Time 30m

Number Of Ingredients 10

2-4 petite steaks (*see note)
salt and pepper to taste
garlic powder to taste
1 tablespoon olive oil
2-4 pounds baby potatoes (diced)
2-6 tablespoons salted butter (soft enough to mash with a fork, one tablespoon per steak, plus two tablespoons for the potatoes)
2 teaspoons minced garlic
1 teaspoon dried Italian herb blend
1 teaspoon chopped fresh thyme
1 teaspoon chopped fresh parsley

Steps:

  • Preheat oven to 400 degrees. In a small bowl combine butter, garlic, and dried herbs and set aside. Season steaks generously with salt, pepper, and garlic powder on both sides.
  • Place skillet over medium-high heat and drizzle with oil. Sear steaks for 2-3 minutes one each side until nice and browned. Transfer to a plate and set aside.
  • Add potatoes to the skillet, season generously with salt, pepper, and garlic powder and saute 3-5 minutes until browned. Push potatoes to one side of the pan and return steaks to the other side of the pan.
  • Transfer to oven and cook for 15-20 minutes until potatoes are fork-tender and steak is cooked to your preferred doneness.
  • Immediately after removing from oven, place a dollop of the garlic butter on each steak and the rest on the potatoes and let it melt over the food before stirring the potatoes to coat in butter and then topping with chopped thyme and parsley before serving.

BISTECCA ALL FIORENTINA

Bistecca all Fiorentina image

The classic Bistecca all Fiornentina is a large porterhouse steak that usually weighs about 1 kilo (2.2 pounds). In Tuscan restaurants the steak is offered by the "etto" or in 100 gram (4-ounce) increments. This great steak includes the strip loin and the fillet. When shopping for this dish, use the best meat, gray sea salt, course grind black pepper and the best balsamic vinegar that you can afford. The marriage of flavors from all of these ingredients will reveal a noble meal of authentic Italian cookery. As is true for all steak, to ensure a juicy, flavorful steak that cooks quickly, have the meat at room temperature before starting. Use a grill or thick cast iron pan and make sure that they are very hot. Always let the meat rest, at least 5 minutes, before carving and a sharp knife will glide right through.

Categories     main-dish

Time 1h22m

Yield 4 servings

Number Of Ingredients 5

2 (2-pound) Porterhouse steaks, about 2 inches thick
Grey sea salt
Coarse grind black pepper
Pure olive oil
Great balsamic vinegar

Steps:

  • Let the steak rest outside the refrigerator for 30 minutes before cooking. Use a hot, clean, oiled grill. If pan roasting, preheat the oven to 450 degrees F.
  • Liberally season the steak with the salt and pepper, coat with olive oil and press the seasoning into the meat. Grill the steaks for about 5 to 6 minutes on each side for medium rare. The fillet will cook a little faster than the strip loin. Move the steaks every 2 minutes or so for even cooking and a crispy exterior.
  • For pan roasting, heat a cast iron skillet with a little olive oil until smoking hot. Turn on the fan, open the window and stand back to avoid getting splattered! Using tongs, place the steaks in the center of the pan. Cook until the first side is seared brown, about 4 minutes. Turn the steaks and place the pan in the oven until the steaks are done, about 6 minutes for medium rare. Remove the steaks to a carving board and let rest for at least 5 minutes before carving.
  • Cut the steaks away from the bone and carve into 1/2-inch slices. Arrange the meat on warmed plates and drizzle a little bit of balsamic vinegar over the slices. Serve with some extra gray sea salt on the side.

BAKED STEAK AND POTATOES

Baked Steak and Potatoes image

I only had steak and potatoes on hand and did not feel like driving to the store to pick up any more food. This came out so good! I found a few recipes online that used similar ingredients so that's how I came up with this. Hope you enjoy!

