3/4 cup cornmeal (I used freshly ground corn, but store bought works as well)
1 1/4 teaspoons kosher salt
1/8-1/4 teaspoon freshly cracked pepper
3 cups water
1/4 cup milk
2 tablespoons butter
1/4 teaspoon (optional) dried marjoram (or 1 teaspoon fresh)

Steps:

  • Preheat the oven to 425 degrees. In a covered dish with a lid, whisk together the water, cornmeal, salt and pepper. Cover and bake for 30 minutes*, stirring halfway through.
  • Remove from the oven and add the milk, butter, and marjoram, if desired. Whisk quickly until the polenta is smooth and creamy. Serve immediately. Enjoy!

Vegetable oil, for greasing pan
1 (16-ounce) package instant polenta
1/4 cup extra-virgin olive oil
Sea salt

Steps:

  • Preheat oven to 350 degrees F.
  • Grease an 11 by 17-inch baking sheet pan with oil. Line pan with waxed paper. The oil will secure the waxed paper onto the pan.
  • In a large pot bring to a boil 2 quarts of salted water. Stir in extra-virgin olive oil. When water has reached a boil, reduce heat to medium high and slowly add the polenta, whisking constantly for 3 minutes. When polenta is thick and smooth, pour it into the prepared pan. Spread the polenta evenly.
  • Bake in oven for 15 to 20 minutes. Remove from oven and allow to cool in pan. Note: the polenta will not brown or change in color. When cool enough to handle, cut into any shape you desire. I like to cut out 2-inch circles.

Baked Polenta with Mushrooms & Blue Cheese image

6 large portobello mushrooms (about 1 1/2 pounds), stems discarded
3 tablespoons good olive oil
1 tablespoon balsamic vinegar
Kosher salt and freshly ground black pepper
2 1/2 cups good chicken stock, preferably homemade
2 cups half-and-half
3/4 cup fine cornmeal
1/4 cup imported Italian mascarpone cheese
4 ounces Gorgonzola piccante, crumbled

Steps:

  • Preheat the oven to 400 degrees.
  • Brush the mushroom caps gently with a clean cloth to wipe away any dirt. Arrange them, underside up, on a sheet pan, drizzle with the olive oil and balsamic vinegar, then sprinkle with 1 teaspoon salt and 1/2 teaspoon pepper. Bake for 20 minutes, until tender. Set aside. Lower the oven to 375 degrees.
  • Meanwhile, make the polenta. Pour the stock and half-and-half into a large saucepan and bring it to a boil. Lower the heat and, while whisking constantly, slowly sprinkle the cornmeal into the boiling liquid. Simmer for 6 to 8 minutes, stirring almost constantly with a wooden spoon, until the polenta is thick and smooth. Off the heat, stir in the mascarpone, 1 teaspoon salt, and 1/2 teaspoon pepper. Pour into an 8 x 11 x 2-inch baking dish.
  • Arrange the mushrooms, underside up, in one layer over the polenta. Sprinkle on the Gorgonzola and bake for 25 to 30 minutes, until the polenta is bubbly and the cheese is melted. Sprinkle with salt and serve hot.

LAYERED EGGPLANT AND POLENTA CASSEROLE

Look for precooked polenta logs in the refrigerated section of your grocery store. If using fresh plum tomatoes,, peel them by scoring an X in the bottom with a pairing knife and plunging them into boiling water for several seconds; transfer to an ice bath, and let cool. Slip off and discard peels and seeds. This recipe is for fall weather and the coming of winter - I know I am getting ahead of myself but I want to save this, MarthaStewart.com with some tweaking.

2 tablespoons extra virgin olive oil
1 yellow onion, cut into 1/4-inch slices
4 garlic cloves, minced
2 lbs fresh tomatoes or 2 lbs canned plum tomatoes, peeled and chopped with 1/4 teaspoon coarse salt
1/2 cup sliced mushrooms (use button or cremini)
1 tablespoon balsamic vinegar
1 tablespoon italian seasoning
3/4 cup loosely packed basil leaves, roughly chopped
fresh ground pepper
crushed red pepper flakes
1 1/4 lbs medium eggplants, sliced into 1/4-inch rounds
16 ounces log precooked polenta, sliced into 1/4-inch rounds

Steps:

