HOMEMADE ITALIAN SAUSAGE
One of my earliest and most vivid food memories was when my uncle Bill would make his famous dried Italian sausage every Christmas Eve. They'd be fried after Midnight Mass and served on bread with roasted red peppers. This fresh version was inspired by those. If you can manage not to eat them right away, letting them dry for a day or two really deepens the flavor, and firms up the texture as well, in true Uncle Billy fashion.

Steps:
- Cut pork shoulder into cubes. Place in a bowl and refrigerate while preparing the other ingredients.
- Grind garlic with a pinch of salt in a mortar to make a paste. Add fennel, anise, and black pepper. Bruise spices lightly with a pestle to release the flavors. Add red pepper flakes, cayenne pepper, oregano, marjoram, coriander, mustard, allspice, sugar, and a splash of water. Stir to combine.
- Add the spice paste to the pork cubes. Mix thoroughly by hand. Add the remaining salt. Cover and refrigerate until flavors meld, 8 hours to overnight.
- Process the cold pork through a meat grinder on the slowest speed.
- Push a casing onto the stuffing tube of your meat grinder. Feed the sausage meat through the filling tray. Run the meat through the casing on the slowest speed until all the casing is used up. Tie casing at the end into a knot. Pinch and twist the meat to create links if desired.
- Place sausage onto a wire rack set over a sheet pan. Refrigerate uncovered for 24 hours.
- Preheat a charcoal grill for medium heat. Separate the links and grill them until browned, about 5 minutes per side.

- Cut sausage into 1/2 inch chunks. I large skillet, brown sausage over medium-high heat, in batches and adding oil if necessary. Transfer sausage to a bowl.
- Pour off any fat from pan. Add onions, garlic and red pepper, cook over medium heat, stirring occasionally, for about 5 minutes or until softened. Stir in pasta sauce, tomato sauce, basil, oregano and fennel seeds; bring to a boil, stirring and scraping up any brown bits from bottom of pan. Return sausage and any accumulated juices to pan; cover and simmer for 15 minutes or until sausage is firm throughout.
- Meanwhile, in a large pot of boiling salted water, cook pasta for 6 minutes, add spinach;cook for 1 minute. Drain well and return to pot. Add sausage mixture and provolone/mozzarella cheese; stir to combine well.
- Transfer to 2 greased 8-inch square baking dishes or 1 13x9-inch dish. Sprinkle with Asiago/parmesan cheese. Cover dish with greased foil, greased side down.
- To serve: Bake, covered with foil, in in 375 degree F. oven for 30 minutes or for 1 hour if from the refrigerator. This freezes beautifully (thaw in refrigerator before baking).

- Preheat oven to 400 degrees F (200 degrees C).
- Heat 2 teaspoons olive oil in a large skillet over medium heat, and cook and stir the sausage until browned. Transfer the cooked sausage to a large baking dish.
- Pour 1/4 cup of olive oil into the skillet, and cook the potatoes, stirring occasionally, until browned, about 10 minutes. Place the potatoes into the baking dish, leaving some oil in the skillet.
- Cook and stir the green and red peppers and onions in the hot skillet until they are beginning to soften, about 5 minutes. Add the vegetables to the baking dish.

- Rinse and cut cherry tomatoes in halves. Rinse and cut bell pepper in strips, then cut into 1 inch bite size chunks. Arrange in a single layer on the parchment paper lined baking sheet.
- Drizzle olive oil then sprinkle Italian seasoning over the vegetables. Toss to coat.
- Preheat your oven to 400 degrees F (205 degrees C) and line a baking sheet with parchment paper (or aluminum foil).

- Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.

- In a skillet, heat 1Tbsp oil over Medium-High heat. Add sausage and cook till no longer pink.
- With slotted spoon, transfer to slow cooker and drain liquid from pan. Reduce heat to Medium.
- Pour remaining oil to pan, add onion and celery and cook vegetables until soft stirring occasionally.
- Add garlic, thyme, salt, pepper and cook 1 minute stirring constantly.
- Add tomato soup, chicken broth and worcestershire sauce.
- Transfer sauce to slow cooker. Cover with lid and cook 8 hours on Low or 4 hours on High.
- Add pasta during last hour of cooking time.
- Add cheese and green pepper and cook on High 20 minutes more until cheese is melted and pepper is heated through.
- For the picture I posted I made this ahead and refrigerated.
- When the meal was due I heated it up 60 minutes 350*oven; added cheese last 15 minutes.

ITALIAN SAUSAGE BAKE
A one pan Italian sausage bake that has you sear the sausage and peppers on the stovetop and then finish baking in the oven to make a hearty yet easy Italian sausage casserole.

- Preheat the oven to 375F.
- In a large skillet over medium high heat, add the oil to the pan.
- Sear the Italian sausage on each side until browned, which will be about 2-3 minutes on each side. The sausage will NOT be cooked through at this point.
- Remove the sausage from the pan and set it aside.
- Add more oil to the pan if needed and then add the bell peppers, onion, garlic salt, and pepper to the pan. Saute until mostly soft, which took about 5-6 minutes.
- Add the sausage back to the pan and nestle it around the onion and peppers mix.
- Sprinkle the Italian seasoning over the top.
- Spread the marinara sauce over the Italian sausage casserole and then sprinkle with the mozzarella cheese.
- Bake for 15+ minutes until the sausage is cooked through and the cheese is melted. To get the crispy cheese appearance, broil the dish for 1-2 more minutes.

- Cook the ziti according to the package directions. Drain well and set aside.
- Cook the sausage links in oil in a large skillet for 15 minutes or until browned over medium heat; reduce heat if necessary to keep them from burning. Drain well on paper towels. Slice the sausage diagonally and set aside.
- Melt the butter in a heavy saucepan over low heat; add the flour, stirring until smooth. Cook for 1 minute, stirring constantly. Gradually add the milk; cook over medium heat, stirring constantly, until the mixture is thickened and bubbly. Stir in 1/4 cup Parmesan cheese, 1 tsp salt, and 1/2 tsp pepper.