Provided by Stefanie828

Categories     One Dish Meal

Time 1h50m

Yield 2-3 serving(s)

Number Of Ingredients 8

3 steaks, cubed
2 large baking potatoes, cubed
1 -1 1/2 cup balsamic vinaigrette
1/4 cup butter
salt
pepper
onion
garlic

Steps:

  • Preheat oven to 375 degrees fahrenheit.
  • Cube the steak and the potatoes.
  • Place steak and potatoes into large mixing bowl.
  • Season with salt, pepper, garlic, and onion to taste. I use about a pinch of everything.
  • Pour in balsamic vinagerette.
  • Stir everything together and then put into baking dish.
  • Use a baking dish that is large enough that the salad dressing covers the steak and potatoes completely. Otherwise the steak on top will come out hard and the potatoes will not be cooked all the way through.
  • Cook for 1 and 1/2 hours.

Number Of Ingredients 17

1 1/2 lbs stew meat, Beef
6 large baking potatoes
3 tablespoons olive oil
1 tablespoon kosher salt
1 teaspoon cracked black pepper
1/8 cup reduced-sodium Worcestershire sauce
1/4 cup A.1. Original Sauce
1/8 cup water
1/8 cup vegetable oil

1 tablespoon garlic powder
1/2 cup shredded colby-monterey jack cheese
4 tablespoons butter
1/2 cup sour cream
1/2 teaspoon paprika
salt
pepper

  • 3. While potatoes bake, place stew meat in a bowl, and sprinkle with Webers seasoning. Wisk together the Worcestshire sauce, A-1, water and vegetable oil; pour over stew meat and stir.
  • 4. Slice the top 1/8 inch of each potato off, and either save to make potato skins, or discard.
  • 5. Scoop the inside of each potato into a bowl, leaving approximately 1/8 of an inch still intact with the skin. I use an ice cream scooper.
  • 6. Sprinkle the insides of each potato with salt, pepper and 1 Teaspoon of the garlic powder and return to oven to bake.
  • 7. Preheat a deep skillet on high, and add the stew meat mixture, cook just until browned, stirring occasionally.
  • 8. Add the cheese, butter, sour cream, paprika, remaining garlic powder, and salt and pepper to taste to the potato pulp. Mash until smooth consistancy.
  • 9. Put the potato mixture in a pastry bag with a large tip, and set aside.
  • 10. Remove the potatoes from the oven. Turn the temperature up to 425 degrees.
  • 11. Using a slotted spoon, fill the potatoes with the steak pieces. Top each stuffed potato with the potato mixture, piping it up as high as you want, or create a pretty design.
  • 12. Bake topped potatoes for 10-15 minutes, depending on desired well-ness of the steak. Remove from oven, and let stand 2 minutes. Serve and ENJOY!

BAKED POTATO PER LA BISTECCA(FOR THE STEAK)

BAKED POTATO PER LA BISTECCA(FOR THE STEAK) image

Categories     Potato     Side     Bake     Super Bowl     Quick & Easy     Backyard BBQ

Yield all everyone

Number Of Ingredients 4

Russet potatoes, medium size, (1 per steak)
Worcestershire sauce
Extra virgin olive oil
Coarse sea salt(spread onto a paper plate evenly)

Steps:

  • First scrub the potatoes with a vegatable brush under cold water. Dry them with a paper towel and let them stand until the skin is dry. Open the worcestershire bottle and he extra virgin olive oil and keep close(you will understand why shortly). In your left hand(right if your left handed)hold the potato.(If you do it this way you wont get your other hand wet and spicy and get it all over your spice decanters. Use the other hand and sprinkle just enough worcesterhire to rub in the potato. Then pat dry with a paper towel(not too much, just enough to flavor it). Now pour a few drops of extra virgin olive oil on the potato and rub in until wet. Now take the potato and roll over the sea salt on the paper plate, try and pierce the skin,do this until covered. Place directly on the middle rack of a pre- heated oven at 350 degrees. cook for aprox. 45 to 50 minutes or until fork tender.Take out and let stand for 5 to 10 minutes and serve as you like. preferable butter, cheese, sour cream, chives, and bacon bits....etc.
