Make a patty melt with secret sauce next time you're craving some seriously indulgent comfort food! A thin ground beef patty is layered with caramelized onions, two types of melty cheese, and a tangy secret sauce.

1/4 cup mayonnaise
2 tablespoons ketchup
1 tablespoon dijon mustard
1 teaspoon pickle juice
1/4 teaspoon paprika
1/4 teaspoon garlic powder
2 tablespoons olive oil
2 large onions (thin sliced)
12 ounces 85/15 ground beef
1/2 teaspoon salt
1/2 teaspoon pepper
1 teaspoon worcestershire sauce
8 slices rye bread
3 tablespoons unsalted butter
4 swiss cheese slices
4 cheddar cheese slices

Steps:

  • In a bowl, add mayonnaise, ketchup, mustard, pickle juice, paprika, and garlic powder. Mix until smooth. Set aside.
  • In a skillet over medium-low heat, add olive oil. When warm, add onions to pan and cook until softened and deep golden brown, about 25-30 minutes. (If onions begin to dry out or look like they're going to burn, add a splash of water to the pan and reduce the heat slightly.) Remove from heat and set aside.
  • In a bowl, add ground beef, salt, pepper, and worcestershire sauce. Mix to combine and form into four thin, oblong patties (shape patties to match the shape of your bread). In a skillet over medium heat, add patties and cook until browned on both sides. Remove from heat and set aside. Wipe out any excess grease from the pan.
  • Butter one side of each piece of bread. In a skillet over medium heat, layer your sandwiches as so: one slice of bread (buttered side down), one slice of swiss cheese, beef patty, caramelized onions, secret sauce, slice of cheddar cheese, and one slice of bread (buttered side up). Cook until golden brown on the bottom, flip, and cook until golden brown on the opposite side (this should take 1-2 minutes per side).

2 teaspoons Worcestershire sauce
1 teaspoon kosher salt
½ teaspoon ground black pepper
12 slices sourdough bread
½ cup Secret Sauce
3 medium Vidalia onions, thinly sliced
6 slices Cheddar cheese
8 tablespoons unsalted butter

Steps:

  • In a large bowl, combine ground beef, Worcestershire, salt, and pepper. Shape ground beef into 6 oval patties.
  • In a medium cast-iron skillet, melt 2 tablespoons butter over medium heat. Add onion. Cook, stirring occasionally, until onion is soft and golden brown, approximately 35 minutes.
  • In a large cast-iron skillet, cook patties over medium-high heat until browned and cooked through, approximately 2 minutes per side. Remove skillet from heat. Remove patties from skillet; wipe out skillet.
  • Layer 1 bread slice with 1 tablespoon Secret Sauce, 2 to 3 tablespoons caramelized onions, 1 slice cheese, 1 patty, and another 1 tablespoon Secret Sauce. Top with another bread slice. Repeat with remaining bread, Secret Sauce, caramelized onions, cheese, and patties.
  • Heat skillet over medium-high heat. Melt 2 tablespoons butter in skillet. Working in batches, cook sandwiches, flipping once, until golden brown and heated through, approximately 3 minutes per side. Add remaining butter to skillet as needed.

6 tablespoons butter
2 slices rye bread
4 slices American cheese, torn into large pieces
4 slices Swiss cheese, torn into large pieces
Kosher salt
Freshly ground black pepper
1/2 pound freshly ground chuck, formed into two 4-ounce patties, roughly the size and shape of 1 slice bread
1 large onion, split in half, sliced thin from pole to pole (about 2 cups)
1/2 cup water

Steps:

  • Melt 1 tablespoon butter in a 12-inch heavy-bottomed skillet over medium heat until foaming. Add 2 slices bread and swirl around pan using hand or spatula. Cook, swirling occasionally until pale golden brown, about 3 minutes. Transfer to cutting board cooked-side up. Divide American cheese evenly between slices, layering them in the center and leaving a 1/4-inch gap around the edges.
  • Repeat step 1 with remaining bread slices and Swiss cheese.
  • Season hamburger patties on both sides with salt and pepper. Return skillet to heat to high and melt 1 tablespoon butter in skillet until light brown. Swirl to coat bottom of skillet and add both burger patties. Cook without moving until dark brown crust forms on first side, about 1 1/2 minutes, reducing heat to medium if butter begins to burn or smoke excessively. Flip burgers using spatula and cook on second side without moving until crust develops, 1 1/2 minutes longer.
  • Transfer burger patties to plate and reduce heat to medium. Add onions, 1 tablespoon butter, and 2 tablespoons water to skillet. Season with salt and pepper. Cook, stirring constantly and scraping up browned bits from bottom of skillet until water evaporates and onions start to fry and leave brown residue on bottom of pan. Add another 2 tablespoons water and continue to cook. Repeat 2 more times until water is used up and onions are soft and deep golden brown. Add collected juices from meat plate to onions and continue to cook for 30 seconds. Onions should be moist, but not dripping.
  • Divide onion mixture evenly between cheese-topped toast slices. Add burger patties to slices with American cheese and close sandwiches.
  • Add 1 tablespoon butter to skillet. Return to medium heat and cook until butter melts. Sprinkle with salt. Swirl to coat pan and add sandwiches. Cook, swirling sandwiches around pan frequently until deep golden brown on bottom, about 5 minutes. Remove sandwiches from skillet, melt remaining tablespoon butter in pan and sprinkle with salt. Return sandwiches to skillet and cook, swirling frequently until second side is golden brown and cheese is melted. Serve immediately.

