SOUTHWESTERN WINTER SQUASH SOUP



Southwestern Winter Squash Soup image

2 medium kabocha or butternut squash (about 4 pounds)
2 tablespoons plus 1 teaspoon extra-virgin olive oil
Kosher salt and freshly ground pepper
2 white corn tortillas, torn into large pieces
4 carrots, chopped
1 red onion, chopped
1 red Fresno or jalapeno chile pepper, chopped (remove seeds for less heat)
2 cloves garlic, finely chopped
1 teaspoon ground cumin
6 cups low-sodium chicken or vegetable broth
Assorted toppings:
Pomegranate seeds
Sliced scallions
Sour cream mixed with lime zest and juice
Toasted pepitas
Cooked bacon

Steps:

  • Preheat the oven to 425 degrees F. Cut the squash in half lengthwise and scoop out the seeds. Rub all over with 1 teaspoon olive oil and season the cut sides with salt and pepper. Arrange cut-side down on a baking sheet and roast until very tender, about 30 minutes (a fork should easily pierce the skin). Set aside until cool enough to handle, then scoop out the squash into a bowl and discard the skin.
  • Heat the remaining 2 tablespoons olive oil in a large pot or Dutch oven over medium-high heat. Add the tortilla pieces and cook, stirring occasionally, until browned, 3 to 4 minutes. Add the carrots, red onion, chile, garlic, cumin, 1 teaspoon salt and a few grinds of pepper. Cook, stirring, until the onion has softened, about 4 minutes.
  • Add the roasted squash, broth and 3 cups water. Bring to a boil, reduce the heat to medium low and simmer until the carrots are very tender, about 25 minutes. Remove from the heat and let cool slightly.
  • Working in batches, transfer the soup to a blender and puree until smooth; return to the pot. (Or puree the soup in the pot with an immersion blender.) Add up to 1 cup water if the soup is too thick and reheat if needed. Season with salt and pepper. Serve with toppings.

I developed this recipe for my family. It was such a hit, I decided to share it! The Cinnamon Croutons put the "wow" in this recipe!

2 lbs winter squash, i use acorn & butternut together when i make this recipe (butternut, acorn, pumpkin, etc.)
1 cup onion, diced
1 cup leek, diced
1 1/2 cups carrots, diced
1 1/2 tablespoons butter
2 quarts vegetable stock
1/4 teaspoon allspice, ground
1 teaspoon ginger, fresh grated
salt (to taste)
white pepper (to taste)
apple, -firm and tart (as desired)
cinnamon crouton (as desired)

Steps:

  • Cut squash in half, remove seeds and place squash face down on an oiled baking sheet. Bake about 30-45 minutes (depending upon size) in a preheated 350 degree F oven until soft.
  • While squash is baking, heat the butter in a heavy soup pot over medium low heat. Add onions, leeks, and carrots. Sweat until soft. Do not brown. Add vegetable stock to soup pot and bring to a gentle simmer.
  • When squash is done, scoop cooked squash from the. Add squash to the soup pot. Continue to simmer about 30 minutes, or until vegetables are thoroughly cooked and softened.
  • Puree soup mixture in a blender or food processor. This may require several batches. Strain soup through a medium mesh strainer and discard the solids.
  • Season with allspice, ginger, salt and pepper. Portion soup into individual bowls. Slice apples very thin and arrange attractively on top of soup. Garnish with Cinnamon Croutons.
  • **Cinnamon Croutons - take day old bread & cube. Place bread in a large zip style bag. Add some cinnamon, sugar, nutmeg, and melted butter. Shake well until all bread is coated. Bake in pre-heated 400 degree over till golden. You may have to stir them once during cooking.

2 lbs butternut squash (acorn, or other winter squashes, etc)
1 tablespoon olive oil
2 tablespoons butter
1 onion, diced
2 cloves garlic, mashed to a paste
1/2 cup dry white wine
1/2 teaspoon thyme
1/2 tablespoon black peppercorns
2 bay leaves
1 tablespoon fresh parsley
4 cups chicken stock
salt & fresh ground pepper

Steps:

  • Heat oven to 400.
  • Cut the squash in half, seed it, and quarter it.
  • Brush well with olive oil and season liberally with salt and pepper.
  • Place cut side up in a baking dish and roast until squash is soft and browned at the edges, 45 minutes-1 hour.
  • When squash is tender throughout, scoop flesh from skin and set aside.
  • These steps can be done ahead of time and frozen for later use.
  • Cook onion in butter over medium low heat until soft.
  • Onion should be sweated, not cooked till brown or caramelized.
  • Add the garlic and cook for one minute.
  • Add the wine and cook, stirring frequently, until reduced to nearly dry (about ten minutes).
  • Combine the herbs and spices (thyme through fresh parsley) in a cheesecloth bundle/bouquet garni, add it to the pot.
  • Add the squash pulp to the pot.
  • Gradually add the chicken stock to desired thickness (you may not need all 4 cups), and bring to a boil.
  • Reduce heat to simmer, season with salt and pepper to taste.
  • Simmer soup for 20 minutes.
  • Remove cheesecloth bundle/bouquet garni, and puree soup with hand blender or food processor until it is the desired consistency.
  • Serve hot.

