This is my go-to Bread machine sourdough bread recipe. This is a true sourdough bread, without yeast that tastes and feels just like an artisan loaf! It combines the ease of use of the bread machine and the delicious flavour of a genuine sourdough bread while taking much less effort and time to prepare! Just select whether you want a light and fluffy or a bit more substantial bread from my two variations below! The pictures are from the lighter variation (75% hydration).

80g sourdough starter (2.1oz)
460g strong white bread flour (16.2oz)
15g unsalted butter (0.5oz)
0.5 tsp sugar or a drizzle of honey
1.75 tsp salt
285ml water (9.6 fl oz)

Steps:

  • In your bread machine basket, pour in your sourdough starter then the flour
  • Add in the sugar/honey, salt and the butter
  • Pour in your water around the edges of the baking basket
  • Set your bread machine to the kneading cycle for 30 minutes or if it has a sourdough dough cycle use that. For the Panasonic SD-ZX2522 use menu 29. For the Panasonic SD-ZB2512 use menu 26.
  • Once your sourdough bread has finished kneading, let your dough rest and proof for 3-4 hours or until it has risen by about 50% of its original size. For the Panasonic SD-ZX2522, use menu 30 for about 2 hours and 30 minutes to accelerate the proofing or let it rest with the machine switched off for about 4 hours for a more sour flavour. For the Panasonic SD-ZB2512KXE use menu 27 for the same amount of time (2h 30mins). Note that proofing time will depend on how active your sourdough starter is so adjust accordingly until your bread has risen the right amount.
  • Once proofed, sprinkle some flour on top and score lengthwise with a sharp knife or a blade. Pop any large bubbles that may have appeared on the surface.
  • Set your bread machine to the bake programme and set its timer for 1 hour and 15 minutes. For the Panasonic SD-ZX2522 and the Panasonic SD-ZB2512, use menu 18.
  • Once done, remove the basket and tip the bread over to an airing rack. Let it cool down for about an hour before cutting it.
  • If you want to prepare your bread overnight and own a Panasonic bread machine use menu 10 for the Panasonic SD-ZB2512 and menu 11 for the Panasonic SD-ZX2522. The loaf will be slightly denser so I recommend going with the 75% Hydration - Lighter dough recipe above.

Tsoureki - Greek Easter Bread (Bread Machine Recipe) image

Tsoureki is a sweet egg bread (similar to Challah) that is braided and decorated with dyed eggs for Greek Easter. This is my first time making it using this recipe (and the first time it came out properly!) - so I wanted to share. This recipe is made in the bread machine on the dough setting and then braided and baked in the oven. Adapted (very slightly) from this recipe: http://www.kitchenlink.com/cookbooks/2000/0385477775_3.html I listed the brands I used, but obviously you can use whatever you prefer. (I wrote my instructions for beginners like myself. If you know what you're doing, ignore my tangents!)

1 cup whole milk
4 cups bread flour (King Arthur)
2 1/2 teaspoons bread machine yeast (Fleischman's)
2/3 cup sugar
1/2 teaspoon salt
1 teaspoon orange zest
1 teaspoon ground aniseed (plus whole anise seed for decoration, if you like)
2 tablespoons olive oil
2 large eggs (plus 3 dyed Easter eggs for decoration, if you like)
1 egg yolk (whisked with 1 tablespoon water for glaze)

Steps:

