This easy Fish Florentine recipe, made with a pan seared firm white fish served on a creamy bed of spinach feels like something you would order out in a fancy restaurant!

4 5 oz thick pieces of skinless white firm fish fillet (such as grouper, bass or halibut)
1 tablespoons extra virgin olive oil
1 tablespoon salted butter
1 cup red bell pepper chopped
2 cloves garlic minced
9 ounces fresh baby spinach (from two bags)
2 ounces 1/3 less fat cream cheese (I like Philadelphia)
¼ cup half & half cream
3 tablespoons grated Parmesan cheese
kosher salt
fresh black pepper

Steps:

  • In a large skillet over medium heat add 1/2 tablespoon of olive oil and 1/2 tablespoon of butter, red bell pepper and garlic and cook for about 4 minutes.
  • Add spinach season with a pinch of salt and pepper mix until the spinach wilts down.
  • Add cream cheese, half & half and parmesan cheese mix well until cream cheese is melted and resembles creamed spinach.
  • Heat a separate skillet on medium high heat, add remaining oil and butter.
  • Season fish on both sides with salt and pepper and place on the hot pan.
  • Cook 6 minutes on first side and flip fish over and cook other side an additional 5 minutes, until cooked through and browned.
  • Divide the spinach mixture on the bottom of each plate and top with piece of fish.

1/3 cup Private Reserve Greek extra virgin olive oil
1 small red onion, finely chopped
2 large tomatoes, diced (3 cups diced tomatoes. Use quality canned tomatoes, if you like)
10 garlic cloves, chopped
1 1/2 tsp organic ground coriander
1 tsp all-natural sweet Spanish paprika
1 tsp organic ground cumin
1/2 tsp cayenne pepper (optional)
1 1/2 tbsp capers
Salt and pepper
1/3 cup golden raisins
1 1/2 lb white fish fillet such as cod fillet or halibut fillet (wild, if possible)
Juice of 1/2 lemon or more to your liking
Zest of 1 lemon
Fresh parsley or mint for garnish

Steps:

  • Prepare the tomato and capers sauce. In a medium saucepan, heat extra virgin olive oil over medium-high heat until shimmering but not smoking. Add onions, cook for 3 minutes until it begins to turn gold in color, tossing regularly. Add tomatoes, garlic, spices, pinch of salt (not too much) and pepper, capers, and raisins. Bring to a boil, then turn heat down to medium-low and let simmer for 15 minutes or so.
  • Heat oven to 400 degrees F.
  • Pat fish dry and season with salt and pepper on both sides.
  • Pour 1/2 of the cooked tomato sauce into the bottom of a 9 1/2" x 13" baking dish. Arrange the fish on top. Add lemon juice and lemon zest, then top with the remaining tomato sauce.
  • Bake in 400 degrees F heated-oven for 15 to 18 minutes or until fish is cooked through and flakes easily (do not over-cook). Remove from heat and garnish with fresh parsley or mint to your liking.
  • Serve hot with Mediterranean grilled zucchini, Greek potatoes, or Lebanese rice. (See other suggestions for sides or salads up in the post)

1 teaspoon garlic powder
4 fish fillets (6 ounces each) - (sole, cod, tilapia or red snapper)

2 tablespoons soy sauce
2 tablespoons rice wine vinegar
1 teaspoon toasted sesame oil
1/2 teaspoon red pepper flakes
2 teaspoons sugar

Steps:

  • Spray a large rimmed baking pan (18 x 12-inch) with nonstick cooking spray.
  • On the baking sheet, toss the spinach and mushrooms (if using) with 2 teaspoons of the canola oil and 1/2 teaspoon of the garlic powder.
  • Place the fish fillets over the spinach and rub them with the remaining 2 teaspoons of the oil and sprinkle evenly with the remaining 1/2 teaspoon garlic powder and salt to taste.
  • Place the pan on the bottom rack of the oven and turn the oven to 400F degrees. Bake until the fish is opaque and the spinach has wilted, 15 to 18 minutes.
  • While the fish is baking, stir together the sauce.
  • In a small bowl, whisk together the soy sauce, rice wine vinegar, toasted sesame oil red pepper flakes and sugar, until it is well blended.

