HALIBUT WITH A PINE NUT CRUST



Halibut with a Pine Nut Crust image

Recipe barely adapted from and with thanks to Kayln's Kitchen

Number Of Ingredients 7

4 white fish filets (about 6 ounces each)
6 tablespoons pine nuts (finely chopped)
4 tablespoons Parmesan cheese (finely grated)
2 large garlic cloves (minced)
2 teaspoons pesto (I've used both parsley and basil pestos)
3 tablespoons mayonnaise
lemon wedges (for serving)

Steps:

  • Let the fish fillets warm on the counter for at least half an hour prior to cooking them. You want them to be almost room temperature before placing them in the oven, this will help them cook through before the topping is too brown.
  • Preheat the oven to 400 degrees. Place the fish in a large shallow baking pan. Mix together the pine nuts, Parmesan, garlic, pesto and mayonnaise. Divide this mixture in half and then use a rubber scraper to spread the crust mixture over the top surface of each fillet. Pile it on so that all of the topping is used.
  • Bake the fish 10-20 minutes, until the fish is firm to the touch and the crust begins to very lightly brown. The thickness of your fish will determine the cooking time. Serve hot with lemon wedges. Enjoy!

Baked White Fish image

This is based on a recipe I got from a friend 30 years ago. It was called Greek Fish but it didn't seem particularly Greek to me. The original recipe called for Haddock or white fish - I usually use snapper or cod fillets. Hope you like it - this is the first recipe I have posted!

1 lb white fish fillet (3-4)
4 skinned sliced tomatoes (see Note 1)
1/2 teaspoon sugar
3 tablespoons chopped parsley
1/4 cup melted butter
2 tablespoons flour
1 tablespoon sweet paprika
1 teaspoon Old Bay Seasoning, to taste
1 pinch salt, to taste
1 pinch pepper, to taste
1 lemon, cut in wedges

Steps:

  • Grease an 8 1/2" X 11" pan. (Or use baking spray.)
  • Cover the bottom of the baking dish with the sliced tomatoes.
  • Sprinkle with sugar and parsley.
  • Arrange fish on top.
  • Mix melted butter, paprika, Old Bay seasoning, salt, pepper and flour.
  • Spread over fish.
  • Bake at 400F for 20 min or until fish flakes easily with fork.
  • Squeeze lemon juice over casserole before serving and serve with additional lemon wedges.
  • Note 1: Put tomatoes in a bowl and blanch with boiling water. After a minute or so the skins will slip right off.
  • Note 2: For fillets, I like to overlap them slightly so that the thin parts are not over cooked. For steaks, use a pan that will be nicely filled by one layer of fish.
  • Note 3: If using frozen fish, I prefer to use it unthawed and just lengthen the cooking time a few minutes. Makes a quick family supper dish when time is short and nothing is thawed.
  • I like this with a green vegetable and white rice.

PROSCIUTTO & PESTO FISH GRATIN

Give white fish fillets a creamy makeover with this quick and flavour-packed recipe

4 chunky white fish fillets
4 slices prosciutto
200g pot crème fraîche
3 tbsp basil pesto
25g parmesan , finely grated
1 tbsp pine nuts
good crusty bread , to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6. Season the fish all over, then wrap each fillet in a slice of ham. Put into a large baking dish. Dot the crème fraîche between the fillets and over the exposed ends of the fish. Dot the pesto around the fish, too. Scatter with the cheese.
  • Bake the fish for 15-20 mins, adding the pine nuts halfway through, until the crème fraîche has made a sauce around the fish, and the cheese and ham are turning golden. Serve with plenty of crusty bread to mop up the sauce.

2 tbsp green pesto
finely grated zest 1 lemon
10 green olives , pitted and roughly chopped
85g fresh breadcrumb
4 white fish fillets, such as cod or haddock

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Mix the pesto, lemon zest and olives together, then stir in the breadcrumbs.
  • Lay the fish fillets on a baking tray, skinside down, then press the crumbs over the surface of each piece. Bake in the oven for 10-12 mins until the fish is cooked through and the crust is crisp and brown.
