1 10-pound bone-in smoked ham (with water added)
1 1/2 cups packed light brown sugar
1/2 cup clover honey

Steps:

  • Adjust the oven racks to accommodate a large roasting pan. Fit the pan with a shallow roasting rack. Preheat the oven to 350 degrees F.
  • Unwrap the ham and rinse it under cold water. Place it on the rack in the roasting pan. Cover with foil and bake 1 hour 40 minutes. Meanwhile, combine the brown sugar and honey in a saucepan and cook over medium heat until the mixture is smooth and the sugar has dissolved.
  • Pour the brown sugar glaze over the ham and continue roasting1 hour 40 minutes more, basting at least twice with the drippings in the roaster. (To adjust the total roasting time for a smaller or larger ham, calculate 20 minutes per pound.) Check for doneness by inserting a meat thermometer into a meaty spot (not into fat or touching the bone)-it should register 160 degrees F.
  • Let the ham stand 15 minutes before slicing to allow the juices to set. (You can make the ham up to 2 hours ahead; tent with foil and serve at room temperature.)

This ham tastes very much like the famous honey baked ham but costs much less, and there's no need to fight the crowds at holiday time. You can even buy the ham presliced to make it easier and more like the original. It is very good. (I do this while preparing the rest of the meal in the kitchen so that I don't forget to baste!)

1 (5 pound) ready-to-eat ham
¼ cup whole cloves
¼ cup dark corn syrup
2 cups honey
⅔ cup butter

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Score ham, and stud with the whole cloves. Place ham in foil lined pan.
  • In the top half of a double boiler, heat the corn syrup, honey and butter. Keep glaze warm while baking ham.
  • Brush glaze over ham, and bake for 1 hour and 15 minutes in the preheated oven. Baste ham every 10 to 15 minutes with the honey glaze. During the last 4 to 5 minutes of baking, turn on broiler to caramelize the glaze. Remove from oven, and let sit a few minutes before serving.

While ham is traditionally a holiday dish, I like to make this dish for a family get together or just for dinner so I can eat the leftovers in sandwiches and omelets.

1 (7 -8 lb) fully-cooked spiral sliced ham or 1 (7 -8 lb) bone-in ham
10 whole cloves
2 medium red onions, quartered
6 large garlic cloves
4 medium carrots, peeled and cut into 1-inch rounds
2 tablespoons canola oil
kosher salt
1 cup dry white wine
6 -7 slices bacon, cut into small strips
3/4 cup clover honey, divided
2 tablespoons red wine vinegar
1 tablespoon smooth mustard (Dijon)
3/4 cup finely chopped walnut halves, and pieces toasted

Steps:

  • Preheat the oven to 350 degrees F.
  • Prepare the ham: Place the ham on a flat surface, fat side up. "Stud" the surface with the cloves, leaving space between each. Pour 1/4 cup of the honey over the exterior.
  • Cook the ham: Place the ham in a roasting pan fitted with a rack. Drizzle the onions, garlic and carrots with the canola oil and scatter them on the bottom of the pan and pour wine over vegetables. Place the pan in the center of the oven and cook for 1 hour 45 minutes to 2 hours or until a thermometer inserted into the thickest part of the ham registers 155 degrees F.
  • Cook the bacon and honey: Put the bacon in a medium skillet with 1/4 cup water and cook until the water evaporates, 5-8 minutes. Pour off all but 1 tablespoon of the rendered fat and add the remaining 1/2 cup honey and 2 tablespoons of the red wine vinegar. Simmer over medium heat until the honey thickens, 5-8 minutes. The honey will be very hot. Cool. Finely chop 3/4 cup of the walnuts. Stir the walnuts and mustard into the glaze to thicken the texture. Taste for seasoning.
  • Finish the dish: Pour the glaze on the exterior of the ham spreading to cover the surface of the ham. The glaze should help the nuts adhere to the ham. Transfer the ham and the cooked vegetables to a large serving platter.

1 (6 ounce) can frozen orange juice concentrate, thawed
1 3/4 cups water
1/2 cup honey
3 tablespoons cornstarch
1 teaspoon dry mustard
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
cinnamon
1 (7 -9 lb) smoked fully cooked whole boneless ham
1 whole clove
2 oranges, peeled and sectioned

Steps:

  • In a saucepan, combine the first 3 ingredients.
  • Remove 1/4 cup of mixture and combine with cornstarch, stirring until mixture is smooth.
  • Add the cornstarch mixture to the orange juice mixture in the saucepan; stir until smooth.
  • Add in the dry mustard and next 3 ingredients; stir to combine.
  • Cook over medium heat, stirring continually, until the mixture comes to a boil; cook for 1 minute.
  • Remove the cinnamon stick and take the pan off the stove burner and set aside.
  • Score the fat on the ham in a diamond pattern; stud with whole cloves.
  • Place ham, fat side up, on a rack in a shallow roasting pan.
  • Insert meat thermometer; make sure it does not touch fat.
  • Bake, uncovered, in a 325 degree oven for 2 hours or until meat thermometer reads 140­°.
  • After the first hour of baking, baste the ham every 15 minutes with orange-honey sauce.
  • Heat the remaining sauce; add orange sections; serve with ham.

1 cup orange marmalade
1/4 cup lite soy sauce
1/4 cup packed brown sugar
1 fully cooked boneless ham (3 lb.)
1 cup walnut pieces, toasted

Steps:

  • Mix marmalade, soy sauce and sugar. Reserve 1/4 cup for brushing onto ham.
  • Bake ham as directed on label, brushing with reserved marmalade mixture the last 20 min. Meanwhile, bring remaining marmalade mixture to boil in saucepan on medium heat, stirring occasionally. Stir in nuts.
  • Slice ham. Serve with marmalade sauce.