2 (2 lb) acorn squash
2 (2 lb) butternut squash
1/2 cup butter
8 teaspoons dark brown sugar
3 carrots, peeled
1 large onion, thinly sliced
10 cups chicken stock
3/4 teaspoon ground mace
3/4 teaspoon ground ginger
1/8 teaspoon cayenne
salt
8 ounces creme fraiche
1 tablespoon chives, snipped

Steps:

  • Preheat oven to 350 degrees.
  • Cut squash in half, scoop out seeds.
  • Place squash in roasting pan, skin side down. In cavities place 1 T. butter and 1 t. sugar. Place carrots and onions around squash.
  • Pour 2 cups of stock in pan, cover and bake for 2 hours.
  • Remove and allow to cool. Scoop out pulp from squash and place in soup pot. Add carrots, onions and cooking juices.
  • Add remaining stock and mace, ginger, cayenne and salt to taste. Stir and bring to boil. Reduce heat and simmer 10 minutes.
  • Puree until smooth. Adjust seasonings.
  • Serve with garnish of creme fraiche and chives.

4 tablespoons (1/2 stick) unsalted butter
1 onion, chopped
1 medium tomato, cored, seeded and diced
2 garlic cloves, minced
2 jalapeno chiles, stemmed, seeded and chopped
1 1/2 pounds winter squash, such as West Indian pumpkin, peeled and cut into 1/2 inch cubes
3 cups stock or water
1 teaspoon coarse salt
2 cups whole milk
1/4 cup grated Manchego cheese

Steps:

  • Melt the butter in a large stockpot over moderate heat. Add the onion and saute until soft, about 5 minutes. Add the tomato, garlic, jalapeno and salt and cook 1 to 2 minutes longer. Add the squash and stock and simmer, covered, for about 20 minutes, or until the squash is falling apart and soup is thickened slightly. Puree soup with an immersion blender, or use a blender and return soup to a clean pan. Add the milk and heat gently. Stir in the cheese and adjust the seasonings.;

2 tablespoons unsalted butter
1 tablespoon good olive oil
2 cups chopped yellow onions (2 onions)
1 (15 - ounce) can pumpkin puree (not pumpkin pie filling)
1 1/2 pounds butternut squash, peeled and cut in chunks
3 cups homemade chicken stock or canned broth
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1 cup half - and - half
Creme fraiche, grated Gruyere, or croutons (see Note), for serving (optional)

Steps:

  • Heat the butter and oil in a heavy - bottomed stockpot, add the onions, and cook over medium - low heat for 10 minutes, or until translucent. Add the pumpkin puree, butternut squash, chicken stock, salt, and pepper. Cover and simmer over medium - low heat for about 20 minutes, until the butternut squash is very tender. Process the mixture through the medium blade of a food mill. Return to the pot, add the half - and - half, and heat slowly. If the soup needs more flavor, add another teaspoon of salt. Serve hot with garnishes, if desired.
  • Cook's Note: To serve with croutons, remove the crusts from 2 slices of white bread, cut them in 1/2-inch cubes, and saute them in 1 tablespoon of butter until browned. Season with salt and pepper.

2 celery ribs, chopped
1 medium onion, chopped
1 garlic clove, minced
3 tablespoons butter
3 tablespoons flour
3 cups chicken broth
2 cups mashed cooked butternut squash (I use 1 large butternut squash, but acorn or hubbard would work as well)
2 tablespoons fresh parsley, minced
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1/4 teaspoon dried savory
1/4 teaspoon dried rosemary, crushed
1/8 teaspoon pepper
1 cup half-and-half

Steps:

  • If you have a preferred way of cooking your squash, cook it and mash it and skip to step 6; if not, read on.
  • Cut the squash in half lengthwise and scoop out the seeds.
  • Place the squash flesh side down in a casserole dish filled with 1 inch of water.
  • Bake at 350 degrees until the squash is soft and the skin is blistered slightly (45 minutes to an hour).
  • Remove the skin and mash the squash - you need 2 cups for this recipe.
  • In a large saucepan, saute celery, onion, and garlic in butter until tender.
  • Stir in flour until blended.
  • Gradually add the broth and bring to a boil.
  • Cook and stir for 2 minutes or until thickened.
  • Reduce heat and stir in all remaining ingredients extept the half and half.
  • Simmer uncovered for 10 minutes or until heated through.
  • Use a blender or food processor to process the soup in batches until smooth.
  • Return to the pan and heat through.
  • Gradually stir in the half and half.
  • Cook 5 more minutes, stirring occasionally.