1 pinch garlic powder, or to taste

4 (5-ounce) sea bass fillets (or other white fish)
1 small onion, diced
1/2 cup white wine
1 cup canned low-sodium diced tomatoes, with juice

1/4 teaspoon dried crushed red pepper, optional
2 cups packed fresh baby spinach leaves

Steps:

  • In a large nonstick skillet, heat 2 teaspoons of oil over a medium-high heat. Add fish and cook until opaque in the center, about 2 1/2 minutes per side. Transfer the fish to a platter and tent with foil to keep the fish warm.
  • Heat the remaining 2 teaspoons of oil in the same skillet; add onion and saute for 2 minutes. Add the wine and cook until reduced by half, about 2 minutes. 2 pounds of cleaned fish (around 4 IE: haddock, cod, halibut, snook, walleye, flounder seabass)
2 plum tomatoes thinly sliced
1 package fresh (or if you use frozen spinach drained and water squeezed out blotted with paper towels)
5 tablespoons grated cheese
Italian flavored breadcrumbs
1/2 cup white wine
extra virgin olive oil around 1/4 cup divided
2 cloves finely minced garlic
1/2 teaspoon oregano, garlic powder, cayenne pepper, salt, pepper parsley
3 tablespoon butter
freshly squeezed lemon or serve with wedges and freshly chopped Italian parsley

Steps:

  • In a large frypan saute fresh or frozen spinach in 2 tablespoons of olive oil.
  • Add minced garlic.
  • Saute until 2 minutes do not brown.
  • In a large pie plate add spinach.
  • Put a layer of sliced tomatoes.
  • Top with haddock or cod, add more sliced tomatoes.
  • Sprinkle generously with bread crumbs all over the top, add all herbs, ending with grated cheese.
  • Note: for a spicier fish, sprinkle the top with red pepper flakes to taste after baking.

  • If the breadcrumbs aren't crispy broil them for 2 minutes.
  • Garnish with lemon wedges or squeeze some on top.

2 pounds Captain's cut cod fish filet (two fillets each one pound)
½ teaspoon kosher salt
¼ teaspoon white pepper
2 tablespoons extra virgin olive oil, plus more for drizzling over the finished dish
1 cup shallots, sliced
1 medium clove fresh garlic, minced
1 8-ounce container cherry tomatoes cut in half
2 teaspoons fresh thyme removed from stem, or 1 teaspoon dried thyme
1 teaspoon dry oregano
Few grinds fresh nutmeg
8 ounces baby spinach
8 ounces feta cheese, crumbled
1 lemon, cut into six wedges for serving

Steps:

  • Preheat oven to 350 degrees F.
  • Spray a foil-lined sheet tray with non-stick cooking spray.
  • Check the cod for pin bones by running your fingers over the top one way then the other. If you find any, remove with tweezers.
  • Place the cod face up in the prepared pan. The bottom of the fish is where the skin was attached and is darker than the white top. Sprinkle on the salt and pepper.
  • In a large saute pan, heat 2 tablespoons of the olive oil over medium heat and once hot, add the shallots and cook for three minutes until soft and lightly browned.
  • Add the garlic and tomatoes along with the thyme, oregano and nutmeg and cook for three more minutes.
  • Add the spinach and cook until the spinach is wilted, about two more minutes.
  • Spread the vegetable mixture over the fish and top with the crumbled feta cheese and bake uncovered until the fish is cooked and begins to flake, about 20 minutes.
  • Place under the broiler for two minutes to slightly brown the top of the feta. This gives it a nice crunchy and chewy texture.
  • Remove and serve with a little olive oil drizzled over each serving along with a lemon wedge on the side.

