16 ounces spaghetti sauce
1 1/2 cups water
3 cups uncooked mafalda pasta (mini lasagna nodles)
16 ounces frozen peppers and onions (stir fry mixture)
1 lb cooked frozen meatballs
2 cups shredded mozzarella cheese
1/4 cup grated parmesan cheese

Steps:

  • In 2 quart glass baking dish, mix spaghetti sauce and water until blended. Add uncooked noodles, stir-fry mixture and meatballs and stir to coat. Make sure noodles are completely covered with sauce mixture.
  • Preheat oven to 350 degrees. Bake casserole, covered, for 45 minutes. Uncover, sprinkle with cheese, and bake uncovered 5-10 minutes longer until casserole is bubbly, noodles are tender and cheese is melted.

14 ounces frozen precooked meatballs (Approximately 27 Meatballs)
24 ounces pasta sauce
2 cups water
1 green bell pepper, Diced
1 onion, Diced
1 tablespoon butter
2 1/2 cups elbow macaroni, Uncooked
1 teaspoon italian seasoning
2 cups shredded mozzarella cheese
1/4 cup shredded parmesan cheese

Steps:

  • Preheat oven to 375 Degrees and Grease a 3 Quart Casserole Dish.
  • Melt the 1 TBSP Butter over medium heat and add the green bell pepper and onion. Cook until tender, approximately 5 minutes.
  • Pour the jar of pasta sauce, the 2 cups of water, the package of frozen meatballs, the 2 1/2 cups of uncooked macaroni, 1 TSP Italian Seasoning directly into the casserole dish. Add the onion and green pepper. Stir all ingredients until combined.
  • Bake covered for 45 minutes at 375 Degrees. Remove from oven after the 45 minutes is up and sprinkle the 2 Cups of Mozzarella and 1/4 Cup of Parmesan Cheese over the top. Place back in the oven uncovered and broil on high for around 3 minutes or until the cheese is bubbly.
  • This will make 4 Huge Servings or 6 Normal Servings. Freezes Well!

Nonstick cooking spray, for the baking sheet and baking dish
1 pound ground chicken
1/2 cup canned pumpkin
1/3 cup grated Parmesan
1/4 cup grated yellow onion
2 tablespoons minced fresh parsley
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 cloves garlic, minced
Kosher salt
One 16-ounce box mezzi rigatoni or mezze penne
One 24-ounce jar marinara sauce
2 cups shredded mozzarella
1/4 cup finely grated Parmesan, plus more for serving

Steps:

  • For the meatballs: Preheat the oven to 350 degrees F. Coat a baking sheet with nonstick cooking spray.
  • Mix together the chicken, pumpkin, Parmesan, onion, parsley, salt, pepper and garlic in a large bowl. Cover and refrigerate 20 minutes.
  • Shape the mixture into balls using a tablespoon and place on the prepared baking sheet. Bake until cooked through, 12 to 15 minutes. Increase the oven temperature to 400 degrees F and spray a 9-by-13-inch baking dish with cooking spray.
  • For the casserole: Meanwhile, bring a large pot of water to a boil. Season generously with salt. Add the pasta and cook 3 minutes less than the package instructions. Reserve 1/3 cup pasta water and drain.
  • Toss the pasta with the marinara sauce and pasta water in a large bowl. Transfer to the greased baking dish. Nestle the meatballs into the pasta. Top with the mozzarella and sprinkle with the Parmesan.
  • Bake until the cheese is melted and bubbly, about 20 minutes. Let stand for 5 minutes. Serve with grated Parmesan.

Kosher salt
1/2 pound thin spaghetti (about 3 1/2 cups cooked)
1 slice white bread, lightly toasted, cut into 1/4-inch pieces
1/4 cup plus 2 tablespoons milk
1/2 pound ground beef
1/2 pound ground pork
6 large eggs
1 cup grated Parmesan
3 cloves garlic, 1 minced and 2 thinly sliced
Freshly ground black pepper
8 ounces part-skim mozzarella, cut into 1/2-inch chunks
4 sun-dried tomatoes, finely chopped
1 cup prepared marinara sauce
1/2 cup chopped fresh parsley leaves

Steps:

