BAKED SCOTCH EGGS

Baked Scotch Eggs image

The inhabitants of Scotland seem to have a mania for deep fried food; they are notorious for deep frying Mars bars. Scotch Eggs are one of their better efforts in this tradition. However, these are just as good baked and a great deal less greasy.

BAKED SCOTCH EGGS

Baked Scotch Eggs image

These are easy, filling, and can be made a day or two ahead and baked fresh and hot in the morning! My husband freezes any leftovers and pops them in the microwave to reheat and says they're great that way too. I've found that a pound of sausage will cover about 6 medium eggs. My husband tried to stretch it more one time and covered 8 medium eggs with one pound of sausage, but they split when they baked and the exposed egg got burned.

SCOTCH EGGS WITH MUSTARD SAUCE

Scotch Eggs with Mustard Sauce image

Provided by Robert Irvine : Food Network

Categories     main-dish

Time 50m

Yield 6 servings

Number Of Ingredients 13

8 large eggs
2 tablespoons distilled white vinegar
1 pound bulk pork sausage
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh tarragon
Grapeseed or vegetable oil, for frying (about 4 cups)
1 cup all-purpose flour
Kosher salt and freshly ground pepper
1/4 cup milk
1 cup panko breadcrumbs
1/2 cup low-fat mayonnaise
3 tablespoons stone-ground mustard
Juice of 1 lemon

Steps:

  • Place 6 eggs in a medium saucepan and cover with cold water. Add the vinegar and bring to a boil, then remove from the heat, cover and set aside 4 minutes. Meanwhile, fill a bowl with ice water. Using a slotted spoon, remove the eggs and immediately plunge into the ice water to stop the cooking; let sit 2 minutes. Gently peel the eggs and set aside.
  • Combine the sausage, herbs and one of the remaining eggs in a stand mixer fitted with the paddle attachment. Mix on medium speed until combined, about 3 minutes. With moistened hands, mold the sausage mixture around the cooked eggs to completely cover.
  • Preheat the oven to 350 degrees F. Heat about 3 inches of grapeseed oil in a small high-sided saucepan over medium-high heat until a deep-fry thermometer reads 325 degrees F (or until a pinch of panko sizzles in the oil). Season the flour with 1/2 teaspoon each salt and pepper in a shallow dish. Beat the remaining egg with the milk in another shallow dish. Put the panko in a third shallow dish.
  • Roll the sausage-covered eggs in the seasoned flour, shaking off the excess. Transfer to the egg-milk mixture and turn to completely coat. Let the excess egg drip off, then roll in the panko.
  • Fry the eggs until golden brown, about 3 minutes. Remove to a baking sheet, transfer to the oven and bake until the sausage is cooked through, 10 to 12 minutes. Mix the mayonnaise, mustard and lemon juice in a small bowl. Serve with the Scotch eggs.

KICKED UP SCOTCH EGGS

Kicked Up Scotch Eggs image

Provided by Emeril Lagasse

Time 45m

Yield 4 servings

Number Of Ingredients 17

1 1/2 pounds country-style sausage, casings removed and crumbled
1/2 teaspoon cayenne
1/2 teaspoon salt
4 hard-boiled eggs, shells removed
1 cup bread crumbs
Creole seasoning, recipe follows
1/2 cup flour
1 beaten egg
Vegetable oil, for deep-frying the eggs
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme

Steps:

  • In a large bowl combine the sausage, cayenne and salt. Divide into 4 portions and on a sheet of waxed paper, shape each portion into a thin round. Place 1 hard-boiled egg on the sausage round and wrap to enclose the egg, patting gently to smooth the surface. (This step is much easier with wet hands.)
  • Season the bread crumbs with Creole seasoning. Dredge the sausage-wrapped egg in the flour, then dip in the egg and roll in the bread crumbs until well coated. Chill in the refrigerator until ready to cook.
  • In a deep fryer or large heavy skilled, heat 2 to 3 inches of oil to 350 degrees F. Fry the eggs, 2 at a time until golden brown and crisp, about 6 to 8 minutes. Remove with a slotted spoon and drain on paper towels before serving.
  • Combine all ingredients thoroughly and store in an airtight jar or container.

