Cheesy, spinach balls that taste like spinach dip are the real deal and a delicious way to get your family to eat their leafy greens.

1/2 cup unsalted butter
1/2 cup chopped onions
1 clove garlic, minced
2 10-ounce packages frozen chopped spinach, thawed and drained*
1 1/2 cups breadcrumbs
6 eggs
1 cup grated Parmesan cheese
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat the oven to 350F. Line a baking sheet with parchment paper.
  • In a large pan, melt the butter over medium-high heat. Add the onions and cook until soft. Add the garlic and stir. Remove from heat and set aside.
  • In a large bowl, combine the spinach, breadcrumbs, eggs, Parmesan cheese, salt, pepper, and butter mixture. Stir to thoroughly combine.
  • Using a small cookie scoop or spoon, scoop the mixture into your hands and roll into a ball, and place them on the baking sheet.
  • Bake for 15 to 20 minutes, until lightly browned.

2 cups Italian-style seasoned bread crumbs
1 cup grated Parmesan cheese
½ cup butter, melted
4 small green onion, finely chopped
4 eggs, lightly beaten
salt and pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, mix the frozen chopped spinach, Italian-style seasoned bread crumbs, Parmesan cheese, butter, green onion, eggs, salt and pepper. Shape the mixture into 1 inch balls.
  • Arrange the balls in a single layer on a large baking sheet. Bake in the preheated oven 10 to 15 minutes, until lightly browned.

1 medium onion, finely chopped

  • Cook spinach according to package directions; drain well, squeezing out excess liquid. Combine spinach with remaining ingredients in a large bowl. 1/2 teaspoon dried thyme leaves
1/2 teaspoon cayenne
1 3/4 cups Italian-style bread crumbs

Steps:

  • Preheat the oven to 350 degrees F.
  • Squeeze the excess water from the spinach and put it in a large mixing bowl. Add the remaining ingredients and mix well by hand.* Form the mixture into 1-inch balls, either by hand or with a small ice cream scoop. Place the balls closely together on a baking sheet.
  • Cook in the top half of the oven until firm to the touch, about 20 to 25 minutes. Let cool 5 minutes, and then transfer to a platter and serve immediately.

I got this recipe from my mother-in-law, who says these were my veggie-hating husband's favorite childhood snack. They are a great way to get kids to eat spinach!! Prep time includes chill time. This can be a little salty depending on the butter, cheese and bread crumbs you use, if you are concerned about saltiness use unsalted butter and garlic powder in place of the garlic salt. I have also made these with only 1/2 cup of melted butter (1 stick) and they are just as good but you need to spray the cookie sheet because they will stick.

2 tablespoons olive oil
3 -4 cloves garlic, minced
3/4 teaspoon salt
1/2 teaspoon fresh ground black pepper
2 small tomatoes, peeled,seeded,and diced
1/2 cup freshly grated parmesan cheese

Steps:

  • Thoroughly wash and dry spinach and remove stems.
  • (I usually use the packaged, pre-washed spinach so that I don't get too much water in this dish. Otherwise, be sure to dry the leaves very, very well.) Using half the ingredients and working in batches, heat olive oil in a large skillet over moderate heat.
  • Saute garlic about one minute.
  • Add spinach leaves, increase heat to high, and stir until evenly wilted, about 2 minutes.
  • Add salt, pepper, and tomatoes.
  • Cook an additional minute.
  • Stir in grated Parmesan, remove from heat, taste, and adjust seasonings.
  • Serve immediately.
  • If spinach releases too much water, you can drain mixture in a colander before serving.
  • Taste and adjust seasonings again after draining.
