Baked in the oven, these crispy potatoes are golden perfection with some garlic and chunks of onion, and cleanup is a breeze.

2 tablespoons olive oil
2 tablespoons butter
3 pounds baking potatoes (russet or Idaho )
1 large onion
3 large cloves garlic
1/2 teaspoon kosher salt, or to taste
1/2 teaspoon freshly ground black pepper, or to taste
2 tablespoons fresh parsley, minced

Steps:

  • Gather the ingredients. Position the rack in the lower part of the oven. Preheat the oven to 450 F.
  • Combine the oil and butter in a large, rimmed baking pan . Place the pan in the oven until the butter has melted.
  • Peel the potatoes and cut them into 1-inch cubes or small wedges.
  • Peel the onion and cut it in half. Cut each half into 4 chunks.
  • Mince the garlic.
  • Arrange the potatoes, onion chunks, and garlic in the pan, and stir lightly to coat with the butter and oil.
  • Roast the potatoes in the preheated oven for about 1 hour, or until golden brown and crispy. Stir occasionally.
  • Sprinkle with salt and pepper as desired.
  • Toss the potatoes with the minced parsley just before serving. Serve as a side with your choice of protein and enjoy.

5 pounds red potatoes, thinly sliced
1 onion, finely chopped
6 slices bacon, chopped
½ cup butter, diced
salt and pepper to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease a 9x13 inch casserole dish.
  • Place potatoes in an even layer in greased dish. Sprinkle onion and bacon over potatoes, then dot with butter. Cover dish with foil.
  • Bake in preheated oven for 45 minutes. Remove foil and stir potatoes. Turn oven to broiler setting and allow potatoes to brown for approximately 5 minutes, until crispy. You may need to stir every minute or so to achieve even browning. Serve immediately.

I made this side last night from a Rachael Ray recipe. I've tweaked it a little based on my initial experience. It's super fast and easy. Any other ideas on how to tweak more would be great!

4 large idaho baking potatoes, scrubbed
3 tablespoons olive oil
5 sprigs fresh rosemary, finely chopped
1 teaspoon crushed red pepper flakes
3 garlic cloves, cracked
salt and pepper, to taste

Steps:

  • Heat oven to 550 degrees (or as high as your oven goes).
  • Halve each potato, then cut each half in 5 slices lengthwise. Place on a baking sheet and drizzle the olive oil over them, work the potatoes around in the oil until evenly coated.
  • Season with the rosemary, salt, pepper and red pepper. (I recommend LOTS of salt and I'm not big on super salty foods.) Throw the garlic cloves on the sheet with the potatoes.
  • Roast 25 minutes. Make sure to turn them all once at the halfway point or they will end up sticking to the baking sheet.

3 medium russet potatoes, about 1 1/2 pounds, scrubbed and dried
3 tablespoons extra-virgin olive oil or a neutral tasting oil
2 teaspoons kosher salt
Pinch cayenne, optional

Steps:

  • Preheat the oven to 450 degrees F.
  • Leaving peel on, cut the potatoes into 6 lengthwise to make long wedges, about 3/4-inch to 1-inch wide. Combine the potatoes, oil, salt and cayenne on the baking sheet and toss to combine. (1 less bowl to wash) Arrange the potatoes on a baking sheet in a single layer, so a cut side is in contact with the pan, but evenly spaced so the potatoes aren't touching each other. Bake until golden brown and cooked through, about 30 minutes. Slip a spatula under the potatoes to turn them over and cook for 5 minutes more.
  • Transfer potatoes to a serving dish and serve immediately.

4 red potatoes
1 tablespoon olive oil
1 onion, chopped
1 green bell pepper, seeded and chopped
2 tablespoons olive oil

¾ teaspoon paprika

Steps:

  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool cut into 1/2 inch cubes.
  • In a large skillet, heat 1 tablespoon olive oil over medium high heat. Add onion and green pepper. Cook, stirring often, until soft; about 5 minutes. Transfer to a plate and set aside.

They always made extra baked potatoes so that they could use them for home fries the next morning. I discovered that that was the "secret" to having flaky, crispy home fries. Very easy to make.

2 large baking potatoes, skins on
1/4 cup onion, diced
2 tablespoons butter
salt and pepper, to taste

Steps:

  • Thoroughly wash potatoes and pierce with a fork. Microwave at baked potato setting until done.
  • Slice potatoes as thinly as possible. Put onions and butter in large skillet on medium heat and cook until onions are translucent.
  • Add potatoes and continue frying until the potatoes are browned around the edges. I like some of my potatoes to be on the crispy side. Season with salt and pepper.
  • This is also a great way to use up left over baked potatoes. You could also add some chopped green pepper to the potatoes. If you are going to add green peppers, cook these with the onions before adding the potatoes.