3 tablespoons extra-virgin olive oil
2 medium onions, thinly sliced
10 ounces button mushrooms, sliced
Kosher salt and freshly ground pepper
2 teaspoons balsamic vinegar
2 tablespoons plus 2 teaspoons Worcestershire sauce
10 ounces 93% lean ground turkey
6 ounces lean ground beef sirloin
8 slices multigrain bread
8 thin slices Monterey jack or Swiss cheese (2 to 3 ounces)

Steps:

  • Heat 1 teaspoon olive oil in a large nonstick skillet over medium-high heat. Add the onions and cook, stirring, until soft, 2 to 3 minutes. Push to one side of the skillet; add the mushrooms and cook until browned, about 2 minutes. Season with salt and pepper, then mix the mushrooms and onions together and cook until the onions are golden, about 10 more minutes. Add the vinegar and 2 tablespoons Worcestershire sauce. Transfer the mixture to a bowl and keep warm.
  • Meanwhile, mix the turkey, beef and the remaining 2 teaspoons Worcestershire sauce in a bowl. Shape into 4 equal-size oval patties.
  • Wipe out the skillet, add 1 tablespoon olive oil and place over medium-high heat. Season the patties with salt and pepper and cook until browned on the bottom, about 4 minutes. Flip and cook through, 1 to 2 more minutes.
  • Divide the onions and mushrooms among 4 bread slices; top with a slice of cheese, a patty, another slice of cheese and another bread slice. Wipe out the skillet; add 1 tablespoon olive oil and place over medium heat. Cook the sandwiches in two batches until the bread is toasted and the cheese melts, 1 to 2 minutes per side, adding the remaining 2 teaspoons oil as needed.

1/4 cup mayonnaise
4 teaspoons Dijon mustard
2 teaspoons ground caraway
1 1/2 teaspoons kosher salt
Freshly ground black pepper
2 tablespoons unsalted butter
1/2 small onion, sliced
1/2 small red bell pepper, sliced
10 ounces (283 grams) 80/20 ground beef
2 teaspoons Worcestershire sauce
4 slices store-bought frozen garlic, butter and parsley Texas Toast
2 slices Swiss cheese
2 slices yellow American cheese
Ketchup, for serving

Steps:

  • Stir together the mayonnaise, mustard, caraway, 1/4 teaspoon of salt and several grinds of black pepper in a small bowl and set aside.
  • Heat a 2-burner griddle over medium heat. Melt 1 tablespoon of the butter over the surface of the griddle. Add the onions and peppers and season with 1/4 teaspoon salt. Cook, tossing occasionally, until tender and golden, 8 to 10 minutes. Push to one side of the griddle and Scrape the griddle clean.
  • Combine the beef, Worcestershire and 3/4 teaspoon salt in a medium bowl and mix with your hands to combine. Form into 2 oval patties about 1/2 inch thick each, slightly larger than the size of the slices of toast (they will shrink a little as they cook). Season both sides of the patties with the remaining 1/4 teaspoon of salt and a couple cranks of black pepper.
  • Melt the remaining tablespoon of butter on the grill over medium to medium-high heat. Add the patties on one side of the griddle and press to flatten with a metal spatula. Cook, flipping once, until browned and almost cooked through, 2 to 3 minutes per side. Meanwhile, lay the Texas toast down on the other side of the griddle. Toast one side, 1 to 2 minutes, then remove to your cutting board.
  • To assemble, spread the toasted side of 2 pieces of bread with half of the mayo mixture. Add a slice of Swiss cheese to each, then a burger patty. Top with the onion mixture and the American cheese. Spread the remaining mayo mixture on the toasted sides of the last 2 pieces of Texas Toast and top the sandwiches mayo-side down.
  • Set the sandwiches on the griddle over medium low heat. Toast, flipping once, until the cheese is melted and the bread is crisp and toasty, about 3 minutes per side. Cut in half to serve, with ketchup on the side.