  • Place the milk, 2 cups of flour, and yeast in the bread machine pan and process on the dough setting. (Mine takes around 1.5 hours).
  • While the machine is working (no rush here - you have plenty of time) mix the other 2 cups of flour with the sugar, salt, orange zest, and the anise seed. (I couldn't find ground anise seed so I ground some up in my blender. A coffee grinder would work as well).
  • Once the dough cycle is completed, add the flour mixture, olive oil, and eggs. Process again on the dough setting. (Another 1.5 hours! But for me, this is preferable to doing it by hand. My handmade dough ends up like a brick).
  • Once the second cycle is completed, remove the dough to a well-floured surface. Punch down and form into a ball. (This is easy! I was scared because this is where I get into trouble - I tend to overwork things. Look it up on YouTube if you don't know how: http://youtu.be/5HW38Bn-hnI).
  • Cover and let the dough rest for 15 minutes. (I left it on the counter top and covered it with paper towels).
  • Now, divide the dough into three parts. Roll each piece into a rope and braid, working from the center to the ends. Pinch the ends together and turn under. (Once again, if you don't know how: http://youtu.be/YR6aIAh2Vt8 And if you don't feel like braiding it at all - I won't tell. It tastes wonderful no matter what the shape).
  • Embed the dyed eggs (optional) in the folds of the braid. Cover and let the dough rise until doubled in bulk - about 1 hour.
  • Meanwhile, preheat the oven to 375 degrees F. (Note: Mine came out a little dark on top so I'm gonna try 350 degrees next time.) Once the dough has risen, brush it lightly with the egg wash. (I sprinkled some whole anise seeds on top, but you don't have to do that. Some people use slivered almonds, but my family has allergies).
  • Bake in the preheated oven for 40 to 45 minutes or until golden brown. (I slid the parchment paper directly onto a preheated pizza stone. My bread came out a little dark on the top, next time I'll drape some foil paper over it around 15 minutes in).
  • Cool on a rack. Store in a brown bag for up to 3 days. (When it starts getting stale - if it lasts that long - you can make french toast with it. I recommend this recipe: http://www.food.com/recipe/dennys-style-french-toast-90674 So good!).

FOCACCIA (USING BREAD MACHINE FOR THE DOUGH)



Focaccia (Using Bread Machine for the Dough) image

This bread is SO appealing and very versatile too! We often have it in the summertime quartered and sliced horizontally and filled with barbecued chicken thighs, lettuce, sliced red onions, tomatoes and avocado and some Paul Newman's Own Ranch Dressing! Simply divine!! The preparation time I have given does not include the time it takes for the Bread Machine to make the dough or the time it takes for the dough to rise.

2 teaspoons dried yeast
3 cups bread flour
1 teaspoon salt
1 tablespoon sugar
1 teaspoon rosemary (dried)
1 teaspoon oregano (dried)
1 tablespoon oil
1 1/2 cups water

Steps:

  • Place all of the above ingredients, accurately measured and in the order I have listed them, in the Bread Machine.
  • Select the 'dough' cycle.
  • When the cycle is complete, take the dough out of the Bread Machine, and proceed with the following steps: On a lightly floured surface, gently knead the dough for about 10 minutes.
  • (you may need to add extra flour during this time) Place the 'Focaccia' dough in a well grease bowl, cover and leave to rise in a warm (and draught free) place for about 1/2 an hour.
  • Then, knead the dough lightly (in the bowl) for about 1 minute.
  • On a lightly floured surface, roll the dough into a rectangular shape (about 20 cm x 30 cm)
  • Place on a well greased baking tray (or sponge roll tin) and leave to rise again, in a warm place, this time for about 1 hour (or until it has doubled in it's original size) Now pour and smooth over with your fingers, 1 tablespoon of olive oil.
  • 'Poke' the dough with 2 fingers at intervals over the surface, and sprinkle liberally with rock salt or equal measurements of olive oil and Basil pesto mixed together with grated Parmesan or Romano cheese, top with chopped up sun-dried tomatoes and sliced black olives!
  • YUM!
  • Bake at 225°C for about 15 minutes or until golden brown!

