BAKED TOFU STEAKS
Baked, Asian-style marinated tofu. Goes great with brown rice and steamed broccoli.

Steps:
- Lay tofu cubes onto several layers of paper towel; top with more paper towel. Place something heavy onto the tofu to squeeze excess water from the tofu; let sit until the tofu is drained, 20 to 30 minutes.
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking sheet.
- Heat a small skillet over medium heat. Toast sesame seeds in hot skillet until fragrant, about 5 minutes.
- Mix soy sauce, ginger, and sesame seeds together in a large pan. Marinate tofu in the soy sauce mixture until it absorbs some of the sauce, about 12 minutes per side.
- Spread marinated tofu onto the prepared baking sheet.
- Bake tofu in preheated oven for 15 minutes, flip, and continue baking until firm and heated through, about 15 minutes more.

- Preheat oven to 350 degrees F (175 degrees C). Lightly oil a large baking sheet.
- Gently press tofu pieces to release as much water as possible. Arrange tofu on the prepared baking sheet.
- Whisk soy sauce, agave nectar, sesame oil, garlic, and ginger together in a bowl until marinade is evenly combined. Brush half of the marinade over tofu pieces.
- Bake in the preheated oven for 30 minutes. Flip tofu and brush remaining marinade over tofu. Sprinkle sesame seeds over tofu. Continue baking until tofu is crisp, about 30 minutes more. Transfer tofu to a wire rack using a spatula; cool.

BAKED TOFU MEATBALLS
Steps:
- Oil an 8-by-8-inch square or round baking dish with 1 1/2 tablespoons olive oil. Preheat the oven to 350 degrees. Mix the mashed tofu together with the walnuts, wheat germ, parsley, soy sauce, yeast, onion powder, garlic powder and oregano. Shape into 16 1 1/2-inch balls and arrange in the prepared pan without touching each other. Drizzle with the remaining 1 1/2 tablespoons olive oil. Bake, turning the meatballs every 10 minutes, for 30 to 35 minutes, until they're evenly browned and crispy. (Be careful when turning, especially during the first few minutes, as they'll be soft and will crumble if handled roughly.) Per serving (4 balls): 219 calories, 14 grams fat, 2 grams saturated fat, no cholesterol, 11 grams carbohydrates, 14 grams protein, 270 milligrams sodium, 4 grams fiber.

Tofu cubes are marinated and then baked in the oven. The tofu can be used as a hot or cold snack or used as salad topping. Don't forget the smoke flavoring, it really adds the special flavor.

- Preheat oven to 375 degrees F (190 degrees C). Lightly spray a non-stick baking sheet with oil.
- Slice tofu into 1/2-inch slices, and gently press excess water out of tofu. Cut sliced tofu into 1/2-inch cubes.
- In a bowl, stir together the soy sauce, maple syrup, ketchup, vinegar, and hot sauce. Stir in sesame seeds, garlic powder, black pepper, and liquid smoke. Gently stir tofu cubes into sauce. Cover, and marinate at least 5 minutes.
- Place the tofu on the baking sheet in a single layer. Bake in a preheated oven for 15 minutes. Turn tofu, and bake until the tofu turns golden brown, about 15 minutes more.

ITALIAN TOFU MEATBALLS
I stole this recipe from a vegetarian woman I worked with from Italy. One of my first and favorite recipes.

- Preheat oven to 350.
- Drain tofu well and cut into several large cubes. Put the tofu into food processor with garlic cloves and grind until combined. Put tofu mixture into a bowl and mix with the ricotta, egg, parmesan (if using) and gradually add breadcrumbs until you get a workable consistencey- you may need less or more. Mix thoroughly and add salt (about 1/2 teaspoons or so) and fresh pepper. Form balls out of the mixture (about 1.5 inches) making sure they are held together well and roll in the remaining breadcrumbs (if you need more breadcrumbs just use more).
- Grease a baking sheet and place the tofu balls on the sheet. Bake for 35-45 minutes, until form, carefully turning halfway through.
- Serve as is, with tomato sauce, pesto or my favorite -- over spaghetti.

ITALIAN TOFU MEATBALLS
They're the same as Italian meatballs but with tofu. I had to go through many recipes and cobble pieces together to get something that tasted normal. Olive oil helps them crisp up in the oven. I ate these with basic marinara and they were delicious.

- Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
- Place tofu onto a plate and place another plate on top. Set a 3- to 5-pound weight on top. Press tofu for 15 minutes to drain excess water. Break tofu into small pieces and squeeze again to remove as much water as possible.
- Place tofu in a large bowl. Add onion, egg, bread crumbs, Parmesan cheese, Worcestershire sauce, basil, marjoram, rosemary, oregano, thyme, red pepper flakes, salt, hot sauce, and garlic; mix well with your hands until thoroughly combined.
- Drizzle some olive oil on the lined baking sheet. Form tablespoonfuls of tofu mixture into balls and arrange in rows on the baking sheet. Drizzle remaining olive oil over meatballs.
- Bake in the preheated oven until browned and firm to the touch, 25 to 30 minutes.

- Press the tofu between two clean tea towels (or two double sheets of kitchen paper), to remove any excess liquid, then place in a food processor. Add the bread and fresh basil, along with a good pinch of salt and pepper, and blitz until finely chopped.
- Remove the blades from the food processor (important to make sure you don't cut yourself!), then use clean hands to shape the mixture into meatballs. The exact number you can make depends on how large you make them - I made 18. Place the meatballs on a lined and greased baking tray, and bake at 190°C (Gas Mark 5 / 375°F) for around 30-40 minutes, until firm and golden brown.
