Categories     main-dish

Time 1h55m

Yield 6 servings

Number Of Ingredients 13

Kosher salt
1 1/2 pounds ground beef chuck
Freshly ground black pepper
1 large onion, diced (about 2 cups)
1 red bell pepper, stemmed, seeded and diced (about 1 cup)
4 cloves garlic, finely chopped
One 28-ounce can crushed tomatoes
One 14.5-ounce can diced tomatoes
2 teaspoons sugar
1/4 teaspoon dried oregano
8 ounces thin spaghetti
8 ounces sharp Cheddar, grated (about 2 cups)
1/4 cup fresh flat-leaf parsley leaves, finely chopped

Steps:

  • Bring a large pot of salted water to a boil.
  • Heat a second large pot over medium-high heat. Add the beef, 1/2 teaspoon salt and a few grinds of pepper and cook, stirring to break the meat up, until browned, about 4 minutes. Add the onions, bell peppers, garlic and a generous pinch of salt and pepper and cook, stirring occasionally, until tender, about 10 minutes. Stir in the crushed and diced tomatoes, sugar and oregano and bring to a boil. Reduce the heat to simmer and cook, stirring occasionally, until thickened, about 30 minutes.
  • Meanwhile, cook the spaghetti for 2 minutes less than the time indicated in the package directions. Strain well. Preheat the oven to 350 degrees F.
  • Cover the bottom of a 13-by-9-by-2-inch pan with a third of the sauce. Add half the pasta and a third of the Cheddar; repeat the layers and add the last of the sauce; reserve the last of the Cheddar.
  • Bake for 30 minutes. Top with the remaining Cheddar and continue baking until it melts and the sauce bubbles, about 5 more minutes. Let cool in the dish for at least 10 minutes. Garnish with the parsley before cutting into squares.

CLASSIC BAKED SPAGHETTI

Classic Baked Spaghetti image

I looked everywhere for an easy baked spaghetti that did NOT use mushrooms or cream of mushroom soup (husband is allergic). I am happy to say I found it. You could add mushrooms, green pepper, olives, etc. to this dish for added variety, but I like it just the way it is! This makes a great family meal...just add a tossed salad and some garlic bread, and dinner is ready in about an hour.

BAKED SPAGHETTI

Baked Spaghetti image

I was craving this one day when I didn't feel like going to the trouble of making lasagna. So I looked through several cookbooks but none of the recipes I found really hit me, so I kind of combined a few into this concoction. It's very easy, freezes beautifully! I serve it with Pillsbury breadsticks and some sauteed zucchini & squash.

Provided by DiXiEmEdiC911

Categories     Spaghetti

Time 1h

Yield 8 serving(s)

Number Of Ingredients 7

1 (32 ounce) jar meatless sauce, any flavor
1 (14 ounce) can del monte diced tomatoes with green pepper and onion (do not drain)
1 lb ground beef
1 medium onion
1 box angel hair pasta or 1 box spaghetti, whichever floats your boat
1 (8 ounce) bag shredded mild cheddar cheese
1 cup shredded mozzarella cheese

Steps:

  • Preheat oven to 350.
  • Break the pasta into 3 inch lengths, then cook according to package directions, rinse& drain.
  • While the pasta is cooking, dice the onion and brown it with the ground beef until no longer pink.
  • Drain any excess grease.
  • Stir the spaghetti sauce and diced tomatoes in with the beef mixture, simmer for a few minutes until thickened.
  • Stir in the pasta, and then stir in the cheddar cheese, mixing until cheese is completely melted.
  • I would suggest using a pasta server to do this, it just works better.
  • Personally, I use the olive oil flavored Pam to grease my baking pan.
  • I usually divide this between 2 8 inch square pans, and I line one with tinfoil so I can freeze it for another night.
  • So, either do that, or put the whole mix into a sprayed 13x9 pan.
  • Bake at 350 for about 15 minutes.
  • Then sprinkle your mozzarella on top and bake for about 15 more minutes or until the mozzarella has melted to your liking.
  • Dig in!

  • Make the sauce: one day ahead, if possible. Drizzle some olive oil in a large pot and heat over medium. Salt the beef and add to pot along with the chopped salt pork, and brown, about 10 minutes. Add onions, garlic and a generous pinch of salt, continue cooking until onions are softened, about another 10 minutes. Add the crushed tomatoes and juices, chopped green pepper, sliced mushrooms, Worcestershire, crushed red pepper, to taste, and 2 cups water. Stir well and bring to a boil. Reduce heat to low, cover partially, and simmer 2 to 2½ hours or until meat is very tender. Cool and refrigerate overnight.
  • Assemble the spaghetti: Bring sauce to room temp or reheat gently on stove. Cook 2 pounds spaghetti in boiling, salted water until al dente, 8 or 9 minutes. Drain. In a large baking pan, put a little sauce to coat the bottom entirely. Add a layer of pasta, ladle some sauce all over the top, sprinkle on half the shredded cheddar. Repeat with another layer of spaghetti, more sauce, the rest of the cheddar. Cover cheddar with remaining spaghetti. Ladle some more sauce over the top and then sprinkle with grated Romano cheese. So here's what you have, sauce, spaghetti, sauce, cheese, spaghetti, sauce, cheese, spaghetti, sauce, Romano.
  • Cover with foil and bake in 350º oven for 45 minutes. Remove foil and bake another 15 minutes, until heated thoroughly and cheese is melted.
