Thanks to Better Homes & Garden Holiday Cooking 1997 for this one. It's the most requested dip recipe in our family. I serve this one with Tostitos Scoops.

8 ounces cheddar cheese, shredded
8 ounces monterey jack cheese, shredded
1 (8 ounce) can whole kernel corn, drained
1/2 cup mayonnaise
1 tablespoon chipotle chile in adobo, finely chopped (optional)
1 (4 ounce) can green chili peppers, chopped
1/4 teaspoon garlic powder
1 fresh tomato, seeded and chopped
1/4 cup green onion, sliced
2 tablespoons fresh cilantro

Steps:

  • In a large mixing bowl stir together cheeses, mayonnaise, corn, chili peppers and garlic powder. (Mixture can be covered and chilled at this point for up to 24 hours).
  • Combine tomato, green onion and cilantro. (Mixture can be covered and chilled at this point for up to 24 hours also).
  • TO SERVE: Bake cheese mixture in an oven-proof dish in a 350° oven about 25 minutes or until heated through.
  • Remove from over and spoon tomato mixture in the center.
  • Serve with vegetable dippers or tortilla chips.

2 cups shredded cheddar cheese
1 cup shredded monterrey cheese
1/2 cup light mayonnaise
1 8 ounce can whole kernel corn, drained
1 4 ounce can chopped green chilies
2 teaspoons adobe sauce
1 medium fresh tomato, chopped
parsley for topping

Steps:

  • In a large mixing bowl combine the first 6 ingredients. Stir until well combined and then place in the refrigerator for at least 2 hours. Preheat oven to 350 degrees F. Place the cheese and corn mixture into a medium sized baking dish. Bake in the oven for 25 minutes and remove. Top with chopped tomato and parsley.

2 cups shredded cheddar cheese (8 ounces)
1 cup shredded Monterey Jack
1/2 cup light mayonnaise dressing
8 oz whole kernel corn (drained can (3/4 cup))
4 oz chopped green chili peppers (drained can)
2 tsp finely chopped canned chipotle chili peppers in adobo sauce
1/4 tsp garlic powder
1 medium tomato (seeded and chopped (3/4 cup))
1/4 cup sliced green onion
2 tbsp snipped fresh cilantro
3-4 cups vegetable dippers such as sweet pepper wedges and sliced jicama
1 bag lightly salted tortilla chips or baked tortilla wedges

Steps:

  • Stir together cheeses, mayonnaise or salad dressing, corn, chili peppers, chipotle chili peppers, and garlic powder in a large mixing bowl. Spread mixture into a 9-inch quiche dish, shallow 1-quart casserole, or 9-inch pie plate. Cover and chill up to 24 hours. Combine tomato, green onion, and cilantro. Cover and chill up to 24 hours.
  • To serve, bake cheese mixture in dish in a 350 degree oven about 25 minutes or until heated through. Spoon tomato mixture in the center. Serve with vegetable dippers and tortilla chips. Makes 28 servings.

1 medium onion, chopped
1 can (14-1/2 ounces) diced tomatoes with mild green chiles, drained
2 garlic cloves, minced
1 package (8 ounces) cream cheese, cubed
1 cup shredded white cheddar cheese
1 cup shredded part-skim mozzarella cheese
1 cup shredded Monterey Jack cheese
1 cup refrigerated Alfredo sauce
1 package (10 ounces) frozen leaf spinach, thawed and squeezed dry
1 tablespoon lime juice
1/2 teaspoon Cajun seasoning
2 tablespoons sour cream
Tortilla chips

Steps:

  • In a large nonstick skillet coated with cooking spray, saute onion until tender. Add tomatoes and garlic; cook 2 minutes longer. Remove from the heat and set aside., In a large saucepan, combine the cheeses and Alfredo sauce. Cook and stir over medium-low heat until cheese is melted, about 10 minutes. Add the tomato mixture, spinach, lime juice and Cajun seasoning. Transfer to a greased 1-1/2-qt. round baking dish., Bake, uncovered, at 350° until bubbly, 25-30 minutes. Dollop with sour cream. Serve with chips.

1 avocado, chopped
1 tomatoes, chopped & seeded
1/4 cup onion, finely chopped
2 tablespoons pickled jalapeno peppers, chopped & seeded
1 garlic clove, minced
1/2 cup sour cream
1/4 cup milk
2 tablespoons mayonnaise
2 teaspoons lemon juice
1/4 teaspoon dried oregano
1/8 teaspoon salt
avocado, slices (optional)

Steps:

  • In a mixing bowl stir together the finely chopped cooked chicken, chopped avocado, seeded and chopped tomato, chopped onion, seeded and chopped pickled jalapeno peppers, and minced garlic.
  • Stir in the sour cream, milk, mayonnaise, lemon juice, dried oregano, and salt.
  • Stir till ingredients are thoroughly combined. Cover and chill till serving time. If desired, garnish the dip with avocado slices.