  • Preheat the oven to 450 degrees F. Brush a 9-by-13-inch baking dish with oil.
  • Bring a large pot of salted water to a boil. Cook the spaghetti according to the package instructions for al dente. Strain, add back to the pot and toss with some oil.
  • Meanwhile, make the meatballs: Soak the bread with 2 tablespoons of the milk in a medium bowl, tossing occasionally, until completely soft, about 5 minutes. While the bread softens, combine the beef, pork, 1 of the eggs, 1/3 cup of the Parmesan, the minced garlic, 1 teaspoon salt and a few grinds of pepper in another medium bowl. Add the soaked bread to the meat mixture. Gently incorporate all the ingredients with your hands until well combined.
  • Brush a baking sheet with oil, and drop teaspoonfuls of the meatball mixture onto it. Brush your hands with a little oil, roll the mounds into balls and space them out evenly on the baking sheet. Bake until golden brown and almost completely cooked through, about 10 minutes.
  • Lower the oven temperature to 350 degrees F. Add the meatballs, mozzarella and sun-dried tomatoes to the cooked pasta, toss to combine and transfer to the prepared baking dish.
  • Whisk together the marinara sauce, the remaining 5 eggs, 2/3 cup Parmesan and 1/4 cup milk, the sliced garlic and 1 teaspoon salt in one of the empty bowls. Pour the sauce mixture over the spaghetti mixture, and press the spaghetti into a flat, even layer. Sprinkle the parsley over the top. Cover with foil, and bake until the casserole is hot and almost completely set, about 30 minutes. Remove the foil, and continue baking until the top of the casserole is set, about 10 minutes more. Let cool for a few minutes. Cut into squares, and serve warm.

2/3 cup breadcrumbs
1 teaspoon salt

Steps:

2 cups pasta
4 cups water
salt as required
1 tablespoon oil
3 tablespoon butter
6-8 garlic cloves (chopped)
2 teaspoons mixed herbs
1 chicken cube
1 cup water
2 heaped tablespoons all purpose flour
½ cup cooking cream
¼ cup grated (cheese of your choice)
¼ teaspoon pepper
salt as required
½ kg chicken mince
4 garlic cloves (chopped)
2 teaspoons cayenne pepper
½ teaspoon black pepper
2 teaspoons chilli flakes
1 teaspoon dried oregano
2 teaspoons dried parsley
1 tablespoon lime juice
⅛ cup chopped coriander leaves
salt as required
¼ cup breadcrumbs
2 tablespoons cornflour
1 egg
2 -3 tablespoons oil to shallow fry the meatballs
2 tablespoons melted butter
2 eggs
½ cup cooking cream
½ teaspoon chilli flakes
¼ teaspoon pepper powder
1 teaspoon fresh rosemary
6 to 8 slices of cut mozzarella cheese
1 teaspoon mixed herbs

Steps:

  • Put the pasta to boil along with 4 cups of water and some salt. Cook the pasta halfway through. Once done remove from water and put some oil to it and set aside.
  • Put 1 cup of water to boil along with 1 chicken cube. Mix well till no lumps. Switch off the gas.
  • In a pan, on medium heat put the butter and chopped garlic and mixed herbs. Saute well and add the flour to it. Whisk till no lumps for 2 mins. Add the chicken cube and water mixture to it a little at a time. Whisk well while adding. You will notice that the mixture begins to thicken. Add the cream and mix well. Let this cook for another 2 mins. Add the salt and pepper and mix well. Switch off the gas once this mixture is ready and add the grated mozzarella cheese to it. Set it aside to cool a bit and then combine the boiled pasta in it. Using a spatula mix this white sauce mixture and pasta well. Set aside once done.

Steps:

¼-½ cup milk (I used 2%) ((60-120))
½ cup parmesan cheese ((502 grams))
1 pound ground turkey ((1/2 kilo))
1 large egg
1 clove garlic minced
½ teaspoon oregano
¼ teaspoon dried parsley
½ teaspoon salt
1-2 dashes pepper
2 tablespoons olive oil
2 cans pelati tomatoes (nothing added) ((800 grams))
1 teaspoon oregano
1 teaspoon basil (if you prefer you can use 5-6 fresh basil leaves)
¼-½ teaspoon salt
1 clove garlic minced
½-¾ cup water ((59-118 grams))
½ cup shredded firm mozzarella ((42 grams))
¼ cup freshly grated Parmesan cheese ((25 grams))
¼-½ cup white sauce (homemade or store bought)
4 cups cooked short pasta

Steps:

  • FOR THE MEATBALLS
  • Soak the bread in milk for about 2 or 3 minutes, then squeeze out moisture and crumble. In a medium bowl combine the crumbled bread with the ground turkey, parmesan cheese, egg, and spices, mix well. Form the mixture into small meatballs.
  • In a large frying pan add 2 tablespoons of olive oil and brown meatballs on all sides. Remove the meatballs and set aside.
  • FOR THE SAUCE
  • In the same pan add the tomatoes, garlic, spices and water, stir to combine, then add the meatballs and gently combine. Cook until thickened.
  • While pasta is cooking pre-heat the oven at 350F (180C) and lightly grease a medium to large baking dish.
  • While the sauce and meatballs are cooking, cook the pasta a little harder than al dent. Add the drained pasta to the sauce, gently combine, then pour into the prepared baking dish, drizzle with a simple white sauce (bought or homemade). (You can omit the white sauce but believe me it is sooo good with it). Sprinkle with the shredded firm mozzarella and freshly grated parmesan cheese.
  • Bake for about 15-20 minutes. Let sit 5 minutes before serving.

