Easy Baked Salmon with Chipotle Peach Salsa! Peach relish and fresh tomatoes combined (salsa) make the perfect accompaniment to bake salmon. It's A healthy dish made all in one pan. Paleo friendly

1 lb wild caught salmon fillet
½ tsp olive oil or avocado oil
1/4 tsp minced garlic
Pinch of sea salt flakes
Crushed Black Pepper, to taste
8 oz yellow or red cherry tomatoes (sliced)
½ lime, juiced
Lime slices for garnish
Chipotle Peach relish/ (or see notes for plain peach salsa)
Fresh torn Cilantro
Red pepper flakes

Steps:

  • Preheat oven to 425F.
  • Make sure to have your Chipotle peach relish made. If not, you can use my homemade peach salsa or a pre-made fruit salsa of choice.
  • Prep your ingredients. Clean your salmon fillet. Slice your tomatoes. Etc.
  • Place your salmon fillet on lined or well oiled baking sheet.
  • Drizzle olive oil on top, then rub the salmon with minced garlic, salt, pepper.
  • Add your sliced tomatoes around the salmon.
  • Squeeze fresh lime on top. Then place 3-4 thinly sliced pieces of lime around the salmon and tomatoes.
  • Bake for 10-12 minutes or until salmon is no longer opaque. Internal temperatures should reach 145F. You may also grill (in foil or skin side down) for 10-12 minutes at 425F.
  • Remove and garnish salmon with Chipotle Peach relish, cilantro, and crushed red pepper flakes. Extra sea salt if desired.

Yield 4 servings: 4 oz. fillet with 1/2 cup salsa each

Number Of Ingredients 6

1 lb. skinless salmon fillets, 1 inch thick, lightly sprayed with non stick cooking spray
3 Tbsp. Mrs. Dash? Original Blend
1/2 cup diced green peppers
1/2 cup diced red peppers
1 cup canned crushed pineapple in juice, drained with juice reserved
1 tsp. finely grated fresh ginger

Steps:

  • 1. Line a small sheet pan with non stick aluminum foil. Arrange salmon on baking sheet. Sprinkle fillets evenly with 2 Tbsp. of Mrs. Dash® Original Blend. Place in preheated 450 degree oven for about 10 minutes or until fish flakes easily.
  • 2. Meanwhile, saute peppers in 1/4 cup reserved pineapple juice until crisp-tender. Add remaining Mrs. Dash® Original Blend, pineapple and ginger. Remove from heat.
  • 3. Arrange salmon on serving plates topped with pineapple salsa.

1 cup butter, cubed
1 cup peach preserves
1 tablespoon lime juice
1 garlic clove, minced
1/2 teaspoon prepared mustard
2 salmon fillets (1 pound each)
1/2 cup chopped peeled fresh peaches or frozen unsweetened sliced peaches, thawed

Steps:

  • In a microwave-safe bowl, combine butter and preserves. Cover and microwave on high for 45-60 seconds. Stir in the lime juice, garlic and mustard until blended. Cool. Set aside 1 cup for basting and serving., Place salmon fillets in a large resealable plastic bag; add remaining peach mixture. Seal bag and turn to coat. Marinate for 20 minutes., Drain and discard marinade. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Place salmon skin side down on grill rack. , Grill, covered, over medium heat for 5 minutes. Spoon half of reserved peach mixture over salmon. Grill 10-15 minutes longer or until fish flakes easily with a fork, basting frequently. Serve with sliced peaches and remaining peach mixture.

I found this in World Jewish Digest by Rachel Burstyn as part of her article "The 411 on an Easy Fast". This was really yummy. Even with a store bought salsa it was still great.