  • Preheat oven to 400ºF degrees with rack in upper third.
  • In a medium saucepan, heat 1 tablespoon oil over medium heat; add the onion, garlic, and mushrooms cook, stirring, until soft and lightly golden, about 8 minutes.
  • Add tomatoes and salt, and cook, stirring occasionally, until sauce has thickened, about 30 minutes.
  • Stir in vinegar, oregano, basil & Italian seasoning; season with pepper.
  • Remove sauce from heat.
  • Meanwhile, heat a large cast-iron skillet or grill pan over medium heat; lightly brush eggplant slices with the remaining tablespoon oil.
  • Working in batches, lay slices in skillet in a single layer; cook until browned and they begin to soften, 2 to 3 minutes per side.
  • Transfer to a plate.
  • Spoon about a cup tomato sauce into a 9-inch square baking dish, spreading to coat evenly; arrange eggplant slices snugly in a single layer.
  • Spoon about 1 cup tomato sauce over eggplant, and arrange polenta rounds in slightly overlapping slices on top.
  • Repeat with sauce and another layer of eggplant.
  • Finish by dotting with remaining tomato sauce.
  • Cover with foil; bake until bubbling and juicy, about 30 minutes.
  • Remove foil; continue baking until sauce is lightly caramelized and eggplant is tender, about 15 minutes more.
  • Remove from oven; let cool slightly, and serve.

VERSATILE LAYERED POLENTA



Versatile Layered Polenta image

This is a wonderful way to get the flavors of a lasagna with a fun twist by using polenta instead of noodles. This recipe is great by itself but can also be used as a base for any number of your favorite lasagna recipes. Just add the lasagna fillings you usually use (vegetables, meat, squash, etc) between the layers.

2 cups milk
1 1/2 cups water
3 cups cornmeal
1 1/2 teaspoons salt
3 tablespoons butter or 3 tablespoons olive oil
1/2 cup grated parmesan cheese
4 cups soft polenta
2 cups marinara sauce
1 cup grated parmesan cheese
1/2 lb buffalo mozzarella, sliced

Steps:

  • For the Polenta:.
  • Boil the milk and water together.
  • Whisk in the cornmeal and salt. Turn down the heat and stir constantly until the polenta is suspended in the water and no longer settles to the bottom of the pot. It's done in about 15 minutes (still stirring often), but is supposedly even better if you cook it for about an hour - I wouldn't know, I'm always too impatient :).
  • Take of the stove and stir in the butter or olive oil and 1/2 cup parmesan cheese.
  • For the Lasagna:.
  • In a 9x9 baking dish, ladle in 1/3 of the polenta. Spread 1 cup tomato sauce over top of the polenta. Arrange half of the mozzarella on top of that and sprinkle with 1/2 cup of parmesan.
  • Ladle over half of the remaining polenta (1/3 of the original amount) and spread the left-over sauce and cheeses on top.
  • Ladle over the last of the polenta and allow the lasagna to sit for about 30 minutes before baking to let the polenta set.
  • Bake in a 350 degree oven until hot and bubbling, about 30 minutes.

1 container (12 ounces) refrigerated marinara sauce
1 cup shredded mozzarella cheese (4 ounces)

Steps:

  • Heat oven to 375°. Grease rectangular baking dish, 11x7x1 1/2 inches.
  • Cook polenta in salted water as directed on package; stir in oregano. Spread in baking dish.
  • Heat oil in nonstick 12-inch skillet over medium-high heat. Cook zucchini in oil 5 to 7 minutes, stirring occasionally, until crisp-tender. Stir in marinara sauce; reduce heat to medium. Cook about 5 minutes, stirring occasionally, until thickened.
  • Spoon zucchini mixture over polenta. Sprinkle with cheese. Bake uncovered about 30 minutes or until bubbly around edges.

2 quarts stock (any kind) or water
Salt to taste
12 ounces polenta meal

Steps:

  • Butter a shallow 2 1/2- to 3-quart baking dish, and set aside. Place stock or water and salt into a large saucepan, and bring to simmer. Remove pan from heat.
  • Heat oven to 350 degrees. Slowly pour polenta into stock, stirring rapidly with a wooden spoon. Place pan on medium heat. Slowly bring to a boil, stirring constantly in same direction. Boil 5 minutes, continuing to stir.
  • Pour polenta into buttered dish, and cover with buttered foil. Bake for 1 hour. Remove foil and serve.

1 green bell pepper, chopped
¼ teaspoon minced garlic
2 green onions, chopped
1 (14 ounce) jar marinara sauce
¼ cup shredded fontina cheese
¾ cup shredded provolone or mozzarella cheese
1 (16 ounce) tube ready-made polenta, cut into 1/4-inch slices
½ cup grated Parmesan cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly oil a 8x8-inch casserole dish with cooking spray and set aside.
  • Heat olive oil in a saucepan over medium-high heat. Stir in green pepper, garlic, and green onions; cook until the pepper softens, about 3 minutes. Pour in marinara sauce and simmer 5 to 7 minutes, stirring occasionally.
  • Mix together fontina and provolone in a bowl. Spread a thin layer of sauce over the bottom of the prepared baking dish.
