. Bring to a rolling boil over high heat, stirring constantly.
  • Add sugar; return to a rolling boil. Boil hard 1 minute, stirring constantly.
  • Pour hot into hot jars, leaving 1/4" head space. Adjust caps.
  • Process 10 minutes in boiling water bath.
  • Brandied Plum Jam: add 1 cup brandy to fruit mixture.
  • Plum Orange Spice Jam: add zest from 1 orange, 1/2 tsp cinnamon, and 1/2 tsp nutmeg to fruit mixture.

BLACKBERRY JELLY

This is the recipe I have been using for year. It comes from the Sure-jell pectin package. Here is how I do mine.

Yield 6-8 half pints

Number Of Ingredients 6

4 cups blackberries
4 cups water (or enough to cover berries)
3 3/4 cups juice
4 1/2 cups sugar
1 (1 3/4 ounce) box dry pectin
1/2 teaspoon butter (optional)

Steps:

  • FOR JUICE: Lightly mash berries and cook in water on top of stove for about 20 mins over medium/med high heat.
  • FOR JELLY: Strain berries through cheesecloth, wire mesh strainer or sieve. SAVE JUICE! Discard berries and seeds.
  • Measure sugar exactly. (do not reduce or use sugar substitute) Set aside.
  • Measure juice exactly. Place juice and pectin in a 6 to 8 quart sauce pot. Add butter now (if using) to reduce foaming.
  • Bring mixture to FULL ROLLING BOIL (a boil that does not stop bubbling when stirred) on high heat, STIRRING CONSTANTLY!
  • Stir in all of sugar. Return to rolling boil and boil exactly one minute, Stirring constantly.
  • Remove from heat and skim off any foam.
  • Quickly ladle into prepared jars, within 1/8 inch of top. Wipe jar rims and threads with damp cloth. Cover with two piece lids. Screw on tightly.
  • Process in a hot water bath for 5 mins or use the inversion method.
  • NOTE: All instructions are included with pectin.
  • Save any left over juice for a second batch! Can add up to 1/2 cup of water to juice if needed to make exact measurement.
  • Have fun and enjoy!
