ITALIAN SAUSAGE SPAGHETTI BAKE
Steps:
- Preheat oven to 350° and spray a 3 quart baking dish with non stick spray. Set aside.
- Add one tablespoon of butter to cast iron pan or large frying pan.
- Remove sausage from casing, add to pan, crumble and cook over medium heat.
- Once sausage has been cooked, drain grease and leave in strainer.
- Add the other tablespoon of butter to pan and saute onions and garlic scraping any brown bits off the bottom of pan. Cook until onions are translucent.
- Pour diced tomatoes, tomato sauce, tomato paste, Rotel and water into pan with onions and garlic. Stir.
- Sprinkle oregano, basil, garlic salt and pepper into pan, stir and simmer for about 10 minutes.
- Add sausage back into pan, add cream cheese, stir and simmer for an additional 15 minutes stirring occasionally.
- While preparing sausage mixture, cook pasta in a large pot according to package directions for al dente. Drain, rinse and return to pot.
- Add sausage mixture to spaghetti along with 3 cups of cheese. Stir to combine.
- Pour mixture into prepared baking dish and top with remaining cheese.
- Cover with foil (sprayed foil with non stick spray so cheese does not stick to foil) and bake in the oven for 40 minutes or until cheese is bubbly. Remove foil and bake for 10 more minutes.
- Remove from oven and enjoy!

- Dice the onion and mince the garlic. Cook both in a large pot with one tablespoon of olive oil over medium-low heat until soft and transparent (about 5 minutes).
- Add the Italian sausage to the pot and cook through (breaking it up into pieces as you cook). Add the tomato paste, stir and cook for about 2-3 minutes more or until the tomato paste takes on a slightly darker color. Add the diced or crushed tomatoes, salt, and sugar. Stir and heat through.
- Preheat the oven to 350 degrees. Bring a large pot of water to a boil (this can be done while you're preparing the sauce in step 2). Cook the pasta according to the package directions (boil for 7-10 minutes). Drain the cooked past and then stir into the meat sauce.
- Prepare an 8×8 inch casserole dish by coating with non-stick spray. Add half of the spaghetti mixture to the dish. Sprinkle withe feta cheese. Add the rest of the spaghetti, sprinkle with parmesan cheese, and then top with mozzarella.
- Bake the spaghetti for 30 minutes in the 350 degree oven. Let rest for about 10 minutes before cutting into eight pieces and serving.

- Preheat oven to 350 degrees.
- Boil noodles according to package. Drain water and set aside.
- Brown Italian Sausage then drain the grease. Cook sausage while pasta is cooking.
- Melt one tablespoon butter in skillet. Saute onions and garlic until tender on low heat.
- Add the spaghetti noodles, veggies, and sausage together. Mix in 1 cup of cheese.
- Stir in spaghetti sauce. Place the pasta and meat mixture into a 9×12 baking dish.
- Cover the spaghetti noodles and meat mixture with the remaining 2 cups of cheese.
- Bake in the oven on 350 degrees for 25-30 minutes or until the pasta is heated all the way through and the cheese is melted, and hot and bubbly.

- In a large skillet, cook sausage over medium heat until a thermometer reads 160°; drain. Slice into 1/2-inch pieces. SAUSAGE PASTA CASSEROLE

- Preheat the oven to 425 degrees F. Brush a shallow 3-quart baking dish with olive oil. Bring a large pot of salted water to a boil. Add the pasta and cook until very al dente; you still want it to retain a little bite. Reserve 1/2 cup pasta water. Drain well.
- Meanwhile, in a large Dutch oven over medium-high heat, add the olive oil. When the oil is hot, add the sausage and cook and crumble with a wooden spoon until no longer pink, about 4 minutes. Add the onion and fennel; cook until softened, about 10 minutes. Add the garlic and red pepper flakes and cook until the garlic is fragrant, about 1 minute. Add the tomatoes and season with salt. Bring to a simmer and add the cream. If the sauce is too thick, add a little water from the pasta. Turn up the heat to medium high and simmer rapidly to thicken the sauce and blend the flavors, about 10 minutes.
- Add the rigatoni and basil and toss to coat the pasta with the sauce. Remove from the heat and stir in half each of the mozzarella and parmesan. Transfer the mixture to the prepared baking dish and sprinkle with the remaining mozzarella and parmesan. Bake until browned and bubbly, 15 to 20 minutes. Let sit 10 minutes before serving.
BAKED RIGATONI WITH SAUSAGE

