1 pound dried pinto beans, picked through
1/2 pound bacon, chopped
1 onion, finely chopped
1 tablespoon chili powder
1 tablespoon Worcestershire sauce
4 cups low-sodium chicken broth
Kosher salt
1 tablespoon apple cider vinegar
2 tablespoons chopped fresh chives (optional)

Steps:

  • Put the beans in a large wide pot or Dutch oven and cover with cold water by 1 inch. Bring to a boil, then remove from the heat and let soak 30 minutes; drain and rinse.
  • Return the beans to the pot and add the bacon, onion, chili powder, Worcestershire sauce, chicken broth and 4 cups water. Bring to a simmer over medium-high heat, then reduce the heat to medium and simmer 30 minutes.
  • Add 1 teaspoon salt and reduce the heat to medium low. Cover and simmer, stirring occasionally, 1 1/2 more hours. Partially uncover the pot and continue simmering, stirring occasionally, until the beans are creamy and the liquid is thick, about 30 more minutes. Add the vinegar and chives and season with salt.

1 1/2 pounds pinto beans
2 teaspoons chili powder
1 teaspoon ground cumin
1/2 teaspoon paprika
1/4 teaspoon cayenne
3 thick-cut slices of bacon, cut into thirds
3 cloves garlic
2 bay leaves
1 medium onion, diced
1 red bell pepper, diced
Kosher salt and freshly ground black pepper

Steps:

  • Put the beans in a large bowl, cover with cold water and let soak overnight.
  • Drain and rinse the beans, then put them in a large pot. Cover the beans with water and add the chili powder, cumin, paprika, cayenne, bacon, garlic, bay leaves, onion, bell pepper and some salt and pepper. Bring to a boil, then reduce the heat to low and cook until the beans are tender, 2 to 3 1/2 hours.

1/4 cup finely chopped onion
1/4 cup finely chopped green bell pepper
1 teaspoon chili powder
1 garlic clove, minced
1 tablespoon butter
2 (15 ounce) cans pinto beans, drained and rinsed
1/2 cup chunky salsa
1/2 cup shredded cheddar cheese or 1/2 cup monterey jack cheese

Steps:

  • In a small skillet cook onion, pepper, chili powder and garlic in butter until vegetables are tender.
  • Transfer to a 1 1/2 quart casserole.
  • Stir in pinto beans and salsa.
  • Bake, covered, in a preheated 350 oven for 30 to 35 minutes or until heated through.
  • Sprinkle with cheese.

My family loves this recipe after trying many different ones. When I'm short on time I use canned beans and just add the rest of the ingredients, I cook the bacon up when using canned beans. ENJOY!

1 lb dried pinto bean
4 slices bacon or 4 slices salt pork
salt
pepper
1/2 teaspoon garlic powder
2 quarts water
1/2 teaspoon onion powder
1/2 teaspoon cayenne pepper

Steps:

  • Clean beans and wash well with water.
  • Put beans in large pot, add water.
  • Bring beans to boil and let boil for 1 hour.
  • Check closely, as beans cook, you will probably need to add more water.
  • Run tap water until very hot before adding to beans.
  • Add bacon pieces and cook another 45 minutes.
  • Add spices and reduce heat to low and cook another 20 to 25 minutes.

6 slices bacon
1 cup chopped onion
1 clove garlic, minced
1 (16 ounce) can pinto beans
1 (16 ounce) can great Northern beans, drained
1 (16 ounce) can baked beans
1 (16 ounce) can red kidney beans, drained
1 (15 ounce) can garbanzo beans, drained
¾ cup ketchup
½ cup molasses
¼ cup packed brown sugar
2 tablespoons Worcestershire sauce
1 tablespoon yellow mustard
½ teaspoon pepper

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, reserving 2 tablespoons of drippings, crumble and set aside in a large bowl. Cook the onion and garlic in the reserved drippings until onion is tender; drain excess grease and transfer to the bowl with the bacon.
  • To the bacon and onions add pinto beans, northern beans, baked beans, kidney beans and garbanzo beans. Stir in ketchup, molasses, brown sugar, Worcestershire sauce, mustard and black pepper. Mix well and transfer to a 9x12 inch casserole dish.
  • Cover and bake in preheated oven for 1 hour.

Scoop the bacon bits onto paper towels to drain, spooning off all but 2 tablespoons bacon fat. Add most of the onion to the pan and cook (still over medium) until soft and lightly golden at the edges, 3 to 4 min. Add garlic and cook for 1 min. more. Add the tomato paste, spices, and cook for 1 min. Add the salt and the canned beans. Then add broth.
  • Bring the mixture to a boil and cook for 1 full min. Place a lid on the pot and transfer it carefully to the oven and bake at 190°C/375°F. for approx. 15 min. The beans are done when they’re firm-tender and moist, with most of the liquid absorbed.
  • While the beans are baking, you can also bake the chips. Brush the tortillas lightly with olive oil. Stack them and cut into 6 - 8 wedges. Spread the wedges in one snug layer on a large baking sheet or two (because the beans are baking, you may need to do this in two batches). Season lightly with salt. Bake for 10 min., check for color, and then add more baking time as needed until they’re golden and crisp. Let them cool.
