2 small Vidalia or sweet onions
4 teaspoons butter
1/4 teaspoon salt
Dash pepper
Garlic salt to taste, optional

Steps:

  • Quarter onions halfway through and open slightly. Place each on a 18x12-in. piece of heavy-duty foil. Place 2 teaspoons butter in center of each onion; sprinkle with salt, pepper and, if desired, garlic salt. Fold foil to seal tightly. Bake at 350° until onions are tender, 50-60 minutes. Open foil carefully to allow steam to escape.

4 vidalia onions, peeled
1/4 cup butter
4 teaspoons Worcestershire sauce
2 teaspoons ground cumin
4 teaspoons brown sugar
1/2 cup chicken broth
1/2 cup dry white wine

Steps:

  • Preheat oven to 425 degrees F.
  • With a sharp knife, cut out a 1 inch in diameter by ¾ inch deep cavity in top of onions, reserving scraps.
  • Season each onion.
  • Combine butter, Worcestershire Sauce, cumin and sugar.
  • Fill cavities of onion with the butter mixture.
  • Arrange onions in baking dish, add broth, wine and scraps to dish and bake, basting occasionally, for 45 minutes to 1 hour, or until very tender.
  • Serve as a first course.

6 vidalia onions
6 tablespoons butter
salt and pepper
Worcestershire sauce

Steps:

  • Get the biggest Vidalias you can find. Peel and cut a thin slice off the top and bottom of the onion so that it sits flat in a casserole dish. Take out a little of the core and cut a bit X in the top of the onion. Place each onion on a large square of aluminum foil.
  • Top with pat of butter, salt, pepper and Worcestershire sauce, to taste. Place in dish and bake at 400 degrees for 45 minutes to an hour, or until tender (check on these; you don't want it overcooked and too soft).
  • Variation: Prepare onions as above, but instead of Worcestershire sauce, pour on about 2 Tablespoons of Kahlua before baking. It makes them nice and sweet. You can also put these on a gas grill or nestle them right down into the charcoal (use heavy-duty aluminum foil).

Sweet Vidalia onions and rich, caramel-like balsamic vinegar combine to make a delightfully sweet, complex dish that you and your guests won't be bale to get enough of. There's nothing like baked onions as the perfect side to complement any entrée. The balsamic vinegar sauce is also flavored with olive oil, sugar, fresh thyme, and a little salt and pepper. You should already have a majority of these ingredients on hand, making this a great no-fuss recipe to help put your dinner menu over the top. Most of the bake time is hands off, but you need to keep an eye on the onions and baste them occasionally so they don't burn.

16 oz Uncooked vidalia onion(s) 2 (8-ounce) peeled, trimmed, and sliced 1⁄4-inch thick
0.25 cup(s) Water
2 tsp Olive oil
2 Tbsp Balsamic vinegar
2 tsp Sugar
0.5 Tbsp Fresh thyme fresh, chopped
0.25 tsp Table salt
0.125 tsp Black pepper freshly ground, or to taste

Steps:

  • Preheat the oven to 425ºF. Spread the onions evenly in a 9 x 13-inch baking dish; pour in the water. Drizzle with the oil and vinegar; sprinkle with the sugar, thyme, salt, and pepper. Cover and bake until tender, about 30 minutes.
  • Uncover and continue baking, adding water 1⁄4 cup at a time as needed to keep the onions moist, basting occasionally, until the onions are golden brown and caramelized, about 25 minutes. Garnish with the fresh thyme sprigs, if using. Yields 1/2 onion per serving.

3 large white onions, peeled and quartered
3 tablespoons olive oil
Kosher salt and freshly ground black pepper
1/4 cup balsamic vinegar
1/2 teaspoon sugar

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large bowl, toss the onion quarters with the olive oil, balsamic vinegar, sugar, and season with salt and pepper. Place in an ovenproof, large, nonstick skillet, spreading them out in an even layer. Cover the skillet with aluminum foil. Roast for 20 to 25 minutes, and then remove the foil. Toss the onions well to coat with the reduced balsamic glaze and put back in the oven to roast another 20 to 25 minutes. Serve warm.

1 small Vidalia onion per person
1 garlic clove for each onion
2 teaspoons of butter for each onion
2 teaspoons of balsamic vinegar for each onion
Kosher salt and freshly cracked black pepper, to taste
Cajun seasoning (like Slap Ya Mama), to taste, optional
2 slices of bacon for each onion

Steps:

  • If preparing in the oven, preheat oven to 350 degree F.
  • Trim and peel the onion but leave the root intact. Cut a very thin sliver off of the root end if you need to level the onion. Cut a 1-inch core out of the top of the onion; reserve scraps for another use.
  • Peel the garlic and cut into slivers; stuff into the onion.
  • Place onion onto a square of heavy duty aluminum foil large enough to wrap the onion and enclose the top.
  • Drizzle onion with the balsamic vinegar, place the butter into the center of onion, and season lightly with salt, pepper and Cajun seasoning.
  • Wrap onion with one slice of bacon, then the other, securing with a toothpick if needed. Seal foil tightly around the onion.
  • Place onto a hot grill or bake on a tray in a preheated 350 degree F oven for 1 hour.
  • Carefully open the tops of the packets and return to the oven for 20 minutes, to crisp the bacon.
  • Serve as is in the packets, one per person, or use a spatula to remove onion to a serving platter. Cut larger onions into quarters. Pour juices over the top and serve.

