BAKED SHRIMP IN TOMATO FETA SAUCE
This is a fantastic recipe! I love this, and it's a wonderful mixture of fresh herbs and succulent shrimp. Each ingredient has it's own flavor, but when all put together makes for a wonderful mixture of infused flavors.I know you will love this! *Note that there are cooking and baking times, the baking times are 10-12 min. and the cooking times are approx. 10 to 20 min. ** I use my hands to break up the whole tomatoes, and I just pinch off the little, tough stem ends and toss them. You could use the same ammount o diced tomatoes, but I don't recommend them. If you open a can of whole tomatoes and pour them in bowl, side-by-side with the diced tomatoes, you would see a big difference. The whole ones will look bright red, while the diced ones appear pale. I always use the whole tomatoes whenever I can.

Steps:
- Preheat oven to 425°F Heat oil in a large, oven-proof skillet on medium high heat. Add the onions and cook until softened, 3-5 minutes. Add the garlic and cook until fragrant, about 30 seconds more.
- Add the tomatoes and bring to a simmer, reduce heat and let simmer for 5-10 minutes, until the juices thicken a bit.
- Remove from heat. Stir in the herbs, shrimp, feta cheese, and salt and pepper to taste. Place pan in oven and bake, uncovered, until shrimp are cooked through, about 10-12 minutes.
- Serve immediately. Serve with crusty French or Italian loaf bread, pasta, a simple salad, or you may use rice.
BAKED SHRIMP WITH TOMATO, BASIL & FETA
Steps:
- 1. Preheat oven to 375°. 2. Combine shrimp, olive oil, lemon juice, ¼ cup chopped basil, garlic, Cavender's, and pepper in a large plastic bag and toss to coat well. Add a little more olive oil if needed. Place mixture in a 9 x 13 ÂÂinch baking dish coated with cooking spray. Stir in sauteed onion and drained tomatoes. Bake at 375° for 12 minutes, remove from oven and stir, moving less done shrimp to outer edges, add cheese and bake 10 more minutes. Top with fresh chopped parsley and remaining ¼ cup chopped basil. Serve immediately. Works well over cooked orzo. Orzo with fresh herbs: Cook 1 cup orzo pasta according to package directions, omitting salt and fat. Drain; toss orzo with 1/4 cup chopped fresh basil, 2 tablespoons chopped fresh parsley, 1 tablespoon extra-virgin olive oil, 1/2 teaspoon salt, and 1/4 teaspoon freshly ground black pepper.

- Heat oil in large skillet or saucepan over medium heat.
- Add onions and garlic.
- Cook for 2 minutes, stirring often.
- Add zucchini and cook for 5 more minutes, until zucchini is softened.
- Add tomatoes, wine, oregano, black pepper, crushed red pepper flakes, and salt.
- Bring to a Boil.
- Reduce heat to medium.
- Cook, uncovered, for 10 minutes.
- Add shrimp and feta cheese.
- Increase heat to Med-high.

- Preheat oven to 350*.
- Heat oil in a large nonstick skillet.
- Add salt, red peppers, shrimp and garlic.
- Saute for 3 minutes.
- Spoon this mixture into an 11 x 7 baking dish.
- Pour wine in skillet.
- Cook over low heat until reduced in half, about 8 minutes.
- Stir in tomatoes, then pour over shrimp mixture.
- Sprinkle feta cheese over shrimp/wine mixture.

GREEK BAKED SHRIMP WITH FETA
This is a delicious recipe, and one I have enjoyed many times. It would make an excellent appetizer for entertaining as well as a great dinner idea!

- Preheat oven to 450 degrees.
- Remove shells from shrimp, leaving last segment and tail intact; remove vein.
- Rinse and dry.
- In a pan saute onion in oil until transparent, (adding a few drops of water if necessary), add garlic and green onion and cook 2 minutes more.
- To the onions add the tomatoes, wine, half the parsley, oregano, and salt and pepper to taste.
- Reduce heat, cover and simmer for 30 minutes until thickened.
- Pour half the sauce into a shallow casserole, and arrange the shrimp on top.
- Pour the rest of the sauce on, and sprinkle crumbled feta over the shrimp.
- Bake at 450 degrees for 10-12 minutes or until prawns are pink and feta is lightly browned.
- Garnish with remaining parsley and serve.

- Preheat oven to 450 degrees.
- Spray the inside of the foil bag with cooking spray and place on a large shallow baking pan.
- Cook the pasta in boiling water for 5 minutes.
- Drain.
- Place the pasta in a large bowl and stir in 1 teaspoon of the oil and the next 7 ingredients.
- Place the orzo mixture in teh foil bag.
- Combine the shrimp and basil.
- Arrange shrimp mixture on the orzo.
- Fold edges of bag to seal.
- Bake at 450 degrees for 25 minutes.
- Cut open the bag with a sharp knife (watch out for the steam) and peel the foil back.
- Drizzle with remaining 1 teaspoon of oil.

- Toss the shrimp in a bowl with 1 tablespoon of the olive oil, 1 of the garlic cloves, the oregano, chili and salt.
- Arrange the tomatoes in a large baking dish. Add the remaining 2 tablespoons olive oil and remaining garlic clove and toss it all around until the tomatoes are coated. Tuck the feta cubes here and there in between the tomatoes.