1 cup lukewarm water
2 tablespoons olive oil
½ teaspoon salt
2 teaspoons chopped garlic
1 tablespoon chopped fresh rosemary
3 cups bread flour
1 ½ teaspoons active dry yeast
2 tablespoons olive oil
1 ½ teaspoons chopped fresh rosemary

Steps:

  • Place water, 2 tablespoons olive oil, salt, garlic, 1 tablespoon rosemary, bread flour and yeast in the pan of the bread machine in the order recommended by the manufacturer. Select Dough cycle; press Start.
  • Remove dough from bread machine when cycle is complete. Pat dough into either a 9x13 inch baking pan or 12 inch pizza pan. Use your fingers to dimple the dough every inch or so. Brush with remaining olive oil and sprinkle with remaining rosemary.
  • Preheat oven to 400 degrees F (200 degrees C). Cover foccacia with plastic wrap while oven preheats.
  • Bake in preheated oven for 20 to 25 minutes, or until golden brown. let cool for 5 minutes before serving.

2 tablespoons olive oil

  • Place the above ingredients into the bread machine according to owner's manual specifications (mine does wet ingredients first).
  • Program for DOUGH or MANUAL.
  • After the program is completed, divide dough into 10 equal pieces; shape each into a smooth ball; place five on each baking sheet.
  • Let rise for 20 minutes while oven preheats to 500; flatten puffy balls gently into a 6-inch disk.
  • Bake for five minutes (tops will be puffed and beginning to brown).
  • Cut each circle in half to form two pockets.
  • Fill with your favorite sandwich fixin's: ham, turkey, chicken salad, lettuce, sprouts, cheese and grapes.
  • TRADITIONAL BREAD-MAKING: In a mixing bowl, mix water, sugar and yeast; allow to foam for 3-5 minutes; add oil and salt, mixing well; mix white & wholewheat flours together in a separate bowl, then add to liquids, mixing until well-blended. Place dough-ball in a well-greased bowl, allow to rise in a warm spot until doubled in volume. Continue from Step #3 above.

Steps:

  • Add all the ingredients to the pan according to the order in the manufacturer's instructions (author puts 3 1/4 cup flour in for the 1 1/2 pound loaf, 4 1/2 cup flour for the 2 pound loaf, and sprinkles the rest in over the dough ball as needed, since yogurts have different consistencies).
  • Set crust on Dark and program for the Basic cycle; press Start.
  • The dough ball will be slightly sticky, but it will smooth out after the kneading.
  • When the baking cycle ends, immediately remove the bread from the pan and place it on a rack; let cool to room temperature before slicing.

Steps:

  • Place the ingredients, except olives, in the bread pan in the order recommended by your machine's manufacturer.
  • Process on the appropriate cycle.
  • Add olives at the raisin/nut signal or 5 to 10 minutes before last kneading cycle ends.
  • I prefer to make it with the dough cycle; shape it in 2 loaves and let is rise for 30 minutes.
  • Bake in a pre heated375* oven for 30 minutes.
  • Option:.
  • Add 1 1/2 cup old or sharp shredded cheddar cheese with the flour for a Cheese Olive Bread; fantastic.
  • Tip:.
  • For my bread to rise, I heat 2 cups of water in microwave for 5 minutes; this creates steam. Leave water in microwave. Sit your bread in microwave OFF for 30 minutes.Your bread will rise really nice.

I found this stuffed in my recipe box. I'm not sure where I found it, but I decided to try this with Gyros. These were delicious! The recipe wasn't specific on the temperature of the water, & after I had all of the ingredients in the pan, I remembered that I should have used warm water (120-130 degrees F). But I goofed & used cold water. I thought I'd try it anyways & if it didn't work I'd just make another batch. But I got lucky, because it raised just fine. I also used all-purpose flour. This was my first time making pita bread, so for any of you who are new to making pitas as well, here are some tips for rolling them out. If you roll them out to 6-7 inches, they do not puff very much & you can use them like a tortilla. However, if you roll them a little smaller (some of mine just didn't want to stretch to 6 inches) & have them a little thicker (not too much) they puff up & you can cut them in half for pita pockets. For some wierd reason, this really impressed me! Note: If you use a stone pan to bake these, bake for 4 minutes & do not turn. *Prep time varies for all bread machines, so I didn't list that part. My prep time was 1 hour, 20 minutes.
