Cheese crisps can be made from most hard cheeses such as Parmigiano-Reggiano, Montasio, and Asiago. They make easy snacks that can be spiced up with dried herbs and spices. By Emeril Lagasse.

3/4 cup shredded hard sheep's milk cheese, such as Bianco Sardo

Steps:

  • Preheat the oven to 350 degrees. Line a baking sheet with a Silpat or parchment paper.
  • Spacing them 1 to 2 inches apart, place 1-tablespoon mounds of the cheese on the Silpat. Place the baking sheet in the oven and cook until the cheese melts and turns golden brown, about 7 minutes.
  • Remove from the oven and set aside to cool on the baking sheet. Use the crisps as a garnish for soups and salads.

1 cup butter
1 - 8 oz package Imperial cheese
Dash of salt
1/4 tsp cayeene pepper or Tabasco (optional)
1/4 tsp Worcestershire sauce
1 1/2 cups flour
4 cups Rice Krispies

Steps:

  • Soften butter and cheese and cream together. Add salt, cayenne anc Worcestershire. Stir in flour and Rice Krispies. Mix well. Shape into balls and press down lightly with a fork which has been dipped in cold water. You can also form into logs; chill and cut into slices. Bake at 350 F (180 C) for 15 to 20 minutes, or until lightly browned. (This recipe does not double well)

I purchased some Maclaren's Imperial Cheese at Costco, which was a super deal, not really knowing what to do with it. I searched the Kraft site for some recipes, but they didn't really have much I wanted to try that was for everyday use. I set out to try my hand at something myself and I hope you like it. My husband, who loves mac 'n cheese, really did.

2 cups elbow macaroni, cooked
6 slices lean bacon, sliced into small pieces
2 cups button mushrooms, quartered
4 tablespoons butter
2 tablespoons flour
1 1/2 cups 1% low-fat milk
1 (385 ml) can 2% evaporated milk
1 teaspoon minced dried garlic
2 tablespoons minced dried onion
1 teaspoon mustard powder
salt & pepper, to taste
0.5 (250 g) container maclaren's cheese, crumbled
1 cup panko breadcrumbs
2 tablespoons butter, melted

Steps:

  • Preheat oven to 350 degrees.
  • Spray a 3 quart dutch oven, or equivalent with non stick spray and set aside.
  • In a medium sized pot, over medium high heat,.
  • fry bacon until just crisp.
  • Drain on paper towel.
  • Set aside.
  • Saute the mushrooms in the remaining bacon drippings until tender.
  • Remove and set aside.
  • Add the butter to the pot and melt.
  • Stir in the garlic and onion.
  • Add the flour and cook for 1 minute.
  • Do not brown.
  • Heat the milk in the microwave on high until hot.
  • approximately 3 minutes.
  • Pour in the milk and whisk smooth.
  • Cook until it starts to thicken.
  • Add the cheese, mustard powder, salt & pepper to taste.
  • Mix until melted.
  • Combine the cooked macaroni, bacon, mushrooms and sauce.
  • Pour into the prepared casserole dish.
  • Toss together the butter and crumbs and sprinkle on top.
  • Bake 30 minutes or until bubbling.

This is a really popular recipe that's gone into 'public domain' on this island and goes really well with a glass of 'cabinet savage' when you're winding down just before dinner. Also it keeps well in an airtight cookie tin or can be well wrapped and frozen for a couple of months.

2 cups all-purpose flour
1/4 lb cold pack aged cheddar cheese
1/2 teaspoon salt
1/4 teaspoon ground celery seed
2 cups crisp rice cereal
1 cup butter
1/4 teaspoon ground black pepper

Steps:

  • Blend butter and cheese in a food processor until creamy.
  • Add flour, one cup at a time.
  • Add seasonings.
  • Remove cheese mixture to a large bowl and mix in the rice cereal, kneading gently if necessary.
  • Place dough on a floured board and roll out to 1/4 inch thickness.
  • Use a plain 2 inch cookie cutter to cut out.
  • Place onto cookie sheet and bake at 325°F.
  • for 20 minutes.
  • For variety you can use other seasonings like cayenne, finely minced onion, chives, itty bits of jalapeño, bacon bits, etc.

1 pound shredded Cheddar cheese
1 cup butter, softened
2 cups all-purpose flour
2 cups crisp rice cereal
½ teaspoon salt
2 dashes Worcestershire sauce
1 pinch garlic powder
¼ teaspoon cayenne pepper
freshly ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine cheese, butter or margarine, flour, crispy rice cereal, salt, Worcestershire sauce, garlic powder, cayenne pepper, and black pepper. Mix well and form small balls out of the dough (the dough will yield approximately 55 balls). Flatten each ball of dough with your fingertips until the dough is very thin and arrange the discs on a cookie sheet.
  • Bake for 12 minutes; or until the Cheese Crispies are golden and slightly brown around the edges. Enjoy!

1 pound Cheddar cheese, grated and room temperature
1 cup unsalted butter, melted
2 cups crispy rice cereal (such as Rice Krispies®)

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • Combine flour, salt, and red pepper flakes in large bowl; add Cheddar cheese. Toss until cheese is coated. Pour in melted butter; stir until mixture is moist and crumbly. Add rice cereal and knead by hand until dough is well blended.
  • Roll dough into small 1/2-inch balls; arrange on a baking sheet. Flatten each ball with a fork.
