CREAMY SHRIMP SCAMPI DIP
This rich, garlicky dip caused a feeding frenzy in the Food Network test kitchen. We've taken a beloved shrimp-and-pasta dish and made it into a creamy, crowd-pleasing appetizer. You can make it ahead to take to a nearby potluck, then ask your host if you can borrow some oven space to quickly bake it.

- Position an oven rack in the top position, and preheat the oven to 375 degrees F.
- Beat the cream cheese, mozzarella, sour cream, mayonnaise, Parmesan, 2 tablespoons of the breadcrumbs and 1/2 teaspoon salt in a large bowl with an electric mixer on medium high until smooth. Cover and refrigerate until ready to add the shrimp.
- Melt 2 tablespoons butter in a large skillet over medium-low heat. Add the shrimp, garlic, 1/4 teaspoon salt and the red pepper flakes, and cook, stirring frequently, until the shrimp just start to turn pink, about 2 minutes. Add the wine, bring to a simmer and cook until the shrimp are pink and cooked through, about 2 minutes (there will be some liquid left in the skillet). Remove the skillet from the heat, and let the shrimp cool completely.
- Meanwhile, mix together the parsley, the remaining 2 tablespoons breadcrumbs and 1 tablespoon melted butter, the lemon zest and a pinch of salt in a small bowl.
- Stir the shrimp, pan sauce and cream cheese mixtures together to combine; transfer to a 2-quart flameproof baking dish. (The dip and breadcrumb mixture can be covered and refrigerated overnight separately at this point.) Sprinkle the breadcrumb mixture over the dip, and bake until hot and bubbly, 15 to 20 minutes. Switch the oven to broil, and cook until the top is golden brown, 1 to 3 minutes. Let rest for a few minutes, then serve hot with bread and/or crackers.

SHRIMP CAKES WITH SCALLION DIP

- Preheat the oven to 400 degrees F. Puree the mayonnaise, parsley, scallion, garlic, 2 tablespoons water, 1 tablespoon lemon juice, 1/2 teaspoon salt and 1/4 teaspoon pepper in a food processor; transfer to a bowl.
- Add half of the shrimp to the food processor and pulse until a thick paste forms. Add the remaining shrimp, 1/2 cup panko, 2 tablespoons of the prepared dressing, the egg and lemon zest. Pulse until combined but still chunky. With oiled hands, shape the mixture into eight 1/2-inch-thick patties. Transfer to a baking sheet; freeze 5 minutes.
- Put the remaining 1/2 cup panko on a plate. Heat the vegetable oil in a large nonstick ovenproof skillet over medium heat. Coat the patties on both sides with the panko; cook until golden, 2 minutes per side. Transfer the skillet to the oven and bake until the patties are cooked through, 5 to 7 minutes.
- Meanwhile, toss the greens, radishes, 2 tablespoons of the dressing and the remaining 1 tablespoon lemon juice; season with salt and pepper. Serve the shrimp cakes with the salad and remaining dressing.

- Combine olive oil, onion and garlic in sauce pan, sautee over med. low heat until tender.
- Add cream, salt, pepper, bring to low simmer for 1 minute.
- Add cheeses and hot sauce. Stip until smooth.
- Pour into greased baking sidh, bake for 15 minutes.

- Mix all ingredients except the shredded cheeses & shrimp (I use a food processor).
- Add Shrimp (diced or process last so it's still in pieces and not puréed). Place mixture in a large bowl and add shredded cheeses.
- Next pour mixture into a large casserole dish (that has been buttered or sprayed with Pam) and add cracker crumbs.
- Bake in a 350°F preheated oven for 20 minutes or until bubbly.
- Let cool completely and serve with crackers.
- Please feel free to use less spices and add more according to your tastes, But we like it SPICY!

- Preheat the oven to 375 degrees F (190 degrees C).
- Heat oil in a skillet over medium-high heat. Saute shrimp in the hot oil with parsley, salt, and pepper until just heated through, 3 to 4 minutes.
- Mix ketchup and horseradish together in a bowl for cocktail sauce, adding more ketchup or horseradish to adjust spiciness. Stir in mayonnaise and mix well. Fold in cooked shrimp until well mixed. Pour into a small, shallow baking dish. Sprinkle bread crumbs evenly over the top of the mixture.