BALSAMIC ROASTED ONIONS

4 pounds medium-size red onions
1/4 cup olive oil
6 tablespoons (3/4 stick) butter
3 tablespoons sugar
6 tablespoons balsamic vinegar
1 tablespoon chopped fresh parsley

Steps:

  • Position 1 rack in center and 1 rack in bottom third of oven; preheat to 500°F. Line 2 large baking sheets with foil. Cut onions through root end into 3/4-inch-thick wedges. Place in medium bowl; toss with oil. Arrange onions, cut side down, on baking sheets. Sprinkle with salt and pepper. Roast until onions are brown and tender, rotating pans in oven and turning onions once, about 45 minutes.
  • Meanwhile, melt butter in heavy small saucepan over medium-high heat. Add sugar and stir until sugar dissolves. Remove from heat. Add vinegar. Return to heat. Simmer until mixture thickens slightly, about 2 minutes. (Onions and balsamic glaze can be made 1 day ahead. Cool. Cover separately and chill. Rewarm onions in 375°F oven about 15 minutes. Stir glaze over low heat to rewarm.)
  • Arrange onions on platter. Drizzle glaze over. Sprinkle with parsley.

1 large vidalia onion, finely chopped
1/2 cup grated parmesan cheese
1/2 cup swiss cheese, shredded
1 cup mayonnaise (do not use salad dressing)
2 teaspoons minced fresh garlic (or to taste)
1/2 teaspoon black pepper (or to taste)
1 teaspoon seasoning salt (or to taste)
1 teaspoon Worcestershire sauce
Tabasco sauce
shredded swiss cheese (use any amount desired)

Steps:

  • Set oven to 375°F.
  • Butter a 1 or 2-quart round or oval casserole dish.
  • In a bowl combine all ingredients together together; mix well to combine.
  • Adjust Tabasco and garlic to taste.
  • Transfer to casserole dish.

I found this recipe on The Splendid Table website. What I am posting here is an adaptation of the adaptation I found there of a recipe for Baked Onions from 'Happy Days with the Naked Chef' by Jamie Oliver. Sounds well-worth trying. Baked onions are a great accompaniment to roasts. To significantly reduce the fat content, use a low-fat or reduced fat cream.

4 white onions, tennis-ball-sized, peeled
olive oil
2 garlic cloves, peeled and finely chopped
4 sprigs fresh rosemary, lower leaves picked and chopped
8 tablespoons heavy cream
grated parmesan cheese
sea salt
fresh ground black pepper
4 slices pancetta or 4 slices bacon

Steps:

  • Boil the onions in plenty of water for 15 minutes or until slightly tender.
  • Remove the onions from the pan and allow to cool.
  • With a sharp knife, remove the top inch of each onion, finely chop and place to one side.
  • Slightly trim the stalk end of the onions so that the onions will sit flat on a roasting tray.
  • Taking care to keep the outside of each onion intact, cut about a heaped tablespoon of onion out from the inside of each onion.
  • Finely chop these removed sections of the onion and add to the rest of the chopped onion.
  • Preheat the oven to 400°F.
  • Heat a saute pan and add a little olive oil, the garlic, the chopped onions, and just a little of the chopped rosemary.
  • Saute for a couple of minutes until the garlic and onion have softened, then turn the heat down, add the cream and remove the onions and garlic from the heat.
  • Stir in the Parmesan and season.
  • Wrap a slice of pancetta around the middle of each onion and spike it in place with a sharpened twig of rosemary or a wooden toothpick.
  • Place the onions on a roasting tray and spoon some of the chopped onion mixture inside each one.
  • Bake in the preheated oven for around 25 minutes until the onions are soft and tender.
  • How long this takes is, of course, dependent on the size of the onions. "It's cool to experiment with different cheeses, so give it a bash," says Jamie.
  • I presume he is suggesting topping the baked onions with cheese.
  • When the onions are cooked right through, remove and serve.

30 Ritz crackers (use one sleeve of crackers, coarsely crushed)

  • Set oven to 350 degrees.
  • Butter a 2-qt casserole dish.
  • In a large saucepan, melt butter.
  • Add onions to pan, over high heat, saute until soft, and just starting to brown, about 20-25 minutes
  • Remove from heat.
  • Place half of the onions in the baking dish; cover with half the crackers, and half of the Parmesan.
  • Repeat to make another layer of onions, crackers and Parmesan Bake, uncovered, until cheese on top is lightly browned, about 25 mins Serve warm.
  • Note: if made a day ahead, let cool, and keep refrigerated until time to reheat for serving.

  • Slice off the bottom and top of the onion, but do not peel.

  • Sprinkle with salt.