DIJON SCOTCH EGGS

Dijon Scotch Eggs image

This version of Scotch eggs gets an extra kick from Dijon mustard, which is used in both the sausage mixture and the crunchy bread coating. By cooking the eggs to just soft boiled, the yolks remain deliciously creamy.

Provided by Food Network Kitchen

Categories     main-dish

Time 50m

Yield 8 servings

Number Of Ingredients 8

9 large eggs
Canola oil, for deep-frying
One 1-pound package bulk pork sausage meat
1/2 cup Dijon mustard, plus more for serving
1/3 cup fresh parsley leaves, chopped
1/2 cup all-purpose flour
1 cup panko breadcrumbs
Kosher salt and freshly ground black pepper

Steps:

  • Bring a medium saucepan of water to a boil over high heat. Carefully lower 8 of the eggs into the boiling water one-by-one with a spoon and cook for 6 minutes. Prepare a bowl of ice water, then transfer the eggs to the bowl to stop the cooking process; let sit for at least 5 minutes. Carefully peel the eggs and set aside.
  • Meanwhile, fill a large Dutch oven or heavy pot halfway with canola oil and heat over medium-high heat to 350 degrees F.
  • Combine the sausage, 1/4 cup of the mustard and half the parsley in a medium bowl and mix well. Divide the sausage mixture into 8 even balls. Flatten each ball into an oval in your hand, put a peeled egg in the middle of each and wrap the sausage mixture around to completely cover.
  • Put the flour in a shallow dish. Crack the remaining egg into another shallow dish, add the remaining 1/4 cup mustard and beat with a fork until well combined. Put the breadcrumbs in a third shallow dish. Dip the sausage-covered eggs first in the flour, then in the egg mixture, then in the breadcrumbs to coat.
  • Carefully lower the coated eggs one-by-one into the hot oil with a slotted spoon (the oil temperature will drop to around 300 degrees F). Cook, adjusting the heat as needed to remain around 300 degrees F and turning the eggs to ensure even cooking, until golden brown all over and the sausage is cooked through, about 10 minutes. Transfer the eggs to a paper-towel-lined plate. Sprinkle with salt, pepper and the remaining parsley and gently roll the eggs a few times to coat. Cut each egg in half lengthwise and serve immediately with extra mustard.

EASY SCOTCH EGGS

Easy Scotch eggs image

Use a few chef's tricks to create the perfect sausage and egg snack with this step-by-step recipe

Provided by Barney Desmazery

Categories     Main course, Snack

Time 40m

Yield Makes 4

Number Of Ingredients 12

5 large eggs
300g good-quality pork sausage, skinned
1 tsp black peppercorns, crushed
140g cooked ham, shredded
25g sage, apple & onion stuffing mix
1 tsp chopped sage
1 tsp chopped thyme
1 tsp chopped parsley
100g plain flour, seasoned, plus extra for dusting
100g dried breadcrumbs
sunflower oil, for frying
piccalilli, to serve

Steps:

  • Bring a pan of salted water to a rapid boil, then lower four of the eggs into the pan and simmer for 7 mins 30 secs exactly. Scoop out and place in a bowl of iced water, cracking the shells a little (this makes them easier to peel later). Leave them to cool completely, then peel and set aside. Can be boiled the day before.
  • Put the sausagemeat, pepper, ham, stuffing and herbs in a small bowl, mix to combine, then divide into four equal balls. Squash one of the balls between a piece of cling film until it's as flat as possible. One at a time, lightly flour each cooked egg, then use the cling film to help roll the sausagemeat around the egg to completely encase. Repeat with the remaining sausageballs and eggs.
  • Beat the remaining egg and put on a plate. Put the flour and breadcrumbs on two separate plates. Roll the encased eggs in the flour, then the beaten egg and finally the breadcrumbs. Can be prepared up to a day in advance.
  • To cook the eggs, heat 5cm of the oil in a wide saucepan or wok until it reaches 160C on a cooking thermometer or until a few breadcrumbs turn golden after 10 secs in the oil. Depending on the size of your pan, lower as many eggs as you can into the oil, and cook for 8-10 mins until golden and crispy. Drain on kitchen paper, leave to cool a little, then serve halved with some piccalilli.

SCOTCH EGGS, BAKED NOT FRIED!

Scotch Eggs, Baked Not Fried! image

I made these at work today and thought they were pretty tasty. I also liked the fact they were baked, not fried. The bacon was a nice addition too. Prep time includes boiling and peeling the eggs. These can be eaten hot or cold and are nice with a good relish.

