- Heat oven to 180C/160C fan/gas 4. Heat the oil in a small ovenproof sauté pan. Add the onion and cook for 6 mins until softened. Stir in the garlic and chilli, and cook for a couple mins more. Add the tomatoes and 100ml water. Season well and stir through the peppers and ham. Bring to a simmer and cook for 10 mins until the sauce has started to thicken. Add the spinach, stirring through to wilt.
- Make 2 hollows in the sauce and crack your eggs into them. Add a pinch of cayenne, transfer to the oven and bake for 10 mins until the whites of the eggs have set. Serve straight away with crusty bread.

- Heat oven to 200C/180C fan/gas 6. Put the spinach into a colander, then pour over a kettle of boiling water to wilt the leaves. Squeeze out excess water and divide between 4 small ovenproof dishes.

- Preheat oven to 350°F with rack in middle.
- Bring ham and cream to a simmer in a small saucepan over medium-low heat, then remove from heat. Let steep, uncovered, about 10 minutes.
- Cook onion in 1 tablespoon butter in a 12-inch heavy skillet over medium-low heat, stirring, until softened, about 2 minutes. Add garlic and season lightly with salt and pepper, then cook, stirring, 1 minute. Add spinach, 1/4 teaspoon salt, and 1/8 teaspoon pepper and cook, turning with tongs, until spinach is wilted.
- Drain spinach in a colander, pressing to remove excess liquid, then coarsely chop. Divide spinach, then ham, among ramekins, spooning 1 tablespoon cream into each serving. Crack eggs into ramekins and season lightly with salt and pepper. Spoon 1 teaspoon cream over each egg. Cut remaining tablespoon butter into 8 small pieces and dot each egg with butter.
- Put ramekins in a shallow baking pan and bake, rotating pan halfway through baking, until whites are just set but yolks are still runny, 15 to 20 minutes, removing from oven as cooked.

- Preheat oven to 375 degrees. In a large bowl, combine spinach, rice, milk, eggs, 3/4 cup cheese, 1 1/2 teaspoons salt, and 1/4 teaspoon pepper. In a large skillet, heat oil over medium-high. Add onion and garlic and season with salt and pepper. Cook, stirring occasionally, until onion is soft and beginning to brown, about 10 minutes. Add wine and cook until evaporated, about 3 minutes. Add ham and cook until warmed through, about 2 minutes.

BAKED EGGS WITH CANADIAN BACON, SPINACH, AND AGED CHEDDAR

- Heat oven to 350 degrees F and arrange rack in middle. Butter 4 (6-ounce) ramekins and set aside.
- Melt 1 tablespoon butter in a large frying pan over medium heat. When it foams, add onion, season well with salt and freshly ground black pepper, and cook until softened, about 1 minute. Add spinach and cook until spinach is well wilted, about 2 minutes.

- Preheat a large nonstick skillet over medium-high heat with 2 turns of the pan of extra-virgin olive oil, about 2 tablespoons, and 2 tablespoons of butter. While the pan is getting hot and the butter is melting, cut the potatoes in half and then thinly slice them, add to the hot skillet and season with salt, pepper, thyme and the crushed red pepper flakes. - Using a skillet, melt your butter. Add the flour and the milk.
- Cook until sauce thickens; remove from heat.
- Add eggs, cheese, mustard, salt and pepper.
- In another skillet, sauté the onion in some butter (I use about 1 tsp).
- When onion is cooked, add the frozen creamed spinach (I microwave the spinach first for a couple of minutes to speed up the process).
- In a casserole dish, layer half the ham, then half of the shredded potatoes and half of the cheese mixture.
- Repeat until all is used.
- Cover and bake at 350°F for about 46 minutes.
- Sprinkle some parmesan cheese on top before serving.

- Combine the heavy cream and garlic in a small saucepan and bring to a simmer (keep your eye on it—I can’t tell you how many times my cream has boiled over!). Let simmer, stirring occasionally, 5 minutes.
- Heat the olive oil in a 10-12-inch skillet (preferably cast iron) over medium heat. Add the shallots, and cook, stirring occasionally, until light golden, about 2-3 minutes. Add the prosciutto and let cook 30 seconds. Pile in a few handfuls of spinach and let it cook down. Keep adding the spinach until it’s all in the pan (it’ll look like it will never fit, but don’t worry, it will!). Cook until wilted. Drizzle with the lemon juice, and season with salt and pepper. Add the garlic cream and stir to coat. Spread everything into an even layer and let simmer until the cream is slightly thickened, about 2-4 minutes.
- Crack the eggs into small bowls or ramekins (this will make it easier to pour them into the skillet without breaking the yolks). Using a spoon, make 4 nests in the spinach. Slide an egg into each nest. Grate fresh Parmesan over top.