- Preheat the oven to 400 degrees F.
- For the topping: Add the ricotta, basil, and salt to a small bowl. Stir together with a rubber spatula. Set aside.
- For the pasta: Bring a large pot of water to boil. Season well with salt and cook the rigatoni for 5 minutes. Drain well, reserving 1/2 cup pasta water.
- Meanwhile, heat a large braiser or ovenproof skillet over medium-high heat. Add the olive oil and sausage to the pan. Cook, stirring often and breaking apart the meat with the back of a spoon, until beginning to brown, about 7 minutes. Add the broccoli and garlic and cook to marry the flavors, about 3 minutes. Stir in the marinara and 1/4 teaspoon salt until fully combined. Add the pasta to the pan and sprinkle with 1/2 cup of the Parmesan cheese. Toss well to coat. Add the reserved pasta water to thin the sauce slightly.
- Dollop the ricotta cheese mixture evenly over the top. Nestle the ricotta mixture into the pasta and cover with some of the pasta. Sprinkle with the mozzarella and remaining 1/2 cup Parmesan cheese and bake until golden brown and bubbly, about 20 minutes. Allow to sit for 5 minutes before serving.

- To make the ragu, heat the oil in a large shallow pan or flameproof casserole. Squeeze the sausagemeat from its skins in small balls straight into the pan. Sizzle for 10 mins until browned (don't worry if the meat breaks up). Add the garlic and sizzle for another minute until starting to turn golden, then stir in the chilli flakes, if using, the tomato purée and vinegar. Tip in the tomatoes and bring to a simmer. Reduce the heat to low and bubble for 30 mins.
- Meanwhile, make the white sauce. Melt the butter in a saucepan and stir in the flour to make a loose paste. Sizzle for a minute, then gradually whisk in the milk. Simmer gently for 10 mins, whisking occasionally to ensure the sauce stays smooth. Season and whisk in the parmesan. Remove from the heat and set aside.
- Cook the pasta in a large saucepan of boiling water for 9 mins, or a minute less than pack instructions. Drain and return to the pan. Scrape most of the white sauce into the pasta and stir to coat. Tip in most of the ragu and most of the mozzarella and stir until just combined. Pour the pasta mixture into a large baking dish and spoon over the remaining white sauce and ragu. Dot with the rest of the mozzarella and sprinkle with extra parmesan. Leave to cool completely, then wrap and chill for up to a day, or freeze for up to two months. Defrost in the fridge for 24 hrs before baking.
- Heat the oven to 190C/170C fan/gas 5. Bake for 25-30 mins until the top is slightly crisp at the edges and the cheese is melted. Leave to rest for 5-10 mins, then take the baking dish straight to the table for people to scoop onto their plates.

Steps:
- Preheat oven to 350 and PAM a 13x9 deep baking dish.
- In large skillet, brown ground beef.
- In large pot cook pasta to al dente'.
- When beef is cooked, drain and add spaghetti sauce and hot water (I always dump the water in the jar and shake it up to get the last bit of sauce out before adding to the pan).
- Add garlic and veggies and simmer about 10 minutes.
- When pasta is done, drain in a colander and rinse with hot water, let sit temporarily.
- In pasta pot, melt margarine.
- Stir in parmesan cheese, then add pasta back into pan.
- Beat eggs with milk and toss with pasta mixture.
- Press pasta in pan evenly.
- Top with sauce mixture, spreading to the edges.
- Bake at 350 for 15 minutes.
- Top with cheeses and bake additional 15 minutes until cheese starts to melt and brown.
- Remove from oven and let sit for 10 minutes for easier cutting.
- Cut into squares.
- This makes a lot and freezes well in individual squares for lunches.
