The best part of this recipe is the bold tasting sauce. With a food processor, it's also very easy. It is adapted from "Food Processor Cookery", which (I think) is the cookbook that came with my food processor many years ago.

4 slices dry bread
1/4 teaspoon salt
1/4 teaspoon fresh ground pepper
1 1/2 lbs boneless fillets of firm white fish fillets
2 eggs
2 tablespoons water
2 tablespoons butter or 2 tablespoons margarine
1/4 medium green pepper
1 orange rind, from
1 (6 ounce) can frozen orange juice concentrate
1/2 cup sugar
1/2 cup catsup
1 1/2 tablespoons cornstarch
1 cup water

Steps:

  • Fish: Break bread into pieces.
  • In food processor, pulse bread, salt and pepper to fine crumbs.
  • Put onto a piece of waxed paper.
  • Place eggs& water into a small bowl& stir with a fork to blend.
  • Dip fish into egg misture, then into crumbs, coating on all sides.
  • Heat butter in a skillet and cook fish till nicely browned on all sides.
  • Sauce: Cut green pepper& orange rind into 1 inch squares.
  • Place into food processor bowl with other ingredients and whirl till blended.
  • Pour into a saucepan and cook and stir until sauce thickens and is clear.
  • Serve hot with fish.

Steps:

  • Melt the butter in frying pan, add the crumbs, garlic and grated orange rind.
  • Stir until crumbs have absorbed all the butter.
  • Place fish portions in a buttered ovenproof dish, sprinkle with the breadcrumbs, then pour over the orange juice.
  • Bake uncovered for 20-30 minutes in moderate oven.

6 fish steaks, such as halibut or salmon, each about one-half inch thick with skin on and center bone left intact, about 2 1/4 pounds total weight
1/2 cup flour
Salt to taste, if desired
Freshly ground pepper to taste
1/2 cup olive oil
1 large clove garlic, peeled
1/2 cup freshly squeezed orange juice
1 tablespoon vinaigrette sauce (see recipe)
Avocado slices for garnish
Maltaise sauce (see recipe)

Steps:

  • Dredge each fish steak on both sides in flour seasoned with salt and pepper. Shake off excess.
  • Heat the oil in a skillet large enough to hold the steaks in one layer without crowding. Crush the garlic and add it. Add the fish steaks and cook on one side until nicely browned, about two to three minutes. Turn the pieces and cook about two to three minutes or until the steaks are cooked through.
  • Transfer the steaks to a serving dish.
  • Combine the orange juice with the vinaigrette and stir. Pour over the fish steaks and let stand at room temperature. Arrange the avocado slices around the fish steaks, spooning the orange juice mixture over the slices.
  • Serve with maltaise sauce on the side.

Steps:

  • Combine orange juice, honey, soy sauce, lemon juice, garlic powder and ginger in 8x8x2-inch glass baking dish and stir. Add fish and turn to coat. Let marinate at room temperature 1 hour, turning occasionally.
  • Preheat broiler. Remove fish from marinade; place on broiler rack. Transfer marinade to small saucepan and boil 1 minute. Broil fish until just opaque in center, basting occasionally with marinade, about 4 minutes per side. Transfer fish to plates and serve with rice.

1 tablespoon ground coriander
salt and black pepper
1 medium red onion, quartered and thinly sliced
2 garlic cloves
2 teaspoons ginger, grated
1 teaspoon red pepper flakes (optional)
1 orange, zest and juice
1 cup chicken stock
2 tablespoons butter

Steps:

  • Warm 2 T. olive oil in a large nonstick skillet over medium-high heat.
  • Rub the fish fillets with the coriander, salt and black pepper.
  • Cook fish in the hot skillet until just done, a few minutes on each side.
  • Remove the fillets and set aside.
  • Add 2 T. EVOO, onions, garlic, ginger, and red pepper flakes (if using).
  • Cook until onions are translucent, then add the stock, orange juice, and zest.
  • Let warm and add butter.
  • Simmer for a minute then add fish back to the pan to heat through.
  • Serve with warm crusty bread and some crisp asparagus or green beans.

Steps:

  • Set an oven rack 5 to 6 inches from the heat source and preheat the oven's broiler. Coat a broiler pan with cooking spray and place fillets on top.

¾ cup panko bread crumbs
3 tablespoons orange juice

  • Pour 1 1/2 cups orange juice into a resealable plastic bag. Add tilapia fillets, coat with the juice, squeeze bag to remove excess air, and seal the bag. Marinate in the refrigerator 3 hours to overnight.

  • Whisk butter, panko bread crumbs, 3 tablespoons orange juice, garlic, and basil together in a bowl.
