Curried Almonds image

Toasty almonds tossed with Madras curry powder are perfect for snacking or topping salads.

Provided by Food Network Kitchen

Yield about 2 cups

Number Of Ingredients 5

Vegetable oil, for the baking sheet
3 tablespoons sugar
1 tablespoon Madras curry powder
1 large egg white
2 cups salted roasted almonds

Steps:

  • Preheat the oven to 250 degrees F. Lightly oil a rimmed baking sheet.
  • Whisk together the sugar, curry powder and egg white in a medium bowl until thoroughly blended and slightly foamy. Add the almonds and toss to coat evenly. Spread on the prepared baking sheet and bake for 45 minutes, stirring every 15 minutes. Nuts will be fragrant and slightly darker but still a bit moist. They will continue to crisp as they cool.
  • Cool completely on the pan. Nuts will keep in an airtight container for up to 5 days.

1 box (10 oz.) plain couscous
1/2 c almonds, slivered
1/2 c golden raisins
1 tsp curry powder
1/4 tsp salt
1 Tbsp butter
2 c plus 2 tablespoons water

Steps:

  • 1. Toast the almonds: Place single layer of nuts in skillet. Over medium low to medium heat, stirring constantly, toast until golden and fragrant.
  • 2. In a saucepan, add the water, butter, raisins, curry powder and salt. Bring to a boil and add couscous. Stir and cover with lid. Remove from heat. After 5 minutes, remove lid and add toasted almonds. Stir until combined. Enjoy!

2 tablespoons curry powder

1 teaspoon salt
1 pound raw, unblanched almonds
1 tablespoon butter

Steps:

  • Preheat oven to 375 degrees F. Whisk egg white with spices. Add almonds and stir to coat. Put butter on a large cookie sheet and melt in the oven.
  • Spread coated almonds on cookie sheet and return to oven for 20 minutes or until lightly toasted, turning almonds now and then to prevent sticking and to even out toasting. Allow to cool thoroughly before storing.

1 tablespoon Sauvignon Blanc
1 teaspoon Madras curry powder
1 cup grapeseed oil
1 cup whole almonds
1 teaspoons extra-virgin olive oil
Zest of 1 lemon
Salt and freshly ground black pepper

Steps:

  • Bring the Sauvignon Blanc to a boil in a small saucepan to cook off the alcohol. Add the curry powder, and continue cooking for 10 to 15 seconds. Set aside, and let cool.
  • Heat the grapeseed oil in a heavy-bottomed pot until it registers 325 degrees F on a candy thermometer; add the almonds, and fry for 3 minutes. Carefully transfer the almonds to the saucepan with the curry mixture, and toss to coat. Add the extra-virgin olive oil, and season with salt, pepper and the zest.

2 green chillies , roughly chopped
100g ground almonds
thumb-size piece ginger , grated
4 garlic cloves
200ml single cream
2 tbsp vegetable oil
1 onion , finely chopped
3 cloves
2 cardamom pods
1 cinnamon stick
4 tsp garam masala
12 skinless, boneless chicken thighs
100g full-fat natural yogurt
20g pack coriander , chopped
naan bread or basmati rice, to serve

Steps:

  • Heat oven to 180C/160C fan/gas 4. Whizz the chillies, almonds, ginger, garlic, cream and 300ml water to a paste.
  • Heat the oil in a large, deep ovenproof casserole and add the onion, cloves, cardamom, cinnamon and 2 tsp garam masala. Fry, stirring for 1 min, then add the paste. Bring to a simmer and season with salt. Add the chicken, turning each thigh to coat it, then bring back to a simmer. Blob the yogurt over the top.
  • Bake in the oven for 40 mins or until the chicken is cooked through (spoon any excess fat from the surface). Sprinkle with the remaining garam masala and the coriander. Serve with naan or rice.

1 medium onion, finely chopped
3 cloves garlic, finely chopped
3 tablespoons olive oil
7 teaspoons curry powder
2 cups long grain white rice
3 1/4 cups chicken broth
1 teaspoon salt
3/4 cup raisins
2/3 cup slivered almonds, toasted
1/2 cup chopped dried apricot

Steps:

  • In a large saucepan, cook onion and garlic in oil over moderately low heat, stirring, until softened.
  • Add curry powder and rice and cook,stirring, for 1 minute.
  • Add chicken broth and salt.
  • Boil, uncovered, without stirring, until surface of rice is covered with steam holes and grains on top appear to be dry, about 8 minutes.
  • Reduce heat to as low as possible.
  • Cook,covered,about 10-15 minutes more.
  • Remove from heat.
  • Let stand 5 minutes.
  • Stir in raisins, apricots and almonds and serve.

3 1/2 cups almonds (1 lb or 500 g)
1 tablespoon extra virgin olive oil (15 ml)
2 teaspoons coarse sea salt (10 ml) or 2 teaspoons flake sea salt (10 ml)
1 1/2 teaspoons ground cumin or 1 1/2 teaspoons curry powder

Steps:

  • Preheat oven to 325°F.
  • Toss all ingredients together in a large bowl.
  • Line a baking sheet with parchment paper or foil.
  • Roast almond mixture until lightly toasted and skins are just beginning to split (about 20 minutes).
  • Let cool.