6 salmon fillets
6 pinches sea salt
6 pinches pepper
6 pinches garlic powder
sesame seeds
1 1/2 cups finely diced mangoes (2 mangoes)
3/4 cup finely diced red pepper
3 tablespoons minced red onions
3 tablespoons minced parsley
1/4 teaspoon sea salt
3 tablespoons extra virgin olive oil

Steps:

  • To make the mango salsa: combine all ingredients in a small bowl, and refrigerate for about 20 minutes.
  • For the baked salmon: preheat oven to 400 degrees.
  • Place fillets on a baking sheet lined with parchment paper.
  • Season each fillet with a pinch of salt, pepper, and a large pinch of garlic powder.
  • Cover with seasame seeds.
  • Bake for 10-12 minutes.
  • Serve with mango Salsa.

1 1/2 lbs fresh salmon fillets
5 peaches
3 tablespoons honey
1 tablespoon dry mustard (powder)
1 tablespoon lemon juice
1 teaspoon white pepper
1 teaspoon melted soy margarine
1/2 teaspoon ground ginger
1/2 teaspoon finely grated lemon rind
2 tablespoons brown sugar

Steps:

  • Prepeare grill or preheat broiler. Spray aluminum foil with non-stick oil, then cover grill or broiler pan with foil. Remove any bones in fillets with pliers.
  • Peel peaches and cut into quarters. Dice enough to make 1/4 cup and put into blender, reserving remaining peach quarters. Add honey, mustard, lemon juice, pepper, and margarine to blender and whip until sauce is smooth.
  • In a small bowl, mix ginger, grated lemon rind, and brown sugar.
  • Arrange salmon fillets on grill or broiler with skin side up. Grill or broil 5 minutes, then turn fillets. Baste fillets with sauce. Arrange peach quarters around fillets; sprinkle spiced brown sugar mixture on peaches.
  • Grill or broil another 5 minutes, until inner flesh is light pink.
  • Spoon pan juices over fish.

This is one of my favorite methods for cooking salmon! Baked on a bed of onions and jalapeno peppers and thickly covered with seasoned salsa, the salmon stays moist and tender without giving your kitchen any fishy smell. Even though these nachos don't contain cheese, they're topped with a rich sour cream drizzle which makes them every bit as decadent as real nachos.

2 tablespoons olive oil
⅔ cup salsa
½ teaspoon ground dried chipotle pepper
1 teaspoon ground cumin
½ cup diced red onion
2 medium jalapeno peppers, seeded and thinly sliced
2 (8 ounce) skinless salmon fillets, bones removed
¼ teaspoon salt, or to taste
1 medium avocado, diced
1 teaspoon lemon juice, or to taste
⅓ cup sour cream
1 tablespoon water
3 cups corn tortilla chips
¼ cup chopped cilantro
2 tablespoons minced green onion
1 small lime, juiced

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C). Generously grease the bottom of a 9x13-inch baking dish with olive oil.
  • Combine salsa, ground chipotle, and cumin in a bowl.
  • Sprinkle red onion and jalapenos in an even layer in the bottom of the prepared baking dish. Place salmon filets over top and season with salt. Generously spoon salsa over the filets and distribute remaining salsa over onions and jalapenos.
  • Bake in the center of the preheated oven, until salmon is moist and tender and an instant-read thermometer inserted into the center reads at least 130 degrees F (55 degrees C), about 20 minutes.
  • Meanwhile, toss diced avocado with lemon juice in a small bowl. Thin sour cream with water in another bowl.
  • Divide chips between two serving plates. Spoon onion-jalapeno mixture over top, along with any accumulated juices, then top with avocado, cilantro, and green onion. Place a salmon filet on top of each plate and drizzle with sour cream. Sprinkle with more green onions and serve with lime.

Seal and allow to marinate refrigerated for about an hour. (about the same time that the salsa is marinating in the fridge, perfect!)
  • Take the salmon out of the fridge and top with remaining molasses. Keep the marinade sauce in a separate bowl.

Line a large baking dish or baking sheet with a large piece of aluminum foil or parchment paper. Place salmon skin side down, and brush approx 1 teaspoon avocado or olive oil over each fillet. Coat each fillet with 1-1 1/2 teaspoons of blackened spice rub. Bake for 15 minutes or until salmon easily flakes with fork.