BAKED SCOTCH QUAIL EGGS

Baked Scotch Quail Eggs image

I made this out of a few different recipes. I think they are really good, I like them better than original with hen's eggs.

Provided by Tea Girl

Categories     Pork

Time 50m

Yield 12 Scotch egg

Number Of Ingredients 11

12 fresh quail eggs
1 teaspoon vinegar
500 g ground pork
2 teaspoons dried sage
2 teaspoons dried thyme
1 teaspoon chili flakes
salt and pepper
2 tablespoons plain flour
1 medium egg, hens', beaten
2 cups crushed plain corn flakes or 100 g fresh breadcrumbs
1 tablespoon rapeseed oil

Steps:

  • Preheat oven to 200°C (400°F, gas mark 6).
  • Boil water using a kettle or a pan.
  • Carefully put the quail's eggs into a small pan, adding the vinegar. Once the water boils, pour in the boiling water straight away and cook for 2 minutes. Don't do it longer, they will go rubbery!
  • Move the pan to the sink and run cold water over the eggs for 2 to 3 minutes.
  • Tap, roll and very gently peel the shells off them. Sometimes it helps if you do this under cold water. The first couple are hard to do but you'll get the hang of it.
  • Place the pork in a bowl with spices and mix together. Divide the meat into 12 equal portions.
  • Take a piece of the pork mixture and flatten it in the palm of your hand.
  • Place one of the quail eggs in the centre and stretch the pork mixture around to cover the egg completely, then roll between your hands to make an even-shaped ball. Repeat with the remaining eggs and pork mixture to make 12 balls.
  • Place the flour, beaten egg and cornflakes/breadcrumbs in 3 separate shallow bowls.
  • Dip each Scotch egg first in the flour to lightly coat, then in the beaten egg, and finally in the cornflakes/breadcrumbs. Repeat with the remaining eggs and place on a plate until ready to cook.
  • Bake for 20-25 minutes until golden, making sure the pork mixture is cooked all the way through.
  • Can be served hot or cold, goes well with mustard but I think they are tasty enough to skip it.

CHEF JOHN'S SCOTCH EGGS

Chef John's Scotch Eggs image

In my version of Scotch eggs, I keep the egg soft, so when you bite in, you get that amazing contrast in texture between the molten yolk and the crispy sausage shell.

Provided by Chef John

Categories     100+ Breakfast and Brunch Recipes     Eggs

Time 50m

Yield 6

Number Of Ingredients 9

oil for frying
6 cold large eggs
21 ounces bulk Italian sausage
¼ teaspoon dry mustard
1 pinch freshly grated nutmeg
1 pinch cayenne pepper
1 cup panko bread crumbs, or as needed
½ cup all-purpose flour, or as needed
2 eggs, beaten

Steps:

  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
  • Fill a saucepan with 1/2-inch water; bring to a boil. Carefully place cold eggs into saucepan, cover the saucepan with a lid, reduce heat to medium-high, and cook until eggs yolks are soft, about 6 minutes. Remove from heat and pour cold water over eggs to halt the cooking process. Cool eggs to room temperature in cold water; peel and dry eggs on paper towels.
  • Mix sausage, mustard, nutmeg, and cayenne pepper together in a bowl. Shape into 6 equal-size balls.
  • Lay a piece of plastic wrap on a flat work surface. Place 1 ball of sausage mixture into the center of the plastic wrap, fold the plastic wrap over sausage, and flatten into an 1/8-inch thick oval shape. Pull plastic wrap back and place 1 egg in the center of the sausage. Pick up plastic wrap, moisten fingertips, and press sausage around egg to cover completely, sealing sausage around egg. Repeat with remaining eggs and sausage.
  • Place bread crumbs in a shallow bowl. Pour flour into another shallow bowl. Beat remaining 2 eggs in another shallow bowl.
  • Gently press eggs into flour to coat; shake off excess flour. Dip eggs into the beaten egg, then press into bread crumbs. Gently toss between your hands so any bread crumbs that haven't stuck can fall away. Place the breaded eggs onto a plate.
  • Working in batches, cook eggs in the preheated oil until golden, 5 to 6 minutes. Transfer to a wire rack to cool, at least 5 minutes.
