{OVEN BAKED} CILANTRO LIME RICE

Recipe adapted from and with thanks to Good Cheap Eats

Number Of Ingredients 7

2 cups long grain white rice
1 teaspoon ground cumin
1 teaspoon kosher salt
4 cups boiling water
2 tablespoons lime juice
1/4 cup chopped cilantro
additional lime wedges (for serving)

Steps:

  • Preheat the oven to 425°F. Lightly grease a 9x13 inch baking pan with butter or oil. Combine the rice, cumin, and salt in the pan and stir to distribute the spices. Spread in an even layer. Pour in the boiling water and lime juice.
  • Cover the pan tightly with heavy duty aluminum foil, sealing all the edges. Bake the rice for 20 minutes. Remove from the oven and stir. If most of the water has not been absorbed, bake uncovered for an additional 3-5 minutes. Remove from the oven and let rest for 3-5 minutes. Fluff with a fork and lightly stir in the cilantro. Serve with additional lime wedges, if desired. Enjoy!

I love good cilantro lime rice, so I thought I would mix cultures (Mexican/Italian), and add a bit of parmesan cheese. Why not? In addition, I am using the oven to cook the rice, to get a perfect consistency. Actually, you can cook the rice using any method that you are comfortable... consider it an option. So, you ready......

PLAN/PURCHASE
2 Tbsp sweet butter, divided
1 c long-grained white rice
1 1/2 c chicken stock, not broth, boiling hot
1/4 tsp salt, kosher variety, fine grind
1/4 c parmesan cheese, finely grated
1 - 2 Tbsp lime juice
2 - 3 stalk(s) cilantro, stems removed, finely chopped

Steps:

  • 1. PREP/PREPARE
  • 2. I like my rice a bit cheesier, so I usually add 1 or 2 tablespoons additional parmesan.
  • 3. Why use the oven? Rice can be a tricky thing to make on the stovetop. If you get the temp a bit too hot, you wind up with burnt, or dried rice on the bottom of the pot. Using a rice cooker, or your oven, practically guarantees that your rice will turn out perfect, every time.
  • 4. You will need an ovenproof saucepan, with a tight-fitting lid.
  • 5. Gather your Ingredients (mise en place).
  • 6. Place a rack in the bottom position and preheat your oven to 325f (165c).
  • 7. Add 1 tablespoon of the butter to a medium-sized ovenproof saucepan, over medium heat.
  • 8. When the butter melts, add the rice.
  • 9. Cook in the butter, until the rice begins to become translucent, about 3 - 5 minutes.
  • 10. Chef's Note: Keep stirring, and do not let the rice brown, or burn.
  • 11. Add the hot chicken stock, and the salt, and stir to combine.
  • 12. Cover and place into the oven, until all the liquid has been absorbed, about 15 - 20 minutes.
  • 13. Remove from the oven, and let sit, covered, for 5 minutes. Add the butter, parmesan, lime juice, and cilantro, then fluff with a fork,
  • 14. Chef's Tip: Melt the butter in the microwave before adding.
  • 15. PLATE/PRESENT
  • 16. Serve while nice and hot. Enjoy.
  • 17. Keep the faith, and keep cooking.

LIME CILANTRO RICE

Number Of Ingredients 8

1 teaspoon canola oil
1 cup long grain white rice
1 cup chicken stock
2 to 3 strips lime peel
1/2 teaspoon kosher salt
1 tablespoon lime zest plus 2 tablespoons lime juice
1/4 cup chopped fresh cilantro leaves, plus more for sprinkling
2 green onions, green parts only, chopped

Steps:

  • Heat the oil in a large saucepot over medium-high heat. Add the rice and toast until lightly golden, about 1 minute. Add the stock, lime peel, salt and 1 1/2 cups water and bring to a boil. Cover the rice, reduce the heat to low and simmer until all of the liquid is absorbed, about 15 minutes. Let the rice stand, covered, about 5 minutes, then stir in the lime zest, juice and cilantro. Transfer to a serving bowl and top with more cilantro leaves and green onion.

Delicious flavorful rice that is the perfect compliment to any of your favorite Mexican dishes. Also, this recipe is very forgiving...if you do not have fresh garlic or onion, you can use dehydrated or powder in it's place.

2½ cups regular white rice
2 cups chicken broth (I use two cubes of chicken bullion dissolved into two cups hot water.)
3 cups hot water
2 limes (remember, put the limes in the microwave for 10 seconds before squeezing, they will give you more juice)
6 tbsp softened butter, or canola oil
¾ tsp salt, divided
½ tsp sugar
1 clove garlic, crushed (or ¼ tsp garlic powder or dehydrated garlic)
¼ cup chopped onion (or ¾ tsp onion powder or 1 tbsp dehydrated onion)
¼ cup chopped cilantro leaves, very loosely packed

Steps:

  • Preheat oven to 350 degrees.
  • In a 9x13 pan combine rice, chicken broth, water, the juice of ONE of the limes, butter OR oil, ½ tsp of the salt (reserve the other ¼ tsp for after rice is cooked), crushed garlic and chopped onion.
  • Carefully stir to distribute ingredients evenly, cover with foil and place in 350 degree oven and bake for 1 hour.
  • Remove rice after 1 hour. In a small bowl mix, juice of the second lime, ¼ tsp salt, ½ tsp sugar and ¼ cup chopped cilantro leaves. Pour mixture over baked rice and stir carefully until well combined. Serve and Enjoy!

Number Of Ingredients 8

1 tablespoon extra-virgin olive oil
1/2 yellow onion, cut into medium dice
1 clove garlic, minced
1 small jalapeno, seeds and stem removed, cut into small dice, optional
One 12-ounce package frozen riced cauliflower (about 2 cups), microwaved according to instructions
Kosher salt
Zest and juice of 1 lime (about 2 1/2 teaspoons each)
1/2 cup cilantro, chopped

Steps:

  • Heat the olive oil in medium 10-inch skillet over medium heat. Add the onion and saute, stirring frequently, until softened and transparent, 3 to 5 minutes. Add the garlic and jalapeno, if using, and cook until fragrant, about 1 minute. Add the riced cauliflower and 1 teaspoon of salt. Remove from the heat and finish by adding the lime zest and juice and cilantro. Mix until incorporated.

GARLIC CILANTRO LIME RICE

1 tablespoon canola oil
3 cloves garlic, minced
1 large onion, chopped
2 cups long-grain rice
1 teaspoon kosher salt
3 to 4 cups low-sodium chicken broth
Juice of 3 limes and zest of 2 limes (hold back juice of 1 lime for garnish)
Chopped fresh cilantro, for garnish

Steps:

  • Heat the oil in a large skillet over medium heat. Add the garlic and onions and cook for 3 to 4 minutes. Reduce the heat to low and add the rice and salt. Cook over a low heat for 3 minutes, stirring constantly to make sure the rice doesn't burn. Add 2 cups of the broth and the juice and zest of 2 limes and bring it to a boil. Reduce the heat to low, cover and simmer for 10 to 15 minutes or until the rice is done. Add more liquid as needed. The rice shouldn't be sticky.
  • Just before serving, stir through the juice of 1 lime and lots of chopped cilantro.
