BAKED CHEESE OLIVES
Rich cheese dough surrounds a savory olive. A great pick-up appetizer or snack. You can freeze the unbaked, dough-wrapped-olives and then bake them right out of the freezer, extending the baking time by a few minutes.

- Preheat oven to 400 degrees F (200 degrees C).
- In a small mixing bowl, combine cheese and butter or margarine. Stir flour and cayenne pepper into the cheese and butter mixture. Blend well. Wrap a tablespoon of dough around each green olive. Arrange the wrapped olives on a cookie sheet.
- Bake for 15 minutes, or until golden brown.

- Preheat oven, if using, to 400 degrees F.
- Lightly coat asparagus spears in extra-virgin olive oil. Season the asparagus with black pepper. Take a quick count of the spear tips. Divide the total number by four. Gather that number of spears and use a slice of bacon to wrap the bundle and secure the spears together. Repeat with remaining ingredients.
- To grill, place bundles on hot grill and cover. Cook 10 to 12 minutes until bacon is crisp and asparagus bundles are tender.
- For oven preparation, place bundles on slotted broiler pan. Bake 12 minutes.

- Meanwhile: In a baking dish, combine together olives, lemon slices and add about 4 rosemary sprigs on top. Finely chop the remaining rosemary sprigs (remove the stems first) and sprinkle over olives. Drizzle with olive oil, and season with freshly cracked black pepper.
- Bake on the middle rack at 400 Fahrenheit (200 Celsius) for about 20 minutes.

- Position the rack in the center of the oven and preheat to 400 degrees F.
- Lightly grease a baking or cookie sheet.
- In a bowl, blend together the cheese, the puree and the butter.
- Blend in the flour, a little at a time, to form a sticky dough.
- Drop by tablespoons onto the prepared baking sheet, and form into patties.
- Press the olives into the centers, and pull the dough up to completely cover.
- Bake for about 15 minutes, or until golden brown.
- Remove from the oven and serve.