Cheddar's Santa Fe Spinach Dip is amazing but VERY fattening! I found their recipe and altered it to make is healthier but still cheesey and yummy with a little SW kick! Even my picky- nothing green guy- ate this and loved it!

1 medium onion, chopped fine
1 green onion, diced, to garnish (optional)
16 ounces frozen spinach, thawed and squeezed dry
14 ounces diced tomatoes, drained
1 (4 ounce) can green chilies, chopped
8 ounces low-fat cream cheese, softened- room temp
1 (5 ounce) can fat-free evaporated milk, skim
2 cups monterey jack cheese, grated- low fat is great too
1 cup low-fat parmesan cheese, grated
1 tablespoon balsamic vinegar
3 tablespoons low-fat sour cream
salt and pepper

Steps:

  • Sauté onion in skillet over medium until softened.
  • Add tomatoes and chilies, cook 2 minutes.
  • Squeeze thawed spinach until dry. I use a potato ricer to squeeze it easily.
  • In a large bowl combine spinach, cheeses, cream cheese, milk, vinegar, sour cream, salt and pepper. Stir well. Add the mixture from the skillet and stir just until combined.
  • Spray a shallow baking dish with cooking spray and spoon everything into dish.
  • Bake at 350 degrees for 30 minutes or until top is light brown.
  • Garnish with extra sour cream and green onion if desired.
  • Great with pita chips, tortilla chips or veggie sticks. Also really good as a filling for baked potatoes or a dip with baked potato wedges or fries.

16 ounces cream cheese, softened
2/3 cup freshly grated parmesan cheese
6 tablespoons mayonnaise
10 ounces frozen chopped spinach
2/3 cup shredded monterey jack cheese
1/2 cup canned diced green chiles
2 teaspoons Tabasco sauce
1/2 teaspoon cumin

Steps:

  • Thaw spinach. Drain and squeeze as much of the liquid out of it as you can.
  • Place cream cheese, parmesan cheese and mayo in a mixing bowl. Beat until blended.
  • Stir in the spinach, jack cheese, green chiles, cumin and tabasco sauce. (you may use more tabasco to taste).
  • To Serve immediately:.
  • Spoon into a 1 quart baking dish. Bake at 350 degrees for 20-25 minutes or until brown and bubbly. Serve with chips or crackers.
  • To Freeze:.
  • Line a 1 quart baking dish with foil. Allow the foil to extend over the edges quite a bit. Then line with a piece of plastic wrap that is the same size as the foil.
  • Spoon the dip mixture into the lined pan. Wrap the plastic wrap over the top of the dip to seal. Then do the same with the foil. Place pan in the freezer and freeze until solid. Remove foil/plastic wrapped dip from pan and place in a labeled freezer bag. Freeze until needed.
  • To serve:.
  • Remove from freezer. Unwrap foil and plastic wrap and discard. Place solid dip into original pan you froze it inches Thaw in fridge. (or microwave) Bake in a 350 degree oven for 20-25 minutes. Serve with chips or crackers.

3 oz sun-dried tomatoes (not packed in oil)
2 jar(s) (7-oz. each) roasted red peppers, drained
2 clove garlic, chopped fine
1 1/2 tsp ground cumin
1 tsp fresh lemon juice
1/4 c chopped fresh cilantro
1/4 c chopped green onion
4 oz neufchatel cream cheese
salt and pepper, to taste
tabasco or hot pepper sauce, to taste

Steps:

  • 1. Soak dried tomatoes in hot water for 5 minutes. Drain well, reserving 3 tablespoons of the soaking liquid.
  • 2. In a food processor, puree red peppers, tomatoes, garlic, cumin, lemon juice, cilantro and scallion until smooth and well-blended. Add cream cheese and puree, adding enough of the reserved tomato-soaking liquid to thin the dip to the desired consistency (scraping down the side of the bowl occasionally). Blend until smooth. Blend in salt, pepper and hot sauce to taste. Adjust seasoning, adding more garlic, cumin, or lemon juice if needed.
  • 3. Transfer to a container with a cover. Cover and refrigerate for 24 hours before using. Bring dip to room temperature before serving.

4 ounces fat free cream cheese, softened
1 cup low-fat sour cream
1/2 cup finely chopped green onion
2/3 cup salsa, extra liquid drained
1 ounce taco seasoning

1 teaspoon Splenda sugar substitute
1/4 teaspoon cumin
1 1/2 cups longhorn cheese or 1 1/2 cups colby cheese
