2 red peppers, cored and cut into 1-inch wide strips
2 zucchini, quartered lengthwise and cut into 1-inch cubes
2 summer squash, quartered lengthwise and cut into 1-inch cubes
4 cremini mushrooms, halved
1 yellow onion, peeled and sliced into 1-inch strips
1/4 cup extra-virgin olive oil
1 teaspoon salt, divided
1 teaspoon freshly ground black pepper, divided
1 tablespoon dried Italian herb mix or herbs de Provence
1 pound penne pasta
3 cups marinara sauce (store bought or homemade)
1 cup grated fontina cheese
1/2 cup grated smoked mozzarella
1 1/2 cups frozen peas, thawed
1/4 cup grated Parmesan, plus 1/3 cup for topping
2 tablespoons butter, cut into small pieces

Steps:

  • Preheat the oven to 450 degrees F.
  • On a baking sheet, toss the peppers, zucchini, squash, mushrooms, and onions with olive oil, 1/2 teaspoon salt, 1/2 teaspoon pepper, and dried herbs. Roast until tender, about 15 minutes.
  • Meanwhile, bring a large pot of salted water to a boil over high heat. Add the pasta and cook for about 6 minutes. Since you will be cooking the pasta a second time in the oven, you want to make sure the inside is still hard. Drain in a colander.
  • In a large bowl, toss the drained pasta with the roasted vegetables, marinara sauce, cheeses, peas, 1/2 teaspoon salt, and 1/2 teaspoon pepper. Using a wooden spoon, gently mix, until all the pasta is coated with the sauce and the ingredients are combined.
  • Pour the pasta into a greased 9 by 13-inch pan. Top with the remaining 1/3 cup Parmesan and butter pieces. Bake until top is golden and cheese melts, about 25 minutes.

1 medium onion, chopped
2 1/2 cups (8 oz) penne pasta, cooked and drained
3/4 teaspoon salt

1 jar (24 oz) chunky vegetable pasta sauce
1 cup ricotta cheese
1 egg
2 cups shredded mozzarella or Italian cheese blend (8 oz)

Steps:

  • Heat oven to 350°F. In 5-quart Dutch oven, cook beef and onion over medium-high heat 5 to 7 minutes, stirring frequently, until thoroughly cooked; drain. Stir in cooked pasta, salt, pepper and pasta sauce.
  • In medium bowl, mix ricotta cheese, egg and 3/4 cup of the mozzarella cheese. Spray 13x9-inch baking dish with cooking spray.
  • Spoon half of pasta mixture (about 3 1/2 cups) into bottom of baking dish. Spoon ricotta mixture evenly over pasta mixture in baking dish. Top with remaining pasta mixture; sprinkle with remaining 1 1/4 cups cheese.
  • Spray piece of foil large enough to cover baking dish with cooking spray. Cover baking dish with foil, sprayed side down. Bake 35 to 40 minutes or until heated through and cheese is melted.
  • To Make Ahead: Wrap foil-covered casserole in double layer of plastic wrap; label and freeze up to 3 months. To thaw and bake: Thaw overnight or until completely thawed in refrigerator. Remove plastic. Bake 50 to 60 minutes or until center is hot (165°F) and cheese is melted. To bake from freezer (no thawing): Heat oven to 350°F. Remove plastic. Bake 1 hour 20 minutes to 1 hour 30 minutes or until center is hot (165°F) and cheese is melted.

1 jar (24 ounce pasta sauce (and brand/flavor you like))
8 ounces cottage cheese (low fat is fine)
8 ounces sour cream (low fat is fine)
5 cloves garlic (pressed)
4 cups shredded mozzarella (divided)

Steps:

  • Preheat oven to 375°F.
  • Cook pasta according to package directions then drain well.
  • In a bowl or in the pasta pan, stir together pasta sauce, cottage cheese, sour cream, and garlic. Stir in pasta, then stir in 2 cups of shredded cheese.
  • Spread pasta in a 9x13" baking dish. Sprinkle the remaining 2 cups cheese on top.
  • Bake for 15-25 minutes or until the pasta is hot all the way through and cheese is melted. Serve hot. Store in an airtight container for up to 3 days.

½ lb ground beef
½ medium onion, chopped
1 (24-oz) jar marinara sauce
½ cup sour cream
6 oz sliced Provolone
4 oz shredded or sliced Mozzarella
¼ cup grated Parmesan
chopped parsley

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook until al dente. Drain.
  • Meanwhile, in a large skillet, brown the ground beef. Add the onion and cook until softened. Add the spaghetti sauce and allow to simmer for 15 minutes. Stir in the sour cream. Add the drained pasta and stir to coat.
  • Preheat the oven to 350F. Spray a 2 quart baking dish with nonstick cooking spray. Pour half of the pasta into the baking dish. Top with half of the Provolone and half of the Mozzarella. Pour the remaining pasta on top and top with the remaining Provolone and Mozzarella, and sprinkle the Parmesan on top.

Steps:

  • Cook Pasta: Cook the pasta according to package instructions. Drain and transfer to a large bowl.

  • Make Sauce: Crumble the sausage meat into a large skillet over medium heat and brown, stirring often for about 5 minutes, until it's no longer pink.
  • Add the onion, pepper and continue cooking for another 3 minutes, or until the onion and pepper have softened and the onion is translucent.
  • Stir in the tomatoes, oregano, tomato paste, basil, thyme, fennel seeds, salt and pepper. Add the chicken broth and stir. Bring to a boil, reduce the heat and cook for another 20 minutes, stirring often as needed.