4 6oz salmon fillets, skin on and patted dry
salt
pepper
3 TB butter
4 cloves garlic, minced
1 1/2 c. cherry tomatoes, halved
2 c. fresh baby spinach
1/2 c. heavy cream
1/4 c. Parmesan cheese, grated
1 TB chopped Italian parsley
4 leaves fresh basil

Steps:

  • Place the olive oil in a large skillet over medium high heat. Sprinkle salt and pepper over both sides of the salmon. When the oil is shimmering, place one salmon fillet skin side down and gently press on the top with a flexible spatula to keep the salmon from shrinking for 15-20 seconds. Repeat for every fillet. Reduce heat to medium and cook all of them for 6-8 minutes, or until the salmon changes color (gets paler) about two-thirds up the sides for an internal temperature of 120°F. Flip and cook for another 60 seconds. Remove to a plate and set aside.
  • Add butter and deglaze the pan (scrape up brown bits from the salmon, if any). Add the garlic and saute for about 1 minutes, or until the garlic is fragrant and not burned. Add the cherry tomatoes and simmer for 5 minutes, or until the tomatoes start to burst. Stir in the spinach and cook for 1 minute, or until wilted.
  • Stir in the heavy cream, Parmesan and Italian parsley. Reduce heat to low and simmer for 3-5 minutes. Place the salmon back in the skillet and garnish each with a leaf of fresh basil. Spoon the sauce on top and cook for 2-3 minutes. Serve immediately on a bed of lemon rice or roasted veggies.

4 Ears fresh corn, cut from the cob
1 pint Cherry or grape tomatoes, halved
¼ cup Chopped fresh parsley
2 teaspoons Cajun seasoning
2 tablespoons Olive oil
Salt and Pepper
4 12 x12 pieces of heavy duty foil

Steps:

  • Preheat oven to 400º. Lightly spray the foil and place 2 cups spinach on each piece of foil. Sprinkle 1/4 tablespoon minced garlic over the spinach, add a little salt and pepper, and drizzle with ¼ tablespoon olive oil.
  • Place the fish fillets on top of the spinach and sprinkle each with ½ teaspoon Cajun seasoning.
  • Stir together the corn, tomatoes, and parsley and spoon over the fish fillets. Sprinkle with salt and pepper and drizzle with ¼ tablespoon olive oil.

2 tbsp olive oil, divided
1 medium onion, chopped
2 tsp minced garlic, divided
1/2-1 tsp crushed red pepper, (to taste)
2 tsp fresh rosemary, finely chopped (optional)
2 15 ounce cans petite diced tomatoes
2 15 ounce cans cannelini beans, rinsed and drained
10 ounces fresh baby spinach leaves, washed and dried
salt and pepper
1 1/2 pounds firm white fish (4 fillets) patted dry and seasoned with salt (see notes) and pepper
fresh parsley and lemon to garnish
1 lemon, juiced

Steps:

  • In a very large, deep skillet with a lid or a dutch oven, heat 1 tbsp. olive oil. Add onion and 1 tsp. garlic. Saute until onion is translucent. Be careful to not burn the garlic.
  • Add crushed red pepper and rosemary if using. Stir.
  • Add diced tomatoes and cannelini beans. Stir. Cover the pan, and reduce heat to simmer while cooking the fish.
  • In a large saute pan on medium-high heat, add remaining tablespoon olive oil and the remaining teaspoon of garlic. Give it a good stir. When garlic is sizzling, add fish fillets to the pan.

1 flat anchovy fillet
4 (7-oz) lemon sole fillets
5 oz baby spinach

  • Make sauce:
  • Cook garlic in 2 tablespoons oil in a 2-quart flameproof gratin dish over moderate heat (on stovetop), stirring until softened (but with no change in color), 1 to 2 minutes. Add wine and boil until reduced by half, about 3 minutes. Add tomatoes with juice, breaking them up with a spoon, and gently simmer, stirring occasionally, until thickened, about 20 minutes. Add sea salt and pepper to taste and remove from heat.
  • Prepare fish while sauce simmers:
  • Preheat oven to 400°F.
  • Pulse olives, basil, and anchovy to a coarse paste in a food processor (or finely chop with a knife). Add 2 tablespoons oil and pulse to combine.