Steps:

  • Prepare mashed potatoes and meatballs: Prepare mashed potatoes as specified in my recipe here. Prepare Italian meatballs including sauce as specified in my recipe here.
  • Prep oven: Preheat the oven to 350°F.
  • Prepare casserole dish: Spray a 9x13-inch casserole dish with a bit of cooking spray (I used my Le Creuset Braiser, link under equipment).
  • Assemble casserole: Layer the mashed potatoes in the bottom of your casserole dish. Arrange the meatballs on top of the mashed potatoes evenly.

4 cups tomato sauce
1 large egg
1 (15 ounce) container part-skim ricotta cheese
2 tablespoons parmesan cheese, grated
1 tablespoon fresh parsley, chopped
1/2 teaspoon salt
1/4 teaspoon . fresh coarse ground black pepper
12 lean meatballs, thawed and sliced
1 cup part-skim mozzarella cheese, shredded

Steps:

  • In saucepot, prepare pasta as label directs in boiling salted water, drain. Return pasta to saucepot.
  • Meanwhile, in 3-quart saucepan, heat tomato sauce, covered, until hot over medium-low heat. (If tomato sauce is frozen, add 2 tablespoons water to saucepan to prevent sorching). Add 3 cups sauce to pasta in saucepot, toss well. Reserve remaining 1 cup sauce.

1 teaspoon Italian seasoning
¼ teaspoon ground black pepper
2 cups shredded mozzarella cheese, divided
1 (28 ounce) jar spaghetti sauce
1 cup water
2 cloves garlic, minced

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Mix ground beef, green onion, bread crumbs, and Parmesan cheese together in a bowl; form into 1-inch meatballs. Arrange meatballs in a baking sheet.
  • Bake in the preheated oven until no longer pink in the center, 15 to 20 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

My kids love meatballs and shell pasta, so we came up with this dish one night - it is a cross between a baked pasta and meatball sub casserole!

1 1/2 lbs prepared frozen or homemade meatballs
1 (16 ounce) box large shell pasta
2 cups ricotta cheese
2 cups shredded mozzarella cheese
1/2 cup sour cream
1 teaspoon italian seasoning
1 (28 ounce) jar prepared spaghetti sauce or 1 (28 ounce) jar homemade spaghetti sauce
grated parmesan cheese, to taste

Steps:

  • Preheat oven to 350°F.
  • Boil pasta according to directions- making sure to not overcook (al dente)!
  • If meatballs are frozen, thaw--I like to brown mine either on the stove or in the oven.
  • Combine the ricotta, sour cream and Italian seasoning- I add an extra dash of garlic and freshly ground pepper.
  • Spray a 9x13 deep baker with Pam.
  • Spread a thin layer of sauce on the bottom of baking pan.
  • Top this with 1/2 of the pasta shells drained.
  • Top with the ricotta mixture.
  • Top with all the meatballs.
  • Then layer with remaining 1/2 of shell pasta.
  • Top with all the sauce.
  • Top with the mozzarella and Parmesan cheese (I just sprinkle a little on top).
  • Bake at 350°F for 30 minutes until heated through and cheese is bubbly!

1 (16 ounce) package ziti pasta
1 ½ pounds frozen cooked meatballs, thawed
2 (28 ounce) jars prepared marinara sauce
1 cup ricotta cheese
1 teaspoon Italian seasoning
1 teaspoon garlic powder
3 cups shredded mozzarella cheese, divided
⅔ cup grated Parmesan cheese, divided

Steps:

  • Bring a large pot of lightly salted water to a boil. Add ziti and cook, stirring occasionally, about 3 minutes less than the package instructions, about 8 minutes. Drain pasta.
  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 13x9 inch baking dish.
  • Heat oil in a skillet over medium heat and cook meatballs until browned on all sides, about 5 minutes. Add marinara sauce and ricotta cheese; mix to combine. Add cooked pasta and mix to combine. Season with Italian seasoning and garlic powder.
  • Cover the bottom of the prepared baking dish with a layer of sauce without meatballs. Sprinkle 1 cup mozzarella cheese on top. Add another layer of sauce with meatballs on top and sprinkle with 1/3 cup Parmesan cheese. Add another layer of 1 cup mozzarella cheese. Add the rest of the sauce and meatball mixture on top, followed by remaining 1 cup mozzarella cheese and 1/3 cup Parmesan cheese. Cover baking dish with aluminum foil.
  • Bake in the preheated oven until cheese is melted, 20 to 30 minutes.
  • Remove foil and bake until cheese starts to turn golden brown, 10 to 20 minutes. Enjoy!