14 ounces apple-smoked bacon, chopped (1 full package)
1 tablespoon olive oil
1 large onion, chopped
2 minced garlic cloves
2 teaspoons ground cumin
1 tablespoon ground coriander
2 cups potatoes, diced
3 3/4 cups vegetable stock or 3 3/4 cups chicken stock
12 ounces frozen winter squash (optional)
2 teaspoons cornstarch
2 tablespoons sour cream
hot pepper sauce
salt and pepper
1 1/2 cups cheese, grated (optional)

Steps:

  • Peel the squash wasting as little flesh as possible. Remove seeds. Chop squash into large chunks.
  • Heat oil to medium-high in a large saucepan. Add the onions and garlic. Cook for 3 minutes or until soft.
  • Reduce heat to medium. Add the bacon and cook for 2-3 minutes. Reduce heat to low and stir in the spices. Cook for another minute.
  • Add the chopped squash, potatoes, and stock. Turn heat back to medium-high. If using the frozen squash as well, add it at this time. Bring to a boil. Reduce heat to low and simmer for 15 minutes or until squash and potatoes are tender.
  • Blend the cornstarch with 2 tablespoons of water and add to the soup. Add sour cream. Bring to a boil and simmer for another 3 minutes. Add hot-pepper, salt, and pepper to taste. Sprinkle individual soups with cheese just before serving.

2 pounds winter squash (like acorn or Hubbard), halved and seeded
2 tablespoons unsalted butter
1 medium onion, peeled and coarsely chopped
1 tablespoon chopped fresh sage or 1 teaspoon dried
Pinch ground allspice
1 small apple, peeled, cored and diced
4 cups chicken broth
1 tablespoon fresh lemon juice or to taste
Kosher salt to taste
1/4 teaspoon freshly grated black pepper
1/4 cup chopped walnuts, toasted

Steps:

  • Preheat oven to 375 degrees. Place squash on a baking sheet, cut side down. Bake until very tender, about 1 hour. Let cool slightly.
  • While squash is roasting, melt butter in a medium saucepan over medium heat. Add onion, sage and allspice. Reduce heat to low, cover and cook until onions are tender, about 10 minutes. Uncover. Stir in apple and broth. Bring to a simmer and cook until apple is tender, about 15 minutes.
  • Scoop out the squash pulp and add it to the pan. Simmer for 5 minutes. Let soup cool slightly. Working in 2 batches, puree the soup in a blender, holding the lid down firmly with a kitchen towel to prevent the steam from pushing it off. Strain through a fine-mesh sieve.
  • When ready to serve, heat soup over medium heat until it just reaches a simmer. Add lemon juice, salt and pepper. Ladle into hot soup bowls and garnish with walnuts.

COCONUT WINTER SQUASH SOUP



Coconut Winter Squash Soup image

This soup is like a dose of winter sunshine. I learned this recipe from my pal Kaley. Before watching her prepare this soup, I would have written it off as "too labor intensive". Nothing could be farther from the truth. There are many steps listed here, but each one is easy and quick. There is a bunch of wait time, though, so plan ahead. You'll need to start this an hour and a half before you want to eat.

1 butternut squash (acorn would work perfectly fine)
3 onions, diced
2 tablespoons olive oil
2 tablespoons brown sugar
1/8 teaspoon pepper
1/2 teaspoon curry (adjust for personal preference or use nutmeg)
6 small potatoes, diced
6 cups broth (chicken or vegetable)
1 (14 ounce) can coconut milk

Steps:

  • Turn oven to 350°F
  • Rinse the squash. Prick with a knife several times. Stick it in the oven for a hour and forget about it.
  • In a dutch oven, heat oil over medium heat. Add onions, sugar, pepper and curry. Reduce heat and cook for 30 minutes, stirring once or twice. The goal is to caramelize the onions.
  • Add the diced potatoes to the onion mixture and cover.
  • Remove the squash from the oven. Slice off each end. Cut into 2 halves and scoop the seedy pulp out. Turn onto the cut sides, then peel the rind from the squash. It should come away easily.
  • Chop the squash into 1 - 2" cubes. Add to the onion and potato mixture.
  • Add the broth and coconut milk. Cover and bring to a boil. Reduce heat and simmer for 15 to 20 minutes or until the potatoes are tender.
  • Turn heat off. Let stand for a couple of minutes to cool slightly. Process the soup through the blender in batches. (It takes 3 batches to get this recipe through my blender.) Have a large bowl ready to catch the blended soup.