1/2 lb Penne Rigate Pasta
2 cups Ricotta Cheese
1 cup Mozzarella Cheese
3/4 cup Parmesan Cheese
salt and pepper to taste
2 Eggs
1 jar of Marinara Sauce
1/4 cup Parmesan Cheese

Steps:

  • Bring a pot of salted water to a boil.
  • Preheat your oven to 350 degrees.
  • Add your penne rigate to the boiling water. Cook as directed on the packaging for al dente.
  • In a bowl combine the cheeses, eggs and salt and pepper.
  • When pasta is cooked place drained pasta in the base of a pan (heat safe). Pour 1/2 of the marinara sauce on top of pasta. Stir to combine.
  • Scoop your cheese mixture on top of your pasta. Spread evenly. Bake for 18-20 minutes.
  • Pull out from the oven and drizzle the remaining marinara sauce on top and then sprinkle with the 1/4 cup of Parmesan cheese.
  • Place back in the oven and bake another 5-10 minutes.

BAKED PENNE WITH GROUND BEEF AND TOMATO SAUCE

Of course you can use your favorite bottled pasta sauce of your choice to make this recipe, but it is really the sauce that makes this (do not omit the green bell pepper, I also add in a jalapeno pepper, seeded and finely chopped but that is optional) To save some time and to allow the flavors to blend I strongly suggest to prepare the sauce 1-2 days in advance and refrigerate, this sauce freezes well for up to 3 months. Do not over cook the pasta as it will cook even more in the oven...you will *LOVE* this!

  • For the sauce; heat oil in a large pot over medium high heat; add in onion, bell pepper, oregano, basil and chili flakes (if using) sauté for about 5 minutes (adding in the garlic the last 2 minutes of cooking).
  • Add in the tomato paste and stir for about 1 minute.
  • Add in all remaining ingredients; bring to a boil and simmer (UNCOVERED) on low heat for about 1-1/2 hours.
  • Season with salt and pepper then remove the bay leaf.
  • At this point you can cool then refrigerate for up to 2 days.
  • Set oven to 350 degrees.
  • Grease a medium casserole dish (or a 13 x 9-inch baking dish).
  • In a large skillet cook the ground beef until well browned, breaking up with a spoon until crumbled; drain fat.
  • To the skillet add in about 5 cups prepared tomato sauce (more is okay, or just go ahead and use the whole amount of sauce if desired more sauce will never hurt lol!) cook for about 15-20 minutes on medium-low heat.
  • Remove from heat and add in 1-1/2 cups mozzarella cheese; stir with wooden spoon to combine.
  • Add in the cooked penne pasta; toss to combine with sauce and cheese.
  • Transfer to baking dish.
  • Bake for about 20 minutes.
  • Remove from oven and sprinkle with Parmesan cheese then about 1/2 cup (or more) mozzarella cheese, return to oven and cook 5-8 minutes more or until the cheese is melted.
  • Delicious!

This is my version of the classic macaroni and cheese Xea's grandmother makes. Older kids can easily make this by themselves. 1 stick (1/2 cup) unsalted butter
1/4 cup all-purpose flour

I'm a college student living in dorms with very little in the way of money, good cooking equipment, or access to ingredients. Almost everything in this recipe can be substituted for something else. This (and everything else I'll be posting) is really for my own reference and if it helps out other hungry college kids, great. This can be a little salty, but I've found that the other college students I cook for enjoy that. It's a good alternative to ramen and dining hall food, since our dorms have ovens and stove tops. I usually add some fresh hot peppers to this, since I like my food spicy. This recipe isn't likely to be your favorite if you live at home, but for someone on the go or in my situation, it's great because it makes fantastic leftovers.

1 lb penne pasta
1 1/2 lbs ground hot Italian sausage
1 small onion, diced
1 red bell pepper, diced

  • Repeat this until you've used up your ingredients, making the top layer a cheese layer. Make sure the top is totally covered with cheese (if you don't use all the grated cheese, that's fine. I just like a lot of cheese.).

6-8 slices provolone cheese
1 1/2 cups sour cream
3 cups shredded mozzarella cheese (more or less to taste)

1 pound lean ground beef
1 pound bulk Italian Sausage
1 onion, chopped
6-8 garlic cloves, minced
1 28 oz. can crushed tomatoes in puree
1 15 oz. can tomato sauce
2 tablespoons tomato paste
1/4 cup water
2 tablespoons sugar
2 teaspoons beef bouillon
1 TBS EACH dried basil, dried parsley
1 1/2 teaspoons salt
1 teaspoon dried oregano
1/2 tsp EACH dried thyme, pepper
1/4-1/2 teaspoon red pepper flakes

Steps:

  • Cook pasta in salted water according to package directions just until al dente - don't overcook! Strain and rinse with cold water.
  • In a Dutch oven, brown ground beef, sausage and onion over medium heat. Add garlic and cook 30 more seconds. Drain grease. Add all remaining Sauce ingredients and bring to a simmer. Simmer gently uncovered for 15 minutes, stirring occasionally.
  • Meanwhile preheat oven to 350 degrees F. When oven reaches full temperate, mix cooked pasta with Sauce. (We wait to mix so the pasta doesn't continue to cook in the sauce.)
